Original Carrabba's Chicken Bryan (Not Copycat!) image

My hometown newspaper (The Orlando Sentinel) finally published this, my favorite chicken dish ever, in their "Thought you'd never ask" column. There are copycats on Zaar, but this is the actual recipe, as given by Carrabba's. Not for the dieter, but a divine dish perfect for company and easy to throw together!

2 boneless skinless chicken breasts
kosher salt, to taste
fresh ground pepper, to taste
olive oil
4 ounces goat cheese
6 sun-dried tomatoes, chopped
2 -4 tablespoons fresh basil, chopped
4 teaspoons onions, minced
4 teaspoons garlic, minced
8 tablespoons butter, divided
1/2 cup white wine
4 tablespoons fresh lemon juice

Steps:

  • Brush chicken on both sides with olive oil, season to taste with Kosher salt and cracked pepper.
  • Grill chicken until done (internal temp of 165F) - prepare lemon butter sauce while chicken is grilling.
  • Sautee onion and garlic in 2 Tbps butter until soft and fragrant.
  • Add white wine and lemon juice, reduce heat to medium-low and simmer 10 minutes to reduce.
  • Add remaining 6 Tbsp butter, a little at a time, until it melts and mixture is emulsified.
  • Add chopped sun-dried tomatoes and basil, heat until hot (but do not overheat or sauce may break).
  • Top nearly-done chicken breasts with 2 oz each of the goat cheese until cheese warms and softens.
  • To serve, spoon lemon butter sauce over chicken breasts.
  • Enjoy! I serve this dish with pasta tossed in butter or olive oil (the delicious lemon butter sauce will perfect it), garlic mashed potatoes and a green salad -- yummmm!

I got this recipe from Robbie's Recipes (recipes.robbiehaf.com). They have a lot of good copycat dishes. This is my favorite meal from Carrabba's. Great with bruschetta and fettuccini tossed with olive oil & garlic. ENJOY!

1 tablespoon minced garlic
1 tablespoon minced yellow onion
2 tablespoons butter
1/2 cup dry white wine
1/4 cup lemon juice
2/3 cup cold butter, sliced
1 1/2 cups chopped sun-dried tomatoes
1/3 cup chopped fresh basil
1/2 teaspoon kosher salt
1/2 teaspoon white pepper
6 boneless skinless chicken breast halves
extra virgin olive oil, for brushing
1/2 teaspoon salt
1/2 teaspoon black pepper
8 ounces caprino cheese or 8 ounces goat cheese, room temperature

Steps:

  • Saute garlic and onion in 2 tablespoons butter in a large skillet over medium heat until tender.
  • Stir wine and lemon juce into skillet, increase heat to medium-high, and simmer to reduce by half.
  • Reduce heat to low and stir in cold butter, one slice at a time.
  • Stir in tomatoes, basil, kosher salt, and white pepper. Remove from heat and set aside.
  • Brush chicken breasts with olive oil and sprinkle with salt and black pepper.
  • Grill chicken over hot coals (or bake in oven) 15-20 minutes, or until cooked through.
  • A couple of minutes before chicken is done, place equal amounts of cheese on each breast.
  • Spoon prepared sun-dried tomato sauce over chicken.

BAKED CHICKEN LEG QUARTERS

Chicken leg quarters are still fairly reasonable at the grocery store. Often, a single chicken thigh looks a little skimpy on a dinner plate. Leg quarters yield two or three extra bites, and they are visually very satisfying. Bonus: cooking with the bones included gives a lot of flavor. A simple, tasty seasoning blend makes prep a breeze.

2 teaspoons smoked paprika
2 teaspoons granulated garlic
½ teaspoon onion powder
1 teaspoon salt
1 teaspoon freshly ground black pepper
5 (8 ounce) chicken leg quarters
⅓ cup melted unsalted butter

Steps:

  • Preheat the oven to 425 degrees F (218 degrees C). Line a sheet pan with aluminum foil.
  • Stir together smoked paprika, granulated garlic, onion powder, salt, and pepper in a small bowl.
  • Pat chicken leg quarters dry with paper towels. Gently lift the skin and sprinkle in 1/4 to 1/2 teaspoon of the seasoning blend, using a fingertip to spread the seasoning around under the skin. Brush both sides of each leg quarter with melted butter.
  • Evenly sprinkle remaining spice mixture on both sides of each quarter and set cut side up onto the prepared sheet pan.
  • Bake in the center of the preheated oven for 20 minutes. Turn the quarters cut side down using tongs and continue baking until chicken is no longer pink at the bone and the juices run clear, about 20 more minutes. An instant-read thermometer inserted near the bone should read 160 degrees F (71 degrees C).
  • Turn on the broiler and broil each side of the chicken leg quarters until skin is nicely browned, 3 to 4 minutes per side. Test for a final internal temperature with an instant-read thermometer of 165 degrees F (74 degrees C).
  • Transfer chicken leg quarters to a serving plate. Tent with foil and let rest for 5 minutes before serving.
