With two young children, my husband and I live on a beautiful lake and host lots of summer picnics and cookouts. I adapted this recipe to suit our tastes. 8 hard-boiled large eggs
1/2 cup shredded cheddar cheese
1/4 cup mayonnaise
1/4 cup salsa
2 tablespoons sliced green onions
1 tablespoon sour cream
Salt to taste

Steps:

  • Slice the eggs in half lengthwise; remove yolks and set whites aside. In a small bowl, mash yolks with cheese, mayonnaise, salsa, onions, sour cream and salt. , Stuff or pipe into egg whites. Serve immediately or chill until ready to serve.

6 hard-boiled large eggs
3 tablespoons reduced-fat mayonnaise
1/2 teaspoon garlic powder
1/2 teaspoon ground mustard
1/8 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon paprika

Steps:

  • Cut eggs in half lengthwise. Remove yolks; set aside egg whites and four yolks (discard remaining yolks or save for another use)., In a large bowl, mash reserved yolks. Stir in the mayonnaise, garlic powder, mustard, salt and pepper. Stuff or pipe into egg whites; sprinkle with paprika. Chill until serving.
