6 tablespoons (3/4 stick) butter, divided
3 large eggs
3 tablespoons honey Dijon mustard
2 cups panko* (Japanese breadcrumbs; about 3 1/2 ounces)
1 1/2 cups grated Parmesan cheese (about 4 1/2 ounces)
1 1/2 teaspoons salt
1 teaspoon ground black pepper
6 skinless boneless chicken breast halves, butterflied
1 large bunch watercress, thick stems trimmed
Asparagus with Sauce Maltaise

Steps:

  • Preheat oven to 500°F. Butter large rimmed baking sheet with 2 tablespoons butter. Melt remaining 4 tablespoons butter in small saucepan and set aside. Whisk eggs and mustard in bowl to blend. Mix panko, Parmesan, salt, and pepper in large bowl. Dip chicken into egg mixture, then panko mixture, coating generously. Place on prepared baking sheet. Drizzle reserved melted butter over chicken. Bake chicken until browned and cooked through, turning once, about 10 minutes.
  • Garnish chicken with watercress; serve with Asparagus with Sauce Maltaise.

1-1/2 pounds Chicken breasts or tenders, boneless and skinless
1/3 cup Flour
1 cup Panko
1 cup Parmesan Cheese, separated
1 teaspoon Dried parsley
1/2 teaspoon Garlic powder
4 heads Lemons
1 tablespoon Minced garlic
8 tablespoon Melted butter
1 tablespoon Lemon pepper seasoning
1 pound Asparagus
3 tablespoon Olive Oil
3 tablespoon Honey
1 sprig Fresh Parsley

Steps:

  • Preheat the oven to 400 degrees. Line a large sheet pan with parchment paper and set aside
  • Grab three bowls. Add flour to one bowl. In another bowl, combine panko, 1//2 fresh grated parmesan cheese, dried parsley, garlic powder, about 1/2 teaspoon each of salf and pepper.
  • In the 3rd bowl, add 1-2 teaspoons lemon zest, 4-5 T lemon juice (depending on lemon flavor intensity desired), minced garlic, and 5 T melted butter. Stir, Remove 4 T of this mixture and set aside
  • Slice chicken breasts to the size of tenders (about 1 and 1/4 inch strips) o use chicken tenders
  • Coat in flour, heavily dredge in garlic lemon mixture, and then coat in the Parmean panko mixture
  • Place on prepared sheet pan. Sprinkle lemon pepper seasoning over the tenders. Use any remaining Parmesan panko mixture and sprinkle over tenders
  • Bake in preheated oven for 10 minutes and remove. Fli the tenders to the other side
  • Return to the oven and bake for another 10-12 minutes or until the internal temperature of the chicken reaches 165F
  • Meanwhile, whisk remaining 3 T melted butter, 3 T lemon juice, 1-2 t lemon zest, 3 T olive oil, and 3 T honey in a small bowl. Add some pepper and parsley if desired
  • Remove from the oven and top with the honey lemon mixture and fresh parsley if desired and eat immediately

4 boneless, skinless chicken breast halves (about 1-1/4 lbs.), pounded thin
1/2 cup Italian seasoned dry bread crumbs
2 Tbsp. grated Parmesan cheese
1/4 tsp. salt
2 eggs, slightly beaten
2 Tbsp. olive oil
1 jar Bertolli® Organic Traditional Sauce
12 spears asparagus, partially cooked
4 slices mozzarella stuffed with prosciutto (about 4 oz.)

Steps:

  • Preheat oven to 425 degrees.
  • Season chicken, if desired, with salt and ground black pepper. Combine bread crumbs, Parmesan cheese and salt in shallow dish. Dip chicken in eggs, then bread crumb mixture.
  • Heat olive oil in 12-inch nonstick skillet over medium-high heat and cook chicken, turning once, 8 minutes or until chicken is thoroughly cooked.
  • Evenly spread 1 cup Sauce in 13 x 9-inch baking dish, then arrange chicken. Evenly spoon 1/2 cup Sauce on chicken, then top with asparagus and mozzarella. Bake 10 minutes or until cheese is melted and sauce is bubbling. Top, if desired, with shaved Parmesan cheese. Serve with remaining Sauce, heated.

4 skinless, boneless chicken breast halves
1 tablespoon extra-virgin olive oil, or more as needed
1 cup chopped fresh asparagus
¼ teaspoon garlic powder, or to taste
salt and ground black pepper to taste
4 slices deli ham
½ cup shredded Cheddar cheese
2 tablespoons butter, divided
2 cups chicken broth
1 tablespoon butter
1 cup uncooked white rice
1 (14.5 ounce) can diced tomatoes with onion and celery, drained
⅓ cup grated Parmesan cheese, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the chicken breasts between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the chicken with the smooth side of a meat mallet to a thickness of 1/4 inch.
  • Heat the olive oil in a skillet over medium heat, and cook and stir the asparagus, garlic powder, salt, and black pepper just until the asparagus is bright green and beginning to become tender, about 5 minutes. Remove from heat.
  • Lay each chicken breast out onto a work surface, and place a slice of ham on the flattened breast. Place 1/4 of the asparagus mixture over the ham, and top with 1/4 of the Cheddar cheese. Roll the chicken breast around the filling and secure with toothpicks or tie with cotton kitchen string; place the stuffed breasts into a 9x13-inch baking dish, seam sides down. Top each breast with about 1/2 tablespoon of butter.
  • Bake in the preheated oven until the chicken is no longer pink and the juices run clear, 30 to 40 minutes. An instant-read thermometer inserted into the center of a stuffed breast should read 160 degrees F (70 degrees C). Baste the stuffed chicken breasts occasionally with pan juices while baking.
  • While chicken is baking, bring chicken broth and 1 tablespoon of butter to a boil in a saucepan. Stir in rice and tomatoes, reduce heat to a simmer, cover, and cook the rice until tender and the broth has been absorbed, about 20 minutes. Remove from heat, and let rice stand covered for about 5 minutes; stir in Parmesan cheese. Serve stuffed chicken breasts on the cooked rice.

8 asparagus spears

Ingredients
1/3 c. plus 1 tbsp Select extra virgin olive oil, divided
2 tbsp balsamic vinegar
2 tbsp seedless raspberry jam
1/2 tsp Dijon mustard
1/2 tsp salt, divided
1/8 tsp freshly ground black pepper
12 ounces fresh asparagus, trimmed and cut into 3-inch lengths
1/2 c. freshly grated Parmesan cheese
1/2 c. whole wheat bread crumbs
1/2 tsp dried thyme
2 large eggs

  • Directions 1. For dressing, whisk together 1/3 cup olive oil, balsamic vinegar, raspberry jam, Dijon mustard, 1/4 teaspoon salt and pepper; set aside. 2. In a medium saucepan, bring 1 quart of water to boiling. Add asparagus and cook 2 minutes. Meanwhile, fill a large bowl halfway with ice water. Drain asparagus and plunge into ice water to cool. 3. In a shallow bowl, combine Parmesan cheese, bread crumbs, thyme and remaining salt; set aside. In a small bowl, beat eggs with a fork. Cut chicken breasts in half lengthwise. 1 lb chicken breast (boneless and skinless (about 3))
1/2 tsp salt (or to taste)
1/2 tsp pepper (or to taste)
1 tbsp paprika
2 tbsp olive oil
1 cup asparagus (chopped)
1 large onion (chopped)
4 cloves garlic (minced)
2 cups orzo (uncooked)
2 cups half and half
3 cups chicken broth (low sodium, or water)
1 1/2 cups Parmesan cheese (grated)
2 tbsp parsley (chopped, for garnish)

Steps:

  • Season the chicken breasts with salt, pepper and paprika on both sides.
  • In a large skillet heat the 2 tbsp of olive oil over medium-high heat. Sear the chicken for about 5 minutes per side, or until golden brown and cooked through. Depending on the thickness of your chicken you might need longer time. Transfer the chicken to a warm plate; set aside.
  • In the same skillet add the asparagus and saute for about 3 minutes, just until it starts to soften and starts to brown a bit. Transfer to a plate; set aside.
  • In the same skillet add the onion and garlic and saute for about 3 minutes until the onion is translucent and the garlic becomes aromatic. Add more olive oil if needed.
  • Add the orzo to the skillet and saute for just one minute, to get it a little toasted, this will give it a nutty flavor. Add the half and half, chicken broth and stir.
  • Bring to a boil, then turn the heat down to a medium-low, cover with lid and let it cook for 10 minutes.
  • Remove the lid and stir in the Parmesan cheese. Taste for seasoning and adjust with salt and pepper.
  • Add the asparagus back and stir it in. Slice the chicken into thin slices. You can either add it to the skillet and stir it in, or as seen in the photos, arrange over the orzo.
  • Garnish with more Parmesan cheese if preferred, and parsley. Serve warm.
