I received an email this morning from my Pampered Chef Consultant and this is one of the recipes that was featured. Here is what the email said: September is National Rice Month - "Rice is a good choice for a healthy diet. Number Of Ingredients 10

4 (4 ounce) boneless skinless chicken breasts
1/4 teaspoon salt
1/4 teaspoon ground black pepper, divided
1/8 teaspoon paprika
1 teaspoon vegetable oil
1 3/4 cups milk
1 (10 3/4 ounce) can condensed cheddar cheese soup
2 cups fresh broccoli florets (or frozen)
2 cups instant long-grain white rice
1/2 cup cheddar cheese, shredded

Steps:

  • Season chicken breasts with salt, 1/8 teaspoon of the black pepper and paprika.
  • Heat oil in Large Skillet over medium-high heat until hot.
  • Add chicken breasts; cook 5-7 minutes on each side or until chicken is no longer pink in center.
  • Remove chicken from skillet; keep warm.
  • Add milk, soup, broccoli and remaining black pepper to skillet; mix well.
  • Bring to a boil; stir in rice.
  • Top with chicken; cover with lid.
  • Reduce heat and simmer 5 minutes.
  • Remove skillet from heat.
  • Sprinkle cheese over chicken and rice.
  • Cover with lid; let stand 5 minutes before serving.

A great weeknight meal. This is quick and easy....even quicker with pre-cooked chicken.

Number Of Ingredients 10

1 lb small red potatoes, sliced thin
1 lb chicken breast, cut into bite sized pieces
1/2 small onion, diced small
1 can(s) condensed broccolli cheese soup
1/2 c milk
2 c broccoli florets (fresh or frozen)
1/2 c cheddar cheese, grated
2 Tbsp vegetable oil
1/4 tsp garlic powder
3 dash(es) pepper

Steps:

  • 1. Heat oil in skillet over medium heat. Add chicken and onion. Cook until chicken is no longer pink. Remove chicken to a plate and set aside. (This step may be skipped if using pre-cooked chicken.)
  • 2. Add potato slices to hot pan. Cover and cook for 10 minutes, flipping occasionally.
  • 3. Stir in the soup, milk, garlic powder, pepper, and broccoli. Add chicken back to skillet. Sprinkle with cheese.
  • 4. Cook until boiling, then reduce heat to low. Cover and cook for 5-10 minutes, or until potatoes are tender.

1-1/2 cups whole wheat blend penne pasta, uncooked
2 cups broccoli florets
1 lb. boneless skinless chicken breasts, cut into strips
1/4 cup finely chopped onions
1 tub (10 oz.) PHILADELPHIA Reduced Fat Savory Garlic Cooking Creme
1/3 cup milk
1 cup KRAFT Shredded Sharp Cheddar Cheese
2 slices cooked bacon, crumbled

Steps:

  • COOK pasta in large saucepan as directed on package, omitting salt and adding broccoli to the boiling water for the last 3 min.; drain. MEANWHILE, cook and stir chicken and onions in large nonstick skillet on medium heat 7 to 8 min. or until done. Add cooking creme and milk; cook and stir 2 min. Add Cheddar; cook and stir 2 to 3 min. or until melted. DRAIN pasta mixture. Add to chicken mixture; stir to evenly coat. Top with bacon.

1 tub (8 oz.) PHILADELPHIA Cream Cheese Spread
1/3 cup plus 2 Tbsp. milk, divided
1 tsp. garlic powder
1 lb. boneless skinless chicken breasts, cut into strips
1/4 cup finely chopped onions
1 cup KRAFT Shredded Sharp Cheddar Cheese
2 slices OSCAR MAYER Bacon, cooked, crumbled

Steps:

  • Cook pasta in large saucepan as directed on package, omitting salt and adding broccoli to the boiling water for the last 3 min.
  • Meanwhile, mix cream cheese spread, 2 Tbsp. milk and garlic powder until blended. Cook and stir chicken and onions in large nonstick skillet on medium heat 7 to 8 min. or until chicken is done. Add cream cheese mixture and remaining milk; cook and stir 2 min. or until heated through. Add cheddar; cook and stir 2 to 3 min. or until melted.
  • Drain pasta. Add to chicken mixture; stir to evenly coat. Top with bacon.
