CHICKEN WITH BARLEY SOUP
This is a high-protein, high-fiber, and low-fat recipe that is very filling. I usually double the recipe so I have plenty of leftovers. The soup freezes well. This soup comes out very thick; if you like a thinner soup, add more water or reduce the barley to 1/2 cup. This soup recipe is very flexible. Adjust amount of veggies and seasonings to your family's taste.

Steps:
- Combine water, chicken thighs, and bay leaves in a large stock pot; bring to a boil, reduce heat to low, place a cover on the pot, and cook at a simmer until the chicken is tender, about 30 minutes.
- Remove chicken to a cutting board to cool. Remove and discard bones, skin, and fat from chicken. Cut remaining meat into bite-sized pieces.
- Cool broth until the fat congeals on the surface. Skim and discard fat.
- Return soup to heat; add carrots, celery, onion, pearl barley, bay leaves, chicken bouillon, poultry seasoning, sage, salt, and black pepper. Bring the soup to a boil, reduce heat to low, place cover on the pot, and simmer until the barley is cooked and the vegetables are tender, 60 to 90 minutes. Stir lemon juice into the soup just before serving.

SLOW COOKER CHICKEN BARLEY SOUP
This is a wonderful Barley soup made in the Slow cooker, but using the microwave to have in ready in 3 hours. Feel free to add any other vegetables that are available. As you can see no need for oil or butter.

- Heat the chicken broth and pour into slow cooker.
- Place chopped vegetables; onions, garlic, celery and carrots in microwave container; microwave 5 minutes.
- Spoon into Slow cooker and cook on High for 2 hours,.
- Heat up mushrooms in microwave.
- Add rinsed barley,chicken and mushrooms, salt and pepper to the Slow Cooker.
- On high cook another hour.

- Heat the olive oil in a medium Dutch oven over medium heat. Add the carrots, celery and leek and cook, stirring occasionally, until the leek softens, 3 to 4 minutes. Add the cabbage, paprika,

- Heat oil over medium-high temperature in a large, heavy stockpot. Add chicken thighs, skin side down, and brown.
- Add 2 cups of the broth to pan and turn heat down to medium-low. Cover pot with lid. Cook about 40 minutes, until chicken is cooked through. Leaving broth in pan, remove chicken to a bowl and set aside to cool slightly. Cover and refrigerate.
- Add remaining broth to pan. Stir in remaining ingredients (except salt, pepper and parsley). Bring to a boil, reduce heat to low and cover pan. Simmer about 1 1/2 hours, until barley and vegetables are done.
- Meanwhile, remove chicken meat and skin from bones. Discard bones and coarsely chop meat and skin (if you do not want the skin, skip the browning process and discard skin after removing meat from bones). Add to pot for last 1/2 hour and cook until heated through. (If soup is too thick at this point, add some water) Add salt and pepper to taste.
- Add parsley and ladle into bowls.

- Heat the oil in a large soup pot over high heat.
- Add the onion and salt and saute until limp, about 3 minutes.
- Add all the spices and saute until fragrant, about 2 minutes.
- Add the tomato paste and saute for another minute, until darkened but not burned (if the tomato paste looks too dark too quickly, lower the heat).
- Add the garlic and continue to saute for 1 minute longer.
- Return the heat to high if you lowered it, then add the broth, 2 cups water, and the barley to the pot.
- Bring to a boil and let simmer for 30 minutes.
- Add the sweet potato and continue to cook until the barley and sweet potato are soft, about 30 minutes to an hour more, adding more water to the pot if necessary (it should not get too thick).
- Add the chicken, partially cover the pot, lower the heat to med-low, and simmer for 10 minutes.
- Add the spinach and cilantro to the pot and continue simmering until the spinach is wilted, about 5 minutes longer.
- Stir in the lemon juice and more salt if desired.
- Serve garnished cilantro and lemon wedges.

Steps:
- Mince garlic; slice leek longways then chop.
- Place a standard dutch oven(or soup pot if you don't have a dutch oven) on the stove top.
- Add a splash of olive oil, garlic, leek, onion and rosemary and saute over medium high heat for several minutes.
- Add white wine and stir gently for one minute.
- Add chicken broth, mushrooms, bay leaves, carrots, celery,and barley and increase heat slightly. Stir occasionally until mixture comes to a boil. Reduce heat to simmer.
- Chop chicken into strips. Add a splash of olive oil to a frying pan and brown chicken on both sides. While chicken is cooking, season with pepper & thyme.
- Add chicken to soup mixture. Again bring mixture to a boil. After it reaches the boiling stage, reduce heat to simmer and partially cover.
- Cook approximately 30 minutes (stirring occasionally) to insure chicken is cooked through.

- In a 6-quart saucepan, combine the first 5 ingredients (tomatoes, salsa, chicken broth, water, green onions).
- Over high heat, bring to a boil; cover and reduce heat to low. Simmer about 20 minutes, stirring occasionally.
- Blend soup (I use a small hand immersion blender - this step is optional, but how I prepared the soup).

I recently purchased some barley as a way to introduce new grains to my diet. Found lots of good ideas for barley on this site and came up with my own soup. Perfect fall soup with comfort from the barley and chicken with a little heat from the chilies. Since the ingredients here reflect my pantry and tastes, you should feel free to adapt it to your own. I can see using green beans instead of zucchini or thighs instead of breasts.

- Saute onion, garlic, celery and green pepper in olive oil in soup pot.
- Once onions are soft (about 5 minutes) add water, bouillon, tomatoes, black beans and chicken to pot and bring to a low simmer.
- (Use chicken broth instead of water and bouillon if you prefer).
- Remove corn kernels from cob and add to soup.
- Add whole ancho chilies to pot for a minute, just to get the dried chili to soften a bit.
- Remove from pot.
- Tear off stalk and remove seeds.
- Dice chilies into small pieces and return to simmering pot.
- Let soup simmer 20 minutes and remove chicken from pot.
- Shred or dice chicken and return to pot.
- Add barley and let soup simmer for 25 minutes.
- Add zucchini and let simmer an additional 25 minutes.
