Inspired by Rachael Ray's recipe, I made a few changes to suit our tastes and it came out fantastic. Don't let all the steps fool you, this is easy and economical. I hope you will like it too.

2 tablespoons olive oil
1 lb ground chicken
1 cup chicken broth
1 cup tomato sauce
1/2 cup heavy cream
1 medium onion, diced
1 red bell pepper, diced
1/2 lb sliced mushrooms
2 garlic cloves, finely minced
2 tablespoons paprika
2 tablespoons dry parsley flakes
1 (12 ounce) package gnocchi
salt
pepper

Steps:

  • Start by filling a large pot with water and bringing it to a boil.
  • Meanwhile, Using a large deep skillet (the bigger the better) coat it with olive oil and brown ground chicken.
  • push the chicken to the sides and add garlic, onions, mushrooms and peppers. Cook until vegetables are soft for about 5 minutes.
  • Mix vegetables and chicken in pan and add paprika, tomato sauce, and chicken broth.
  • Bring to a boil and reduce heat to simmer.
  • Your water should be boiling by now, add gnocci and cook for about 3-4 minutes until it puffs up and begins to float. Drain.
  • Add half cup of heavy cream to sauce mixture and reduce heat to low. Stir to make sure it combines well. Add salt and pepper to taste.
  • Add gnocci to sauce mixture and allow to absorb flavors for about 5 minutes.
  • Garnish with parsley and serve.

1 tablespoon olive oil
1 (8 ounce) package sliced fresh mushrooms
salt and ground black pepper to taste
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 ½ cups whole milk
1 cup chicken broth
½ teaspoon salt
¼ teaspoon ground nutmeg
½ (3 pound) rotisserie chicken, boned and shredded
1 (16 ounce) package potato gnocchi
2 cups baby spinach
¼ cup grated Parmesan cheese

Steps:

  • Position a rack in the upper third of the oven; preheat to 425 degrees F (220 degrees C).
  • Heat oil in a large skillet over medium heat. Add mushrooms and season with salt and pepper. Cook until starting to soften, about 4 minutes. Transfer to a plate or bowl. Wipe out skillet.
  • Melt butter in the same skillet. Whisk in flour until a paste forms, about 3 minutes. Whisk in milk and broth until smooth. Simmer, whisking constantly, until thickened, about 5 minutes. Season with 1/2 teaspoon salt and nutmeg. Add mushrooms, chicken, gnocchi, and spinach to the sauce. Stir until gnocchi are coated and spinach wilts, about 3 minutes.
  • Pour mixture into a large baking dish. Sprinkle liberally with Parmesan cheese.
  • Bake in the preheated oven until bubbling, about 20 minutes.

1 lb chicken breast, cut into pieces
1 lb baby portabella mushrooms
2 garlic cloves
2 cups chicken stock
1 cup white wine
8 sun-dried tomatoes, cut into small piece
oregano
basil
red pepper flakes
1 (1 lb) package gnocchi

Steps:

  • heat olive oil and add garlic, and sautee until translucent.
  • add chicken and cook until brown.
  • add mushrooms and cook until soft.
  • separately, heat chicken stock with the tomatoes, until they are soft. Add to the pan with the wine and spices. Bring to a boil and reduce until simmering. Add a sprinkle of flour to thicken the sauce.
  • Prepare gnocchi according to package directions, then add to the pot, tossing to coat. Serve with a shaving of romano or parmesean cheese.
