If you like Chicken Breasts, and Chicken Alfredo in particular, this recipe is going to blow your socks off!! SOOO easy, SOOOO yummy, and if you have any leftovers, they disappear fast! 6 medium boneless skinless chicken breasts
salt and black pepper
1 tablespoon cooking oil
1 cup whipping cream
4 ounces asiago cheese (1 cup) or 4 ounces parmesan cheese, finely shredded (1 cup)
1/3 cup roasted red pepper, drained and cut into thin strips
3 tablespoons fresh basil, finely shredded

Steps:

  • Sprinkle chicken with salt and pepper. In a 12-inch skillet brown chicken breasts in hot oil about 10 minutes, turning to brown evenly. Transfer chicken to a 3-quart rectangular baking dish; set aside.
  • For sauce, in a medium saucepan beat whipping cream with a wire whisk or rotary beater for 1 to 2 minutes or until thickened. Heat over medium heat just until simmering. Reduce heat to medium-low. Gradually whisk in cheese until melted.
  • Pour sauce over chicken breasts in dish; top with sweet peppers. Bake, uncovered, in a 350 degrees oven for 15 to 20 minutes or until chicken is no longer pink (170 degrees F). Sprinkle with basil.

2 large chicken breasts (cut into chunks)
garlic salt or garlic powder
3 tablespoons butter
2 1/2 cups water
1/2 head cabbage (slice finely into strips)
1/2 cup cream
2 -4 ounces cream cheese
parmesan cheese

Steps:

  • In a large *dry* skillet, fry (med heat) up the chicken that has been lightly sprinkled with garlic salt (powder) until it is done and browned and the bottom of the pan is coated with yummy chicken crusties. Remove chicken.
  • Add 2 tbsp butter to the pan and throw in all the cabbage. Let wilt a bit.
  • Add the 2 cups of water 1/2 a cup at a time and allow each 1/2 cup to evaporate a bit (about 5 minutes) before adding the next.
  • Stir periodically through this process.
  • Mix the other ½ cup of water with the cream.
  • After most of the water has evaporated, pour 1/2 of the cream/water mix into skillet. Allow to boil down slowly.
  • Add in cream cheese and stir in to melt.
  • When cream is boiled down a bit add in the rest of the cream and reduce down.
  • Add chicken and sprinkle in a generous amount of Parmesan cheese; stir.
  • Season with garlic powder and cook until you have a nice creamy, thick sauce.
  • Divide between 2 plates and enjoy.
  • Might be nice to add in some mushrooms as well.

2 -3 cups frozen broccoli
1 small onion, cut into rings
16 ounces alfredo sauce

Steps:

  • Saute chicken, broccolli, and onion in butter for 10-15 minutes covered.
  • Add sauce and heat through. Enjoy!

CAJUN ALFREDO CHICKEN- LOW CARB

This is my low carb version of one of my favorite meals- Cajun chicken pasta. Delicious! If you aren't doing the low carb thing, just add 8 oz of cooked pasta, and use all of the jar of Alfredo sauce. Enjoy!

2 chicken breasts, boneless and skinless
3 Tbsp butter
2 Tbsp cajun seasoning*
2 broccoli crowns
2 small tomatoes
1 green onion
1/2 c bertolli alfredo sauce**

Steps:

  • 1. Preheat oven to 375 degrees. Rinse chicken and pat dry. Coat each side of the breasts with Cajun seasoning.
  • 2. Heat butter in a large oven-proof skillet over medium- high heat. Sauté breasts for 3 minutes on each side. When you flip the breasts, tilt pan slightly and spoon some of the butter over chicken several times. Place in the oven and bake for 25-30 minutes, or until chicken is cooked through and no longer pink.
  • 3. While chicken is cooking, chop broccoli and cook. I microwaved it on high for 4 minutes. Microwave ovens vary, so just keep an eye on it to make sure it doesn't get overcooked. Seed and dice tomatoes, and slice the green onion.
  • 4. Remove chicken breasts from the oven, and let rest for 10 minutes. Slice and place on plates. Note: Chicken will be blackened (not burnt). Top each breast with half of the broccoli. Heat alfredo sauce in a glass measuring cup in the microwave on high for 25-30 seconds. Drizzle half of the sauce over each breast. Top each with half of the tomato and onion, and serve. * I used Bobby Webb's Cajun Spice Mix.
