SLOW COOKER CHICKEN CACCIATORE
Serve this classic Italian stew plain or over whole-wheat penne. For a spicier flavour, add a pinch of crushed red pepper flakes at the start of cooking.

Steps:
- Place chicken in a 3- to 5-quart slow cooker. Add mushrooms, green pepper, onion, garlic, tomato paste, tomatoes and juice, wine, oregano, 1/2 teaspoon of salt and black pepper.
- Cover slow cooker; cook on high heat for 5 to 6 hours or on low heat for 6 to 8 hours. Taste just before serving and add remaining 1/4 teaspoon of salt if necessary. Yields about 1 cup per serving.

CROCK POT CHICKEN CACCIATORE
I originally got this recipe from WW. It's become such a staple around our house. I've added a few more veggies to it to make it a more complete meal. It's designed for a smaller crock pot, so if you have a large one, just double the recipe. Chicken can be thawed, partially thawed or even frozen; just adjust the cooking time. Fast, easy and oh so delicious.

- Simmer on low for 8 to 10 hours, or on high for 6 hours.
- Serve over brown rice or any type of pasta/noodle.
- Note: Bone-in chicken thighs can be used but boneless is easier; 1-1/2 lbs should be about 8 thighs.
CHICKEN CACCIATORE IN A SLOW COOKER
This is a very simple meal to make. You just throw everything in the crock pot and let it cook during the day. I like to serve this over thin spaghetti (especially garlic and herb thin spaghetti when I can find it).
