2 skin-on, bone-in chicken breasts (about 2 pounds)
Kosher salt and freshly ground pepper
1/3 cup plus 1 tablespoon vegetable oil
2 tablespoons sherry vinegar or red wine vinegar
1 tablespoon plus 1 teaspoon dijon mustard
1 teaspoon honey
2 Gala apples
1/2 cup chopped walnuts
1 small head escarole, torn into pieces
2 heads Belgian endive, trimmed, halved lengthwise and thinly sliced
4 ounces aged cheddar cheese, shredded (about 1 cup)
Multigrain bread, for serving (optional)

Steps:

  • Preheat the oven to 375 degrees F. Season the chicken with 1 teaspoon salt, and pepper to taste. Heat 1 tablespoon vegetable oil in a large ovenproof skillet over medium-high heat. Add the chicken, skin-side down, and cook until golden, about 5 minutes. Transfer the skillet to the oven (do not flip the chicken); roast until a thermometer inserted into the thickest part of the meat registers 165 degrees F, about 25 minutes. Transfer to a cutting board and let rest 5 minutes.
  • Meanwhile, make the dressing: Whisk the vinegar, mustard and honey in a large bowl. Gradually add the remaining 1/3 cup vegetable oil, whisking until emulsified.
  • Remove the chicken from the bone; slice. Thinly slice the apples and add to the dressing along with the walnuts, escarole and endive; season with salt and pepper. Toss the salad and top with the chicken and cheese. Serve with bread.

Steps:

  • Soak the apricots in hot water for 10 minutes. Drain and then mince. Mix the apricots, raisins, peanuts, shallots, honey, mint and parsley until they hold together. Slice the chicken horizontally and slightly flatten with a mallet. Place 1/4 cup of mixture in each breast. Fold the breast together. Season the chicken with salt and pepper and place on a medium hot grill with soaked applewood chips. Grill for 4 minutes. Turn 1/4 turn for 2 minutes to mark breast and then flip the breast over and cook for 4 minutes.
  • Combine all the ingredients in a medium size saucepan and bring to a boil. Reduce the heat to medium and cook until the volume is reduced to 3/4 cup.
  • Combine the apples, celery, grapes, cherries and peanuts in a large bowl. Toss thoroughly. In a separate bowl, whisk together the yogurt, sour cream, peanut butter, and all but 2 teaspoons of the parsley. Fold the dressing into the salad and season with salt and pepper. Serve garnished with the remaining parsley.

  • Red Grape Orange Dressing: Add grapes, orange juice, yogurt and olive oil to a blender and puree until smooth and silky. Strain through a strainer. Granny Smith Apple Salad: Toss lettuce, mung beans, apples and cucumbers with the dressing until evely coated. Blackened Chicken: 1) Wash & thinly slice potato and place in a saucepan with water to bring to boil. 2) Turn down to a simmer and cook for four to five minutes or until potato slices are semi-soft and cooked through. 3) Coat chicken slices in blackening spice and sear in a hot non-stick saute pan. 4) Cook chicken - while chicken is cooking, make the dressing. 5) Arrange salad on plates, top with potato slices and blackened chicken. 1 package Betty Crocker™ Suddenly Salad® Caesar pasta salad mix
1/3 cup mayonnaise or salad dressing
1/4 cup apple juice
1 large unpeeled eating apple, cored and thinly sliced
1/2 cup chopped pecans, if desired

Steps:

  • Brush grill rack with vegetable oil. Cover and grill chicken 4 to 6 inches from medium heat 15 to 20 minutes, turning often, until chicken is golden brown and juice of chicken is no longer pink when centers of thickest pieces are cut. Refrigerate chicken; continue with step 2.

4 cups Baby Spinach
1 large apple (Braeburn preferred, halved, cored and sliced thinly)
1 cup pecans, toasted (walnuts ok too)
1/2 cup light vinaigrette (your favorite)
2 ounces Stilton cheese, crumbled
additional vinaigrette (optional)

Steps:

  • Coat a lg grill pan with a non stick cooking spray. Place over med heat. Add chicken and cook 5-6 mins per side or until it reaches 165 degrees inside. Remove from heat, slice into strips and set aside.
  • In a lg bowl combine spinach, apple slices, nuts and vinaigrette, toss to coat. Place salad on 4 plates, season with salt and pepper to taste.

2 tsp. Mrs. Dash® Lemon Pepper Seasoning Blend
1 cup fat-free sour cream
1/4 cup honey
1 tsp. poppy seeds
1 tsp. red wine vinegar
2 green apples
2 red apples
1 Tbsp. fresh lemon juice
3 cups chopped cooked chicken breast
1 cup diced celery
1/2 cup diced red onion
1/2 cup chopped pecans
1/2 cup raisins

Steps:

  • 1.Mix together dressing ingredients in a small bowl; cover and refrigerate until ready to use.
  • 2.Core and chop apples into 1-inch pieces. Place in a large mixing bowl and toss with lemon juice.
  • 3.Add remaining ingredients. Toss with dressing before serving.
  • 4.Tip: Prepare cooked chicken by sprinkling 3 boneless, skinless, chicken breast halves with Mrs. Dash® Chicken Grilling Blend. Grill until cooked through; Cool and chop into 2-inch pieces.;
