FRIED CHICKEN BACON SANDWICH

This Fried Chicken Bacon Sandwich is tender, juicy and delicious with a crunchy fried Parmesan and Panko breading, topped with a sweet and creamy lettuce slaw and some crispy bacon all served on a soft deli sandwich roll.

1 1/2 cups lettuce
1/8 cup shredded Parmesan cheese
1/2 cup mayonnaise
2 Tablespoons sugar
Salt and pepper to taste
2 deli sandwich rolls, or buns
1/4 cup all-purpose flour
3/4 teaspoons garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 egg
1/2 Tablespoon water
1/4 cup shredded Parmesan cheese, or grated
3/4 cup Panko Japanese bread crumbs
2 boneless skinless chicken filets (about 4 ounces each)
2 Tablespoons cooking oil
4 slices bacon, cut each in half

Steps:

  • Arrange 3 shallow dishes side by side. First shallow dish: Mix flour, garlic powder, salt and black pepper. Second shallow dish: Whisk egg and water together. Third shallow dish: Stir together 1/4 cup Parmesan cheese and Panko bread crumbs.
  • Pat-dry each chicken with a paper towel. Place filets between two sheets of plastic wrap and pound flat with a meat mallet. Click for a meat mallet.
  • Dredge each chicken in flour mixture and shake off excess flour. Dip each in egg mixture. Coat each in Panko and Parmesan mixture. Press on extra Panko mixture to coat.
  • Heat cooking oil in half of a 16 inch electric skillet to 375 degrees F (190 C). Click for a 16 inch electric skillet.
  • On the oiled half of the skillet, fry chicken until browned and cooked through, about 5 minutes on each side. At the same time in the other half of the pan, cook the bacon until crisp. Drain all on a wire rack or paper towel.
  • Cut lettuce into shreds. In a medium bowl, mix together 1/8 cup Parmesan cheese, mayo, sugar, salt and pepper. Combine lettuce shreds with creamy mayo mixture.
  • Cut deli sandwich rolls in half if they are not pre-split. Place bottom halves onto serving plates. Top with chicken, bacon, and lettuce mixture. Add tops of the sandwich rolls, serve and enjoy!

1 tablespoon vegetable oil
2 (6 to 8 ounce) boneless, skinless chicken breasts
1/4 cup all-purpose flour
1 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
2 slices bacon
1/2 cup apple juice
2 ciabbata rolls, halved lengthwise and toasted
1 tablespoon whole grain Dijon mustard
1 medium head Belgian Endive, TK, cored and thinly sliced lengthwise
1 medium gala, braeburn, or pink lady apple, cored, halved and thinly sliced

Steps:

  • Place chicken between 2 sheets of plastic wrap or parchment paper and use a frying pan to gently pound the breasts to an even thickness. (They should be about 1 inch thick.)
  • Combine flour, salt, and freshly ground black pepper in a wide, shallow dish and mix thoroughly. Coat each breast by dredging it in the flour mixture then shaking off excess flour. Wrap one piece of bacon around each piece of chicken and secure with a toothpick.
  • Heat oil in a medium, heavy-bottomed frying pan over medium heat. When it shimmers, add chicken breasts and cook until bacon is well browned, about 5 minutes per side.
  • Add the juice, reduce heat to medium-low, and simmer until cider is reduced by 1/3, and chicken is cooked through, about 5 minutes more. Remove from heat and remove toothpicks.
  • To make a sandwich, spread mustard evenly on cut sides of bread. Layer half of each endive and apple slices alternately on one piece of bread, top with a chicken breast, drizzle with pan juices, season with freshly ground black pepper, and close sandwich. Repeat to make a second sandwich.

1/4 cup reduced-fat mayonnaise
1 tablespoon Dijon mustard
1 tablespoon honey
4 boneless skinless chicken breast halves (4 ounces each)
1/2 teaspoon Montreal steak seasoning
4 slices Swiss cheese
4 whole wheat hamburger buns, split
2 bacon strips, cooked and crumbled
Lettuce leaves and tomato slices, optional

Steps:

  • In a small bowl, mix mayonnaise, mustard and honey. Pound chicken with a meat mallet to 1/2-in. thickness. Sprinkle chicken with steak seasoning. Grill chicken, covered, over medium heat or broil 4 in. from heat until a thermometer reads 165°, 4-6 minutes on each side Top with cheese during the last 1 minute of cooking., Grill buns over medium heat, cut side down, until toasted, 30-60 seconds. 8 slices bacon
1/2 cup mayonnaise (150 grams whole-egg)
2 garlic cloves (minced)
2 tablespoons lemon juice
1 tablespoon chives (chopped)
1 cup chicken (160 grams cooked and shredded)
butter (for spreading)
8 slices sourdough bread
8 slices smoked cheddar cheese

Steps:

  • Place the bacon under a preheated hot grill (broiler) and cook for 1-2 minutes or until crispy.
  • Place the maonnaise, garlic, lemon juice, chives and chicken in a bowl and mix well to combine.
  • Spread both sides of the bread with butter.
  • Divide cheese and chicken mixture between 4 slices of bread and sandwich with another slice of bread.
  • Heat a large non-stick frying pan over low heat and cook the sandwiches in batches in necessary for 3-4 minutes each side or until golden the cheese is melted.

CHICKEN AVOCADO AND BACON SANDWICH

2 pounds chicken breasts, trimmed
1 teaspoon kosher salt
1 teaspoon dried tarragon leaves
1/2 teaspoon cracked black pepper
1/2 teaspoon dried thyme leaves
1/4 teaspoon granulated garlic
2 tablespoons extra-virgin olive oil
8 pieces applewood smoked bacon
1 large loaf ciabatta or other crusty bread
1/2 cup ranch dressing
8 slices white Cheddar
1 avocado, sliced

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the chicken presentation-side down on a baking tray and sprinkle with half of the salt, tarragon, pepper, thyme and garlic. Flip the chicken, then sprinkle with the remaining salt, pepper and garlic. Spoon the oil over the chicken and rub to fully coat. Add the remaining thyme and tarragon, and then bake until the internal temperature is 165 degrees F, about 40 minutes.
  • Meanwhile, place the bacon on a foil-lined baking sheet and bake in the same oven for 8 minutes, then rotate the baking sheet and bake 8 more minutes. The bacon should be almost fully cooked.
  • Chill the chicken until fully cooled.
  • Using a very sharp knife, slice the chicken on a vertical bias across the breast into 1/8-inch-thick slices.
  • Halve the ciabatta horizontally, then set it up open-face to build the sandwiches. Spread half of the ranch dressing onto the bottom piece of ciabatta. Stack the sliced chicken over the ranch, creating two or three layers. Cover the chicken with the sliced Cheddar and then top with the bacon.
  • Bake both halves of the sandwich until the cheese melts, the bacon is crisp and the bread is toasted.
  • Coat the top piece of ciabatta with the remaining ranch dressing. Top the bacon with the avocado, and then finish the sandwich with the top piece of bread. Cut into 4 pieces to serve.
