Steps:
- Cook pasta according to instructions until al dente.
- While pasta is cooking, steam broccoli in small amount of water in the microwave: 2 minutes on high will probably do it.
- Plunge broccoli in ice water to shock and retain slight bite. Set aside.
- Melt butter in large skillet, then add chicken, garlic, salt, and pepper. Cook over medium heat until chicken is nearly cooked through.
- Add wine and cream, stirring to mix. Simmer, stirring occasionally, for 5 minutes or until the sauce is reduced and thickened. Add flour and cook for one additional minute if sauce is too thin for your taste.
- Add the broccoli, drained pasta, and Gorgonzola.
- Taste and adjust seasonings.
- Serve with freshly grated Parmesan.
- Enjoy with a nice glass of white wine by the fire!

- Bring large pot of salted water to boil. Heat broiler, with rack set 4 inches from heat. In a medium bowl, whisk eggs. In another bowl, combine Parmesan and breadcrumbs. Season chicken with salt and pepper. Dip tenders in egg, then in Parmesan mixture; place on a rimmed baking sheet. Broil until golden, 2 to 4 minutes per side.
- Preheat oven to 450 degrees. Spread 1 cup tomato sauce in the bottom of a 9-by-13-inch baking dish. Then top with chicken, remaining sauce, and finally mozzarella. Bake 15 to 20 minutes or until cheese is melted.
- Meanwhile, cook pasta in boiling water until al dente, according to package instructions, adding broccoli for final 30 seconds. Reserve 1/2 cup pasta water; drain pasta and broccoli, and return to pot. Add oil and remaining Parmesan. Toss, gradually adding some reserved pasta water until pasta is lightly coated. Serve chicken with penne and broccoli.

- Topping: process the bread and butter in a food processor fitted with the steel blade until coarsely ground, about six 1-second pulses; set aside.
- Filling: adjust an oven rack to the middle position; preheat oven to 400°.
- Bring 4 quarts of water to a boil in a Dutch oven over high heat.
- Stir in 1 T salt and the broccoli; cook until bright green, about 1 minute.
- Remove the broccoli using a slotted spoon or wire spider and spread it out on a baking sheet to cool.
- Return the water to a boil; add in the pasta and cook, stirring occasionally, until al dente.
- Drain the pasta and toss with 1 T olive oil; leave it in the colander and set aside.
- Wipe the pot dry; add in the remaining 2 T oil and return to medium heat until shimmering.
- Add in the cremini and 3/4 t salt; cook until the mushrooms have released their juices and are brown around the edges, about 10 minutes.
- Add in the onion and cook until softened and beginning to brown, about 8 minutes.
- Stir in the garlic and thyme; cook until fragrant, about 30 seconds.
- Add in the flour and cook, stirring constantly, until golden, about 1 minute.
- Slowly whisk in the wine and the dried porcini with their reserved liquid; cook until the liquid is almost evaporated, about 1 minute.
- Slowly whisk in the broth and cream; bring to a simmer, whisking often.
- Add in the chicken and cook, stirring occasionally, until no longer pink, about 4 minutes.
- Off the heat, stir in the Asiago and pepper.
- Add in the cooked pasta and broccoli to the sauce; stir to combine.

- Pat the chicken dry, then season with salt and pepper. Melt 1 tablespook of the butter in a 12 inch skillet over medium-high heat. Add the chicken and cook until it is lightly browned but not fully cooked, about 4 minutes. Transfer the chicken to a bowl.
- Reduce heat to medium. Add 1 more tablespoon of the butter, onion, red peppers, red pepper flakes, oregano and the 1/2 tsp salt to the skillet. Cook until onion is softened, about 5 minutes. Stir in the garlic and cook until fragrant, about 15 seconds.
- Sprinkle the penne (uncooked) evenly into the skillet. Pour the broth and cream over the ziti. Cover and bring to a boil, about 5 minutes.
- Reduce the heat to medium-low and stir in the broccoli. Cover and continue to simmer, stirring occasionally, until the pasta begins to soften and the broccoli turns bright green, about 8 minutes.

CHICKEN AND BROCCOLI WITH PENNE PASTA; DELICIOUS AND EASY ONE PO
Chicken and broccoli are cooked in olive oil flavored with Tuscany seasoning and garlic. They are removed to a holding bowl while while pasta is cooked in the same pan with chicken broth. When cooked al dente, reserved chicken and broccoli are mixed with the pasta along with parmigiana cheese to taste. Make the dish creamy, simply by stirring in cream cheese.

- Cut 2 half chicken breasts into bite sized pieces.
- Sauté garlic in a large frying pan with high sides in the olive oil until tanned. Discard.
- Sauté chicken pieces in the olive oil stirring frequently until just cooked through. Remove to a holding bowl capturing all juices.
- Add a package of frozen broccoli florets and sprinkle with Tuscany seasoning. Sauté until they defrost, brown and are cooked to desired tenderness. Remove them to the holding plate.
- Add the pasta and most of the chicken broth to the pan. Bring to a boil. Add additional broth or water until absorbed and pasta is cooked al dente.
- Mix in the chicken, broccoli, and graded parmigiana to taste.
- To make a creamier sauce, stir in cream cheese desired consistency while the pan is still hot.

BAKED PENNE WITH CHICKEN, BROCCOLI AND THREE CHEESES
I found this in a Barilla Pasta cookbook. It is excellent. The original recipe calls for roasted chicken but cooked is as good. It also calls for fresh broccoli and I substituted frozen.

- 1. Melt the butter in a saucepan; stir in the flour until well blended. Gradually stir in the milk and broth and cook, stirring constantly, over low heat until mixture is smooth and comes to a boil, about 8 minutes. Stir in 1 cup of the mozzarella and 1/4 cup of the Parmesan; remove from heat. Cook the pasta according to package directions for al dente or about 10 minutes. Add the broccoli and cook about 2 minutes more. Drain well and rinse with a little cold water to stop the cooking. Preheat the oven to 350° F. Combine the pasta, broccoli, cheese sauce and chicken; spread in a shallow 2-quart baking dish. Drop pieces of blue cheese on top and tuck into the pasta with your fingers. Sprinkle the surface with the remaining mozzarella and Parmesan. Bake until top is golden and mixture is bubbly, about 25 minutes. Cool for 10 minutes before serving. Leftovers reheat well in the microwave.
CHICKEN BREAST AND BROCCOLI RABE WITH PENNE
Steps:
- Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente. Drain, reserving 1 cup pasta cooking liquid. Heat 1 Tbsp. olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper. Cook until golden brown and cooked through, 6â8 minutes. Transfer chicken to a large plate; set aside. Heat remaining 2 Tbsp. olive oil in same skillet over medium heat. Add broccoli rabe and garlic and cook until broccoli rabe is tender and cooked through, 10â15 minutes. Return chicken with any accumulated juices to pan. Add white wine and cook until reduced by half, about 2 minutes. Add pasta and 1/2 cup reserved cooking liquid. Simmer until flavors meld and sauce has thickened, adding cooking liquid by 1/4-cupfuls if dry, about 15 minutes. Stir in Parmesan and crushed red pepper flakes. Divide among bowls.
PENNE WITH CHICKEN, BROCCOLI, AND CHEESE

- Plunge broccoli in a saucepan of boiling salted water. Return to a boil and boil for 2 minutes, then drain in colander under cold running water. Shake to remove surplus water and set aside to drain completely. Melt butter in large skillet or saucepan. Add chicken and garlic, with salt and pepper to taste; stir well. Fry over medium heat for 3 minutes or until chicken becomes white. Meanwhile, begin cooking pasta according to package instructions. Pour wine and cream over chicken mixture in pan. Stir to mix, then simmer, stirring occasionally, for about 5 minutes, until sauce has reduced and thickened. Increase heat, add broccoli, and toss to heat through. Taste for seasoning and adjust if necessary. Drain pasta and add it to the sauce Add gorgonzola and toss well. Top with parmesan cheese and serve immediately.
PENNE PASTA WITH CHICKEN AND BROCCOLI
Steps:
- In large skillet over medium heat, melt 2 tablespoons margarine. On sheet of wax paper, lightly coat chicken in hot skillet; saute 3 minutes. stirring frequently until just browned. Stir in garlice and cook 1 minute longer. Do not let garlic brown. Cover and keepw arm. In large pot, bring 5 quarts of water to a rolling boil. Add pasta and cook, uncovered 6 minutes. Carefully add broccoli. Continue cooking until pasta is al dente. Reserve 1 cup cooking water before draining pasta. Meanwhile, in a large serving bowl, blend cheese with remaining butter until fluffy. Blend with reserved cooking water to make a sauce. Add pasta, chicken and broccoli and gently toss until combined. Serve with additional cheese and add pepper to tast, if desired.

- 1. Rub each chicken breast with olive oil, season with salt and pepper and saute in a skillet until cooked through. Once it is cooked, dice the chicken and set aside. In the same pan lightly brown the 1/4c of bread crumbs.
- 2. Poor the 1/4c of olive oil in a small sauce pan. Mince/ crush the garlic cloves and add them to the oil. Then gently heat the mixture until the garlic is golden. Take the warmed oil and garlic off the heat and set aside.
- 3. Cut the broccoli in to bite size florets. Boil the broccoli in slightly salted water for about five minutes or until tender.
- 4. Cook the pasta according to the packaging directions in a large pan. Once the pasta is cooked and drained return it to the pan and add the broccoli and chicken.
- 5. Next add the oil and garlic. Stir until everything is evenly coated. Then add the bread crumbs and Parmesan cheese. Stir well again and serve.
