1 tsp paprika
¼ tsp onion powder
¼ tsp garlic powder
1 tsp salt
3 chicken breast
½ cup softened cream cheese
¼ cup grated Parmesan cheese
2 tbsp mayonnaise
1½ cups chopped spinach

Steps:

  • In a bowl, combine paprika, onion powder, garlic powder, and salt. Mix together thoroughly and set aside.
  • To make the spinach mixture, combine cream cheese, Parmesan cheese, mayonnaise and spinach in another bowl. Mix thoroughly.
  • Slice a pocket into the side of each chicken breast meat.
  • Spoon the spinach mixture into the breast pockets and spread it evenly.
  • Prepare the casserole dish by drizzling olive oil and sprinkling some of the spice mixture in it.
  • Place the chicken in the dish and add more spice mixture and olive oil over the chicken.
  • Preheat oven to 375 degrees F. Then bake uncovered for 25 minutes.
  • Place the stuffed chicken breast in a plate, and use the drippings as the sauce.
  • Garnish with parsley, then serve and enjoy!

2 tablespoons dried chives
1 clove garlic, minced
4 skinless, boneless chicken breast halves, butterflied
4 slices turkey bacon
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a bowl, mix the cream cheese, chives, and garlic. Divide the mixture into 4 balls.

I love cream cheese stuffing in a chicken breast. I decided to toy just a little to make something new tonight. It turned out really well. I think I would use more chili powder next time, but the amount here gives a nice mild chili flavour.

2 chicken breasts, with skin and bone
4 tablespoons light chive & onion cream cheese
1/4 teaspoon chili powder (to taste)
2 tablespoons olive oil
salt and pepper

Steps:

  • Preheat oven to 375°F.
  • Mix cream cheese and chili powder.
  • Carefully separate skin from meat of each chicken breast. Use a knife if you need to, then your fingers, to create a pocket between the skin and meat. Try not to tear the skin.
  • Spoon the cream cheese mixture into the pocket you've created. Apply a little pressure with your fingers on the outside of the skin to spread the cream cheese in an even layer.
  • Brush each chicken breast with olive oil, and season generously with salt and pepper.
  • Bake for 45-60 min., or until chicken is cooked through. If the chicken is getting too browned on top, cover it with foil as it continues to cook.

Steps:

  • Preheat oven to 450. Put the butter in a 9x9 baking pan and put it in there while the oven is warming up.

2 slices bacon, chopped
1/2 cup finely chopped onion
1 poblano chile, cored, seeded and diced
4 oz cream cheese, softened
1/2 cup shredded Monterey Jack cheese (2 oz)
1/2 teaspoon salt
1/2 teaspoon pepper
4 boneless skinless chicken breasts (6 to 8 oz each)
1/4 cup butter, melted
1 cup Progresso™ plain panko crispy bread crumbs

Steps:

  • Heat oven to 400°F. Line large rimmed baking pan with cooking parchment paper.
  • In 10-inch skillet, cook bacon over medium heat until crispy. Using slotted spoon, transfer to medium bowl. In same skillet, add onion and poblano chile; cook until softened, about 6 minutes. Transfer to bowl with bacon. Let stand 3 minutes. Add cream cheese, Monterey Jack cheese, 1/4 teaspoon of the salt and 1/4 teaspoon of the pepper; stir to combine.
  • Cut pocket in each chicken breast by making a horizontal slit along thin long edge, being careful to not cut through to opposite side. Stuff each pocket with a quarter of the cream cheese filling (generous 1/4 cup). Press edges of chicken together to seal.

1 pound bacon
6 (5 ounce) skinless, boneless chicken breast halves
1 (8 ounce) package cream cheese, softened
¾ cup shredded Cheddar cheese, divided
¼ cup chopped green onions, or to taste
¼ cup chopped fresh cilantro, or to taste
1 tablespoon minced garlic

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet and a baking pan with foil.
  • Lay bacon strips in a single layer on the prepared baking sheet.
  • Place bacon in the preheated oven and cook until browned and crisp, about 15 minutes. Drain bacon slices on paper towels and chop. Keep the oven on.
