CHICKEN PINEAPPLE SALAD WITH CURRY MAYO



Chicken pineapple salad with curry mayo image

A lovely chicken salad with the flavours of pineapple and curry and the crunch of roasted shaved almonds.

400 g chicken breast
120 g canned pineapple + juice
1 lettuce head
3 tbsp roasted shaved almonds
200 ml vegetable oil
1 egg
2 tsp lemon juice
curry powder
salt

Steps:

  • Drain the pineapple and save the juice. Cube the chicken breast and add the bits to a plastic bag. Add salt and 1 tsp curry powder and massage to distribute. Add 5 tbsp pineapple juice. Push out all the air from the bag and close airtight. Leave chicken to marinate for 20 minutes, and set oven to preheat to 200°C (392°F).
  • Crack the egg in a tall container. Mix with a hand blender making up and down movements until the egg has doubled in size and is frothy. Gently add the oil in a slow continuous stream while keeping the up and down mixing. The mixture should emulsify before all of the oil has been added. When done, add 2 tsp lemon juice, 1 tsp curry powder and 1/4 tsp salt. Stir in condiments and set aside.
  • Place chicken bits on an oven tray and bake at 200° for about 10 minutes or until done (check largest bit for doneness by cutting it in half and checking if cooked through). Let cool before adding to the salad to avoid wilting salad leaves.
  • Chop the lettuce and place on the bottom of a serving bowl. Cut the pineapple to small pieces. Add the chicken and pineapple bits over the salad, in the centre of the bowl. Top with roasted shaved almonds. Drizzle curry mayo dressing over the salad, or serve on the side.

Optional: 2 fresh pineapples (for pineapple bowls)
2 cups pineapple chunks (fresh, frozen, or canned)
4 cooked, chicken breasts cut into bite-size pieces
2 stalks of celery 8" long, diced
1/2 red onion, diced
4 tablespoons chopped fresh parsley
1/2 cup blanched almond slivers, toasted
1/2 cup Creamy Pineapple-Curry Dressing (recipe below)
1/2 cup Greek yogurt
1/2 cup mayonnaise
1/2 cup fresh pineapple juice* (see notes)
2 tablespoons fresh lemon juice
1 garlic clove, minced
1 to 3 teaspoons curry powder
salt and pepper to taste

Steps:

  • If you want to serve the chicken salad in pineapple bowls, see our post that details how to make bowls from a fresh pineapple. Save the juices that accumulate when you slice the pineapple.
  • In a large bowl combine the pineapple chunks, chicken, celery, onion, parsley, and toasted almonds.
  • Make the dressing in a separate bowl. Combine the yogurt, mayonnaise, pineapple juice, lemon juice, and garlic. Whisk in 1 teaspoon of curry powder and taste. Add additional curry powder if desired. Season with salt and pepper.
  • Mix 1/2 cup of the salad dressing to the salad and toss together to moisten well. Serve the salad in pineapple bowls if desired.

1 medium onion, chopped
1 celery rib, chopped
1/3 cup golden raisins

She's been making this very traditional 'lady-like' chicken salad for as long as I can remember. It's best the day after making, and is colorful and fragrant and perfect for a summer supper -- or a ladies' luncheon!

6 boneless, skinless chicken breasts, cubed
3 cups mayonnaise
1 tablespoon curry powder
1 teaspoon lemon juice
1 tablespoon soy sauce
2 ½ cups slivered almonds, toasted
1 pound seedless green grapes, halved
2 cups chopped celery
1 (8 ounce) can sliced water chestnuts
1 (20 ounce) can pineapple chunks, thoroughly drained
paprika, for garnish

Steps:

  • Place chicken in a large pot of lightly salted water, and bring to a boil; simmer until tender and cooked through, about 25 minutes. Drain, set aside. When cool enough to handle, chop coarsely, and place into a large bowl.
  • In a separate bowl, stir together mayonnaise, curry powder, lemon juice, and soy sauce.
  • Stir into the chopped chicken 2 1/4 cups of the toasted almonds. Stir in grapes, celery, water chestnuts, and pineapple. Gently fold in all but 1/2 cup of the dressing. Cover, and refrigerate salad and reserved dressing for several hours (or overnight).

1 small fennel bulb (3/4 cup)
1 large pineapple (1 1/2 cups)
8 ounces skinless, boneless chicken
8 ounces fresh corkscrew pasta
8 large black Italian, Greek or French olives
1 tablespoon grated onion
1 teaspoon anchovy paste
1 teaspoon dry mustard
1 teaspoon Dijon mustard
4 teaspoons Worcestershire sauce
1/2 cup plain nonfat yogurt
1 teaspoon raspberry or balsamic vinegar
1 bunch arugula
Freshly ground black pepper

Steps:

  • If using a broiler, turn it on.
  • For the pasta, bring water to boil in a covered pot.
  • Wash, trim and chop fennel finely and place in large serving bowl.
  • Cut pineapple into small pieces. You will need about 3/4 of the pineapple to make 1 1/2 cups. Add to fennel.
  • If using a stove-top grill, prepare. Grill or broil chicken until it is brown on both sides, about 10 minutes, depending on thickness of pieces.
  • Cook pasta according to package directions.
  • Cut up olives and grate onion; add to bowl along with anchovy paste, mustards, Worcestershire sauce, yogurt and vinegar.
  • Wash, trim and dry arugula.
  • When chicken is cooked, remove and cut into julienne strips; add to bowl.
  • Drain pasta and add to bowl. Season with pepper.
  • Arrange arugula on two serving plates and top with chicken salad. Add two slices of crusty French or Italian bread.
