Two 6-ounce boxes long-grain and wild rice mix, such as Uncle Ben's
1 cup (2 sticks) unsalted butter, plus more for greasing dish
16 ounces fresh mushrooms, sliced, or two 4 1/2-ounce cans sliced mushrooms, drained (reserve the liquid)
1 small onion, chopped
1/2 cup all-purpose flour
3 cups chicken broth
3 cups half-and-half
4 cooked boneless, skinless chicken breast halves, diced
1 cup toasted slivered almonds, coarsely chopped
1/2 cup sliced pimientos
1/4 cup chopped fresh parsley
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Cook the long-grain and wild rice mixes according to the package directions. Set aside.
  • Preheat the oven to 350 degrees F. Grease a 9-by-13-by-2-inch casserole dish.
  • In a large skillet, melt the butter. Add the mushrooms and onions and saute until the onions are translucent. Stir in the flour, cooking for 2 to 3 minutes. Slowly stir the broth (and reserved canned mushroom liquid if using) into the onion mixture, then stir in the half-and-half. Cook until the mixture has thickened, 7 to 10 minutes.
  • Add the chicken, rice, toasted almonds, pimientos, parsley, salt and pepper into the wet mixture. Pour everything into the prepared casserole dish and bake, uncovered, until most of the liquid has been absorbed, 30 to 45 minutes.

5 cups chicken broth
4 tablespoons unsalted butter
2 large shallots, finely diced
10 ounces cremini mushrooms, bottoms of stems trimmed, and quartered
1 clove garlic, minced
1/2 cup dry sherry
One 8-ounce bag uncooked cultivated wild rice, washed and drained
6 large sprigs fresh thyme, tied into a bundle, plus more for garnish if desired
1 bay leaf
2 teaspoons ground coriander
2 teaspoons kosher salt, plus more to taste
2 teaspoons freshly ground black pepper, plus more to taste
4 small to medium (6 1/2 to 7 1/2 ounces each) boneless, skinless chicken breasts
1 tablespoon extra-virgin olive oil
1/2 cup dried cranberries
1 small lemon, sliced into 1/4-inch-thick slices
1 tablespoon chopped fresh parsley, optional

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the broth in a medium saucepan until simmering.
  • Melt the butter in an oven-safe braiser (or large cast-iron skillet with a lid or 4-quart saute pan with a lid) over medium-high heat. Add the shallots and mushrooms, tossing to coat in the butter, and cook, stirring once or twice, until golden, about 5 minutes. Stir in the garlic and cook until fragrant, 1 to 2 minutes. Add the sherry, allowing the pan to deglaze. Add the rice and allow it to toast and soak in the flavors of the pan. Add about 4 cups of the hot broth to the pan. Add the thyme and bay leaf. Cover the braiser and place it in the oven to bake until the rice is almost cooked, 1 hour to 1 hour and 15 minutes.
  • Meanwhile, in a small bowl, mix together the coriander, salt and pepper. Brush the chicken with the olive oil, then dust all over with the seasoning. Set aside.
  • Fluff the rice with a fork and check on doneness. It should still have some chew with some grains just starting to pop open. Stir in the cranberries. Add the remaining hot broth to keep the dish brothy. Add the chicken breasts to the braiser, laying them at an angle so that most of the chicken is submerged in the rice. Shingle the lemon slices in between the chicken breasts. Cover and bake for 20 to 25 minutes. Uncover and continue to cook until the chicken registers an internal temperature of 165 degrees F, about another 10 minutes. Top with the parsley or thyme before serving.

1 cup water
1 cup dry white wine
1 ½ teaspoons salt

Steps:

  • Place chicken breasts in a large pot with water, wine, salt, curry powder, onion, and celery. Cover, and bring to a boil. Reduce heat to low, and simmer for 1 hour. Remove from heat, strain (reserving broth), and refrigerate to cool. Remove chicken meat from bone, and cut into bite size pieces.
  • Prepare the rice mix according to package directions. Replace the specified amount of liquid with the same amount of the reserved broth.

water to cover
1 cup dry sherry
1 onion, sliced
½ cup sliced celery
1 ½ teaspoons salt
½ teaspoon curry powder
½ cup butter
1 pound fresh mushrooms
2 (16 ounce) packages long grain and wild rice mix
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup sour cream

Steps:

  • Place chicken in a deep pot and cover with water; add sherry, onion, celery, salt, and curry powder. Bring liquid to a boil, cover pot, reduce heat to medium-low, and simmer until chicken is no longer pink near the bone, about 1 hour. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 165 degrees F (74 degrees C).
  • Strain broth from chicken mixture into a bowl and transfer chicken to a work surface to cool until easily handled. Pull meat from the bones and cut into bite-size pieces. Discard bones, onion, and celery.
  • Heat butter in a skillet over medium-high heat; saute mushrooms until golden brown, about 10 minutes.
  • Bring reserved chicken broth and wild rice to a boil in a large saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender, about 45 minutes. Drain excess liquid, fluff rice with a fork, and cook uncovered 5 minutes more.
  • Preheat oven to 350 degrees F (175 degrees C).

1 1/2 cup(s) wild rice blend
1 small onion, chopped
1 pound(s) white mushrooms, sliced
2 large garlic cloves, chopped
1 package(s) baby spinach, 9-10 oz.
3 tablespoon(s) all purpose flour
3 cup(s) milk, 2%
8 ounce(s) shredded swiss cheese
1/4 teaspoon(s) red pepper
3 cup(s) rotisserie chicken, deboned
2 tablespoon(s) fresh thyme

Steps:

  • Heat oven to 375 degrees. Oil a 9 x 13 casserole dish.
  • Cook the rice according to package directions.
  • Heat 2 tablespoons oil in a large skillet over medium heat. Add the onion and cook under tender 6-8 minutes.
  • Add the mushrooms and cook until tender 6 to 8 minutes. Stir in garlic and thyme and cook for 1 minute. Transfer to a large bowl and toss with the spinach.
  • Wipe out skillet and heat remaining 2 tablespoons oil over medium heat. Sprinkle flour over the oil and cook, stirring for 1 minute.
  • Gradually whisk in the milk. Simmer whisking often until thickened about 5 to 6 minutes.
  • Remove from heat and add cheese, red pepper, salt and pepper; stir until the cheese melts and sauce is smooth.
  • Shred chicken, discarding skin and bones. Add the chicken and rice to the cheese mixture and toss to coat.
  • Fold in the spinach mushroom mixture.
  • Transfer to the prepared casserole dish. Cover with foil and bake until bubbling around the edges 45 to 50 minutes. Let stand for 5 minutes before serving.

1/2 cup medium-diced celery (about 2 stalks)

2 1/2 cups chicken stock or low-sodium chicken broth
2 cups creme fraiche
2 tablespoons sherry vinegar
1 tablespoon roasted garlic paste
1 tablespoon soy sauce
Meat from 1 large roasted or rotisserie chicken, diced
3 cups cooked wild rice (not puffed open)
2 cups chopped broccoli rabe
1 tablespoon rosemary leaves, chopped
1/2 teaspoon liquid smoke
1/4 to 1/2 teaspoon red pepper flakes
8 ounces Swiss cheese, grated
1/2 cup sliced almonds

Steps:

  • Preheat the oven to 375 degrees F.
  • Melt the butter in a 12-inch enameled cast-iron skillet over medium-low heat. Add the onions and celery and saute until tender, about 5 minutes. Stir in the flour and cook, stirring, to cook off the raw taste, about 3 minutes.
  • Whisk together the chicken stock, creme fraiche, sherry vinegar, garlic paste and soy sauce in a medium bowl. Slowly stir the liquid into the onion mixture, whisking the entire time. Lumps might form at first but just keep whisking -- they will go away. Lower the heat to medium-low and continue to cook until the sauce simmers and is thick enough to coat the back of a spoon. Stir in both boxes of rice* (see Note below first). Pour mixture into the prepared baking pan. Arrange chicken pieces on top then lightly sprinkle just the chicken pieces with paprika. Cover and seal pan tightly with aluminum foil. Bake undisturbed for 2 1/2 hours. (Don't open the oven door or remove the foil during baking time). If desired, after it has finished cooking, remove foil and oven broil for 1-2 minutes just to add a little color to the top of the chicken. NOTE: *Zatarain's wild rice mix is a well seasoned product with the seasonings mixed in with the rice. (Some products may have a separate seasoning packet.) I was a bit concerned about the dish being over-seasoned with the cans of soup, so when I poured the rice into the bowl on top of the soup mixture, I removed 2 or 3 "clumps" of the seasoning before stirring it into the soup mixture. Worked out very well.

6 tablespoons butter or margarine
3/4 teaspoon salt
1 package (8 oz) sliced fresh mushrooms (about 3 cups)
1/2 cup sliced leek
1 clove garlic, finely chopped
2 tablespoons Gold Medal™ all-purpose flour
2 cups milk
4 oz Gruyère cheese, shredded (1 cup)
3 cups shredded cooked chicken
1 cup Progresso™ chicken broth (from 32-oz carton)
1/2 teaspoon freshly ground pepper
1/2 cup sliced almonds, toasted

Steps:

  • Heat oven to 350°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray. Cook rice as directed on package, using 2 tablespoons of the butter and 1/4 teaspoon of the salt.
  • Meanwhile, in 12-inch skillet, melt remaining 1/4 cup butter over medium-high heat. Cook mushrooms, leek and garlic in butter 3 minutes, stirring occasionally, until tender. Reduce heat to medium. Stir in flour. Gradually add milk; heat to boiling. Cook 5 minutes, stirring constantly, until thickened. Remove from heat; stir in 1/2 cup of the cheese.
  • In large bowl, mix cooked rice, milk mixture, chicken, broth, pepper and remaining 1/2 teaspoon salt until blended. Spoon into baking dish. Sprinkle with almonds and remaining 1/2 cup cheese. Bake uncovered 20 to 25 minutes or until thoroughly heated and cheese is melted.

2 (4.3 ounce) boxes long grain and wild rice mix
2 tablespoons olive oil
2 cups chicken broth
1 cup water
2 cups frozen California blend vegetables
12 frozen chicken tenders
1 tablespoon olive oil
salt and black pepper to taste
1 pinch paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13 inch baking dish with nonstick cooking spray.
  • Pour the contents of the long grain and wild rice boxes into prepared baking dish. Drizzle rice with 2 tablespoons of olive oil. Pour chicken broth and water over the rice. Top with frozen vegetables and frozen chicken tenders. Drizzle chicken with the remaining tablespoon of olive oil. Season with salt and pepper; sprinkle with paprika. Cover tightly with aluminum foil.

1 package quick cooking wild rice, cooked according to package directions
1 package frozen French green beans, thawed and drained
2 tablespoons butter
1/2 cup chopped onion
3 tablespoons flour
1 cup chicken stock
1/2 cup cream or milk
1/2 cup grated parmesan cheese
1/4 cup slivered almonds

Steps:

  • Preheat oven to 350 degrees. In a buttered casserole dish. Combine chicken, cooked rice and green beans. In a saucepan melt butter over medium high heat. Stir in onions and cook for 1 minute. Stir in flour and cook for 1 minute. Whisk in chicken stock and bring to a simmer. Whisk in cream or milk and return to a simmer. When sauce has thickened pour over mixture in casserole dish. Sprinkle with parmesan and almonds and bake for 30 minutes.

1 medium jar sliced pimentos
1 small onion, finely chopped

1 c mayonnaise (do not substitute salad dressing)
salt & pepper to taste
1 can(s) french fried onion rings, crumbled for topping (optional)

Steps:

  • 1. In a large bowl, combine all ingredients except french fried onion rings.
  • 2. Using a 2 1/2 - 3 quart casserole dish, transfer mixture to dish. Add crumbled french fried onion rings to the top of the casserole.

1 medium onion, chopped

8 ounces sour cream
1/2 cup milk

  • Preheat oven to 350.

1 c long grain & wild rice mix
1/2 c onion, finely chopped
1/2 c butter
1/4 c flour
1 can(s) 6-oz. sliced mushrooms, drained
chicken broth
1/2 c light cream or evaporated milk
3 c cooked chicken breast, diced
1/4 c pimentos, drained and diced
2 Tbsp fresh parsley, chopped
1/2 tsp salt (or more to taste)
1/4 tsp pepper
1/2 c slivered almonds

Steps:

  • 1. Prepare rice mix according to pkg. instructions.
  • 2. Meanwhile, saute onions in butter until translucent and tender. Remove onions from heat and stir in flour. Mix well until all trace of flour disappears. Drain mushrooms, reserving liquid, and add enough chicken broth to mushroom liquid to make 1 1/2 cups.
  • 3. Gradually add liquid to onion/flour mixture and then add cream stirring until mixture is thickened.
  • 4. Add rice, mushrooms, chicken, pimento, parsley, salt and pepper.
  • 5. Prepare a 2 qt. casserole and add chicken mixture. Sprinkle with almonds.
  • 6. Bake at 350 degrees F for 25-30 minutes or until heated through.
