4 boneless skinless chicken breast halves
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons all-purpose flour
1 medium red onion, chopped
8 ounces fresh mushrooms, quartered
1 -1 1/2 cup chicken broth
2 tablespoons coarse grain mustard
1/2 cup sour cream
3 tablespoons chopped parsley
2 cups cooked egg noodles

Steps:

  • In large non-stick fry pan, melt butter over high heat.
  • Place flour in a pie pan; add chicken and turn to coat well.
  • Place chicken in fry pan and cook, turning about 5 minutes to brown well on both sides.
  • Stir in onions, mushrooms, and any unused flour.
  • Reduce heat to medium and cook, stirring, until onion is golden brown, about 5 minutes.
  • In small bowl, whisk together chicken broth and mustard.
  • Pour mixture into fry pan and stir.
  • Bring to boil, reduce heat to simmer and cook about 5 minutes.
  • Stir in sour cream and parsley and simmer for 2 additional minutes.
  • Season with salt and pepper to taste.
  • Serve over egg noddles.

8 ounces sliced mushrooms
8 ounces cream cheese, softened
1 (10 1/2 ounce) can cream of chicken soup
1 (1 1/4 ounce) envelope dry onion soup mix
salt and pepper, to taste
fresh parsley, chopped for garnish
1 lb large egg noodles

Steps:

  • Place the chicken in the bottom of a lightly greased slow cooker. Add the mushrooms.
  • In a medium sized bowl add cream cheese, cream of chicken soup and dry onion soup mix. Mix until incorporated and spread on top of chicken and mushrooms.
  • Cook on low for 4-6 hours or high for 3-4. Serve over noodles and top with fresh parsley and salt and pepper.

2 teaspoons vegetable oil, divided
1 lb boneless skinless chicken breast half
12 ounces about 3 3/4 c. fresh white mushrooms, sliced
1 cup thinly sliced onion
1/2 cup reduced-fat sour cream
1/4 cup chicken broth or 1/4 cup water
2 tablespoons chopped fresh dill or 2 teaspoons dried dill
1 teaspoon salt
1/4 teaspoon ground black pepper

Steps:

  • In a large nonstick skillet over medium heat, heat 1 teaspoons of the oil. Add chicken; cook until golden brown and cooked through turning once, 7 to 10 minute Remove chicken; cover to keep warm.

1 tablespoon margarine or butter
1 pound boneless skinless chicken breast, cut into 8 pieces
1 can (4 ounces) mushroom pieces and stems, drained
1 package Hamburger Helperâ„¢ stroganoff
2 1/2 cups hot water
1 cup milk
1 package (3 ounces) cream cheese, cut into cubes and softened
2 tablespoons milk

Steps:

  • Melt margarine in 10-inch skillet over medium-high heat. Cook chicken in margarine, stirring occasionally, until golden brown.
  • Stir in mushrooms; cook 2 minutes, stirring frequently. Stir in hot water, Sauce Mix, 1 cup milk and the cream cheese. Heat to boiling, stirring occasionally. Stir in uncooked Pasta; heat to boiling.
  • Reduce heat; cover and simmer 7 minutes, stirring occasionally. Remove from heat.
