I love chicken bacon ranch pizza and melts so I thought I would try a quesadilla . It turned out really good! You can add sauteed sweet onions also!

4 flour tortillas
1/4 cup chicken, shredded and seasoned with fajita seasoning
1/4 cup bacon, cooked and crumbled
4 tablespoons ranch dressing, low fat is ok
red pepper flakes (optional)
monterey jack cheese or monterey and colby mix cheese

Steps:

  • Spread 2 tbsp ranch dressing on 2 tortillas.
  • Put cheese, chicken, and bacon on top of the ranch. Sprinkle red pepper flakes on each one (optional). Top with remaining tortilla.
  • Heat pan. Spray with Pam. Place quesadilla in pan. Cook each side 1-2 minutes until cheese melts and tortilla in slightly browned.

I got this recipe on the Pillsbury website. I changed the recipe a little bit, so I also changed the name. Enjoy!!!! I know we did!!!

SAUCE
1 green onion, chopped
1 Tbsp dry ranch dip mix
1 c sour cream
QUESADILLAS
1 chicken breast, cubed and cooked
8 slices bacon, chopped
3 green onions
3 Tbsp cilantro, dried
3/4 c cheddar cheese
1 can pillsbury grands biscuits
remaining ranch dip mix

Steps:

  • 1. In a small bowl, mix sauce ingredients together. Set aside or refrigerate.
  • 2. Combine chicken, bacon, 3 green onions, cilantro, cheese and ranch dip mix together. Press out biscuits as thin as possible, but not so thin as to poke holes in the dough. Place 1/4 cup chicken/bacon mixture onto one side of the biscuit. Fold over and press the seam to seal.
  • 3. Use non-stick spray on your contact grill...I used my George Foreman grill. Place biscuits, 2 at a time, on the grill. Cook for 2-3 minutes. Cut each biscuit into 3 wedges. Serve with the Ranch sauce and/or salsa.
