1 pound asparagus, trimmed and cut into 1 inch pieces
8 ounces mushrooms, quartered or sliced
1 tablespoon oil
salt and pepper to taste
4 strips bacon (optional)
8 ounces chicken breast, pounded thin
salt and pepper to taste
6 cups baby spinach
1/4 cup balsamic vinaigrette
1 large ripe avocado, sliced
1/4 cup goat cheese, crumbled

Steps:

  • Toss the asparagus and mushrooms in the oil, salt and pepper, place on a baking sheet in a single layer and roast in a preheated 400F/200C oven until they start to caramelize, about 20 minutes, mixing half way through.
  • Meanwhile, cook the bacon and set aside on paper towels to drain before crumbling.
  • Season the chicken with salt and pepper to taste, heat the grill (or a pan) to medium-high heat, brush with oil and cook the chicken until cooked through and golden brown, about 3-5 minutes per side, before letting rest for 5 minutes and slicing.
  • Assemble the salad, toss in the dressing and enjoy!

1 tablespoon olive oil
1 cup loosely packed flat-leaf parsley leaves, coarsely chopped
2 whole boneless chicken breasts, skin on, split
Salt and freshly ground black pepper
1 small onion, chopped fine
10 white mushrooms, trimmed and cut into 3/4-inch pieces
1 cup dry white wine
2 tablespoons balsamic vinegar
1 tablespoon butter
4 handfuls fresh baby or flat-leaf spinach, (8 to 10 ounces), stems cut

Steps:

  • Preheat oven to 400 degrees. Heat olive oil in a large skillet over medium heat. Press a scant tablespoon parsley onto skin side of each breast. Season both sides with salt and pepper. Place breasts, skin side down, in skillet; cook until golden, about 8 minutes per side.
  • Remove chicken from skillet, and transfer to a roasting pan. Place roasting pan in oven. Roast until chicken cooks through, 15 to 20 minutes.
  • Meanwhile, return skillet to stove. Add onion; cook, stirring, until just golden, about 2 minutes. Add mushrooms; cook until soft, about 5 minutes. Add wine; scrape skillet's bottom to release cooked-on juices. Cook until wine is almost evaporated, about 5 minutes. Add vinegar; cook 1 minute more. Stir in remaining parsley; season with salt and pepper. Remove from heat; stir in butter.
  • Remove chicken from oven. Place spinach on plates. Slice each breast into sixths; arrange over spinach. Spoon mushroom mixture over chicken, drizzling juices over spinach, and serve.

3 1/2 to 4 pound chicken
1/2 teaspoon salt
1/2 teaspoon brown sugar
Pinch black pepper
1/2 teaspoon poultry seasoning
1/2 teaspoon chipotle powder
2 cups firm peaches, peeled
1/2 cup sweet onion, minced
1 tablespoon ginger, peeled and minced
1/2 cup red pepper, diced
1/2 cup light brown sugar
2 tablespoons cider vinegar
1 teaspoon rosemary, minced
1 teaspoon curly parsley, minced
1/2 teaspoon jalapeno, minced
2 plum tomatoes, halved
4 shiitake mushrooms, stems removed
2 portobello mushrooms, stems removed
2 ears corn, halved
8 asparagus spears, trimmed
1 red pepper, halved and seeded
1 yellow pepper, halved and seeded
1/4 teaspoon tarragon
1/4 cup apple cider vinegar
1/2 cup olive oil, extra virgin
1 tablespoon garlic, minced

Steps:

  • Wash the chicken and pat dry. Combine the seasonings and rub the chicken inside, outside and under the skin being careful not to break the skin. Place the chicken on a skewer and place on a rotisserie over a hickory wood fire. Turn on the motor and cook for 1 1/2 hours.
  • Place all of the ingredients in a heavy bottomed saucepan over medium heat and stir well to combine. Bring to a boil, stirring, and simmer for 25 to30 minutes until the chutney begins to thicken slightly and is syrupy. Remove the pan from the heat and let the chutney cool.
  • Blend tarragon, vinegar, oil, garlic, salt and pepper to make a marinade. Toss the vegetables with the marinade and allow to sit for 1 hour. Grill the portobellos for 10 minutes, and the other vegetables for 8 minutes, over medium heat, turning them once. Place the grilled vegetables on a tray. Place the roasted chicken over the vegetables and top with peach chutney.

1 1/2 cups cooked shredded chicken
1/2 head napa cabbage (about 1 pound), cored and shredded

5 fluid ounces chicken broth, divided
4 fluid ounces white wine (Chardonnay)
1 1/2 ounces arrowroot
2 fluid ounces olive oil
1 small lemon, zest of (about 1 tspn.)
1 teaspoon dried basil
1/4 teaspoon salt
1/2 lemon, juice of
10 shiitake mushrooms, stems removed
2 chicken breasts
cracked black pepper
salt
crushed red pepper flakes
4 cups baby spinach leaves
1/2 cup red pepper, chopped
1/4 cup raisins
1/2 cup cashews, halves and pieces (Planters)
2 ounces goat cheese

Steps:

  • Mix 1 oz chicken broth with the arrowroot.
  • Bring remaining 4 oz chicken broth and the wine to a boil in a medium saucepan.
  • Turn down heat and simmer for 10 minutes.
  • Add the chicken broth/arrowroot mixture.
  • Simmer until mixture thickens, stirring constantly.
  • Remove from heat and cool.
  • Add 2 oz olive oil, lemon zest, basil flakes, 1/4 tsp salt and lemon juice.
  • Put the mushrooms in a bowl and pour the above mixture over them.
  • Mix and refrigerate for 1 hour.
  • Pound the chicken breasts to about 1/4 inch thick then cut into 1" x 2" pieces (about 20).
  • Sprinkle with salt, pepper and red pepper flakes on both sides (sprinkle the red pepper flakes sparingly - it will be quite hot).
  • Put the spinach in a large serving bowl.
  • Grill the mushrooms over high heat until soft (save the marinade).
  • Cut the grilled mushrooms in quarters.
  • Grill the chicken about 1 minute on each side.
  • Add the chicken and mushrooms to the serving bowl with the spinach.
  • Pour the marinade over and toss.
  • Add the red peppers, raisins and cashews.
  • Crumble in the goat cheese.

2 cups cubed cooked chicken
1 cup diced celery
1/4 cup chopped red onion
1/4 cup low-fat mayonnaise
1/4 cup low-fat yogurt
2 tablespoons fresh orange juice
1 teaspoon chopped fresh tarragon, 1/2 tsp dried
1/2 teaspoon Dijon mustard
1/4 teaspoon pepper
