EGGPLANT ALFREDO

Steps:
- Heat oil in medium skillet on medium.
- Thinly slice onion and add to oil.
- Peel eggplant and cut into 1/2" cubes then add to the sauteeing, partially carmelized onion.
- Add cubed leftover chicken. (Entirely optional. Use none or more at your preference).
- Coarsely chop red (or green) pepper and add to pan.
- Slice mushrooms and add.
- Stir it all together as you make additions so it doesn't burn. Add alfredo sauce. I use Classico Creamy, or make your own. The sauce in jars comes in many varieties and is cheap and easy.
- Let the sauce heat and bubble while grating the Swiss (or Jarlsburg) cheese.
- Pour the contents of the pan into a casserole. Cover with grated cheese. Sprinke with paprika.
- Do not cover. Bake at 350° for 40 minutes.
- Serve with s tossed green salad.

- Cut chicken in strips. Season with salt and white pepper and saute in butter. Meanwhile in a separate pot, simmer garlic cloves in cream for 10 minutes.
- Pour cream into pan with chicken, removing garlic cloves. Stir in Parmesan. Cook pasta according to package instructions.
- Toss pasta with sauce and serve with extra Parmesan.

- In a large skillet, cook pancetta and prosciutto over medium heat until browned. Drain on paper towels. Transfer to a large bowl; add chicken and toss to combine., For sauce, in a large saucepan, melt butter over medium heat. Stir in flour until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. Remove from heat; stir in 1/2 cup Asiago cheese, 1 tablespoon parsley, pepper and nutmeg., Preheat oven to 375°. Spread 1/2 cup sauce into a greased 13x9-in. baking dish. Layer with a third of each of the following: noodles, sauce, meat mixture, Asiago, mozzarella and Parmesan cheeses. Repeat layers twice., Bake, covered, 30 minutes. Uncover; bake 15 minutes longer or until bubbly. Sprinkle with remaining parsley. Let stand 10 minutes before serving.
