2 tablespoons vegetable oil
1 small onion, chopped
1 pound skinless, boneless chicken breast halves - chopped
2 (32 fluid ounce) containers chicken broth
1 large head fresh broccoli, cut into bite size pieces
8 ounces processed cheese food, shredded
1 cup shredded Cheddar cheese
salt and pepper to taste
4 cups uncooked instant rice

Steps:

  • Heat the oil in a skillet over medium heat. Cook the onion and chicken in the skillet 5 minutes, or until chicken juices run clear; drain.
  • Bring the chicken broth to a boil in a large pot, and stir in the broccoli, processed cheese food, and Cheddar cheese. Mix in the chicken and onion. Season with salt and pepper. Stir in rice, and continue cooking 5 minutes, stirring frequently, until cheeses are melted, and broccoli and rice are tender.

This is absolutely wonderful on a cold winter day. It's very thick and rich and totally filling. Perfect as a main dish.

1 (16 ounce) jar ragu double cheese sauce
1 (16 ounce) jar ragu classic alfredo sauce
1/2 small onion, chopped
2 stalks celery, chopped
3 cups steamed broccoli, chopped
2 cooked chicken breasts, cubed
12 ounces beer
2 cups milk
3 garlic cloves, minced
1/4 cup butter
1/4 cup flour
salt
pepper

Steps:

  • Whisk together both jars of cheese sauce, beer and milk. Bring to a boil, then simmer for 10 minutes.
  • In a separate small pan, make the roux by melting your butter over medium-low heat and slowly adding in your flour (stirring constantly). Once nice and bubbly and well-mixed, whisk it into the sauce.
  • Then add onion, celery, and garlic. Bring to a boil, then simmer for 20 minutes.
  • Add chicken and broccoli. Simmer for 10 minutes and you are done! Serve with nice crusty bread.

3 boneless skinless chicken breasts
1 medium onion, diced
2 teaspoons garlic, minced
2 (15 1/2 ounce) cans great northern beans, with liquid
1 (15 1/2 ounce) can black beans, with liquid
1 (4 ounce) can mild green chilies, without liquid (or jalapeno)
16 ounces frozen broccoli
2 tablespoons garlic oil
1 ounce butter
1/2 teaspoon cajun seasoning (or creole)
1 teaspoon salt
1 teaspoon oregano
1 teaspoon dried thyme
1/2 teaspoon black pepper
1 teaspoon basil
1 tablespoon Worcestershire sauce
12 ounces chicken broth
1 cup sour cream
1/2 cup fat-free half-and-half
1/2 cup Chardonnay wine (or other dry white wine)

Steps:

  • Season the chicken with Cajun seasoning.
  • Put oil and butter in a large skillet over medium heat.
  • Add the chicken and sauté 7 minutes per side.
  • Remove the chicken and cut into 1-inch cubes.
  • To the pan, add the diced onion and chopped garlic.
  • Sauté them until the onion is translucent and not browned.
  • Place the chicken in a large pot.

1/2 large onion, chopped
1 garlic clove, minced
1/2 broccoflower, from Broccoflower Archer (made using broccoli-see note in description for using broccoli in place of Broccoflower Archer)
14 1/2 ounces diced fire-roasted tomatoes
15 ounces chicken broth
1/2 cooked chicken breast, chopped
1/4 teaspoon crushed red pepper flakes (optional depending on your taste)

Steps:

  • Heat olive oil in a stockpot over medium heat. Cook and stir onion in hot oil until softened, about 5 minutes.
  • Stir garlic through the onion; cook and stir until garlic is fragrant and slightly soft, another 1 to 2 minutes.

2 pounds of chicken tenders cut into chunks.
1 and 1/2 teaspoons of salt
1 teaspoon of pepper
3 teaspoons of chicken bouillon
2 bunches of broccoli

1/2 cup margarine
1 cup flour
1 cup light cream
3 cups shredded cheddar cheese

Steps:

  • In a 5 quart pot combine all ingredients minus part 2 ingredients. Bring to a boil over high heat. Reduce to medium low heat and simmer for 45 minutes or until broccoli is tender. In a seperate pan melt the margarine and add the flour until a thick paste forms. Stir some of the soup broth into the flour mixture until there is a smooth consistence and then add flour mixture to soup. Bring back to a boil and simmer for 5 minutes. Reduce heat and add the light cream, shredded cheddar cheese. Mix well and serve when the cheese is completely melted.

8 ounces broccoli
2 ounces unsalted butter
1 onion, chopped
1 ounce basmati rice
8 ounces boneless skinless chicken breasts, cut into fine slices
1 ounce all-purpose flour
1 1/4 cups milk
1 7/8 cups chicken broth
2 ounces sweetcorn
salt and pepper

Steps:

  • Break the broccoli into small florets and cook in a saucepan of lightly salted boiling water for 3 minutes Drain then plunge into cold water and set one side.
  • Melt the butter in a saucepan over a medium heat, add the onion, rice and chicken and cook for 5 mins, stirring frequently.
  • Remove the saucepan from the heat and stir in the flour. Return to the heat and cook for 2 mins, stirring constantly. Stir in the milk and chicken broth, bring to the boil, stirring constantly, then reduce the heat and simmer for 10 minutes.
  • Drain the broccoli and add to the soup with the sweetcorn and salt and pepper to taste. Simmer for 5 mins or until the rice is tender, then serve.
