12 slices baguette, 1/2 in (1 cm), cut on a slight diagonal
extra virgin olive oil, to taste
kosher salt, to taste
24 slices green apple, thin
1 cup Waldorf chicken salad
2 tablespoons walnuts, chopped and toasted
1 cup shredded chicken breast
2 tablespoons red grapes, halved
2 tablespoons celery, finely chopped
2 tablespoons mayonnaise
2 teaspoons lemon juice
salt, to taste
pepper, to taste

Steps:

  • Preheat the oven to 425˚F (220˚C). Line a baking sheet with parchment paper.
  • Arrange the bread in a single layer on the prepared baking sheet. Brush each piece of bread with olive oil. Lightly sprinkle with salt. Bake for 12-14 minutes, until the edges are light golden brown. Let cool.
  • Make the Waldorf chicken salad: In a medium bowl, combine the chicken breast, grapes, celery, mayonnaise, and lemon juice and mix well. Season with salt and pepper.
  • Place 2 apple slices on each crostini. Top with 1 heaping tablespoon of chicken salad. Garnish with ½ teaspoon chopped walnuts.

Your dishwasher will thank you for this easy one-sheet weeknight dinner-- no prep bowls needed! Juicy roasted tomatoes and cheesy chicken breasts get a hint of brightness from fresh basil and a balsamic reduction.

2 tablespoons olive oil
1 tablespoon Italian seasoning
Kosher salt and freshly ground black pepper
2 pints cherry tomatoes
6 boneless, skinless chicken breasts (about 3 pounds)
1/2 cup balsamic vinegar
One 1-pound ball fresh mozzarella, sliced into 6 rounds
10 fresh basil leaves, torn
Baby arugula, for serving
Crusty bread, for serving

Steps:

  • Preheat the oven to 400 degrees F. Drizzle 1 tablespoon of oil onto a rimmed baking sheet and use your fingers to evenly spread it out and coat the bottom of the pan. Sprinkle with the Italian seasoning, 1 tablespoon salt and a few grinds of pepper. Scatter the cherry tomatoes on the baking sheet and shake it back and forth so they become evenly coated in the oil and seasoning. Arrange the chicken in the center of the baking sheet, pushing the tomatoes out to the perimeter, and drizzle the chicken with the remaining tablespoon of oil.
  • Bake until the tomatoes are soft, blistered and begin to burst, 20 to 25 minutes.
  • Meanwhile, add the vinegar to a small saucepan and bring to a boil over medium-high heat. Lower the heat to medium and simmer until the vinegar has reduced by half and is thick enough to coat back of the spoon, 7 to 8 minutes.
  • Remove the baking sheet from the oven and drape a slice of mozzarella over each chicken breast. Bake until the cheese melts and an instant-read thermometer inserted into the thickest part of the breast has reached 160 degrees F, 5 to 7 minutes (the chicken will carryover cook to 165 F).
  • Sprinkle the chicken and tomatoes with the basil and drizzle with the balsamic reduction. Spoon the collected pan juices over the tomatoes and chicken. Serve on a bed of arugula and with crusty bread to mop up the pan juices.

A baguette of French bread is cut into slices and toasted with roma tomato and fresh mozzarella cheese slices, then sprinkled with snipped fresh basil leaves and drizzled with extra-virgin olive oil.

1 large French baguette (15 inches long), sliced 1/2-inch thick
2 tablespoons extra-virgin olive oil
sea salt to taste
5 roma (plum) tomatoes, sliced
1 ¼ pounds fresh mozzarella cheese, sliced
1 bunch fresh basil, leaves removed and coarsely chopped
2 tablespoons extra-virgin olive oil
ground black pepper to taste

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Arrange slices of baguette onto a baking sheet and brush both sides of each slice with 2 tablespoons olive oil. Sprinkle with sea salt.
  • Toast the bread in the preheated oven until lightly golden brown and crisp, about 5 minutes. Flip the bread slices over and top each slice with a slice of tomato and a slice of mozzarella cheese. Sprinkle with salt.
  • Return crostini to the oven and bake until tomato and mozzarella slices are warmed through, about 5 more minutes.
  • Arrange the crostini onto a serving platter and sprinkle with basil. Drizzle with remaining 2 tablespoons olive oil and sprinkle lightly with more sea salt and black pepper.

I made this tonight, along w/ cajun shrimp dip crostini (recipe posted). Would be great for parties. Light & easy.

Number Of Ingredients 6

1 large, boneless skinless chicken breast
tomatoes, sliced
fresh basil leaves
fresh mozzarella, sliced
1 loaf, baquette
balsamic vinegar, olive oil, parm

Steps:

  • 1. Marinate chicken breast overnight or for a few hours in 1/2 cup of olive oil & 1/4 cup of Balsamic vinegar. Cut into slices.
  • 2. Cut baquette into slices (not too thin) and grill for a few minutes to get toasty. (Brush w/ some garlic butter or w/ Italian dressing or balsamic & oil for extra flavor!) Top w/ slices of mozzarella, chicken, & grill until cheese is melted.
  • 3. Remove & top w/ tomato slices (I used roasted red pepper in place of tomato for my tomato-hating daughter) and a fresh basil leaf on each crostini slice. Sprinkle with some more vinegar & oil & some parmesan. You can add garlic to this, as you desire.
