DELICIOUS CHEWY PEANUT BUTTER CHOCOLATE CHIP OATMEAL BARS
These are the *best* bars and so easy to make, the trick to these is not to overbake, mine bake out perfectly in a 350 degree oven, second-lowest rack for 22 minutes, servings is only estimated --- add in 1 teaspoon cinnamon also if desired --- this was developed using full-fat peanut butter :)

Steps:
- Set oven to 350 degrees.
- Set oven rack to second-lowest position.
- Grease a 13 x 9-inch baking dish.
- In a large bowl using an electric mixer at medium speed cream the butter with both sugars and vanilla until no sugar granules remain (about 4 minutes).
- Add in the peanut butter and beat until combined.
- Add in eggs and beat until combined.
- In a bowl combine the flour with baking soda and oats; add to the creamed mixture and mix on low speed until combined.
- Mix in chocolate chips.
- Transfer and spread into prepared baking dish.
- Bake for 22-25 minutes or until JUST set (do not overbake).
- Cool then cut into squares.

- Preheat oven to 325˚F (160˚C).
- Combine wet ingredients together in a large bowl.
- Then add in all the remaining dry ingredients.
- Add mixture into a 8x8 inch (20x20 cm) baking pan lined with greased parchment paper. Firmly press down mixture until it is one smooth layer. (If you grease the spatula as well it will prevent the mixture from sticking to it!)
- Bake 15-20 minutes, or until golden brown. Let cool 10 minutes.
- Drizzle top with melted dark chocolate. Chill for 30 minutes, or until dark chocolate is solid.
- Cut into 8 equal pieces.
- Wrap each bar in parchment paper or foil.
- Store in the freezer for up to 3 months or in the refrigerator up to 1 week.

- Set oven to 350 degrees.
- Set oven rack to second-lowest position.
- Grease a 9x9-inch baking pan.
- In a bowl combine flour, baking powder, cinnamon, baking soda and salt.
- In another bowl, beat the butter, Crisco shortening and brown sugar until smooth and creamy (about 5 minutes).

- 1. Preheat oven to 400°. Spray 8x8 square pan and set aside.
- 2. Cream butter and slowly add sugar, egg and vanilla while beating at medium speed with mixer. Combine flour, soda, cinnamon, vanilla powder and salt. Add to butter mixture and mix well. Stir in oats. Press 1/2 of oatmeal mix on the bottom of the pan.
- 3. Smash raspberries, spinkle with cinnamon sugar, and add jam. stir to combine. smooth raspberry mix over bottom layer of oats. Pour and sprinkle the remaining mix evenly over the jam. Sprinkle Vanilla Sugar and Cinnamon Sugar on top. (about a tbsp each or to taste)
- 4. Bake for 30 minutes. Let cool completely before cutting into bars. Pre-cut and wrap these for a quick on-the-go breakfast or snack with a smoothie in the morning

- Preheat oven to 350°; grease 15 1/2" by 10 1/2" jelly-roll pan.
- In microwave-safe large bowl heat butter in microwave oven on High until butter melts, stirring once.
- Stir in oats, sugar, and corn syrup until well combined.
- With fingers, press oat mixture evenly into prepared pan.
- Bake 20 to 23 minutes or until edges are set and center is slightly jiggly; cool completely on wire rack.
- In a 1-quart sauce pan , heat chocolate chips and peanut butter over low heat until chocolate is melts and mixture is smooth, stirring frequently.
- Spread chocolate mixture evenly over oat crust.

- If bars are difficult to remove from pan; place pan on a very hot damp towel for a few minutes to warm slightly.

- Directions, Oven at 350 degrees, have a baking pan ready.
- Mix the dry ingredients together, add the oil and apple sauce and mix.
- Separate about 2 cups of the mixture. Put the mixture into a pan or two - we used 1 14"x12" pan. You can grease the sides of the pan, but it isn't necessary on the bottom.
- You want to pack the mixture down and have it be about 1/4 inch thick.
- Spread on the preserves and then crumble the remaining dry mixture on the top.
- Bake at 350 degrees for 25-30 minutes.

- Oats & whole wheat are good for fiber, the soy adds some protein, and the apple sauce is a good partial substitute for oil/butter, keeping it pretty moist.

- 2. In large bowl combine sugars, yogurt, egg whites, applesauce, milk and vanilla. Mix well.

SOFT & CHEWY OATMEAL BARS
Steps:
- Preheat oven to 325 degrees. Line a 9×9 pan with parchment paper and set aside. Place 3/4 cup oats, 1/4 cup of cereal, chocolate chips and raisin in a food processor. Pulse a few times to break up the ingredients. Don't go crazy or you'll change the consistency of your bar. Transfer the mixture to the bowl of an electric mixer. Add the baking soda, salt, vanilla, flour, oil, honey, and brown rice syrup. Mix just until combined. The mixture will form a soft dough that resembles a cookie dough in texture. Fold in the remaining 1/4 cup of oats and 1/4 cup of cereal until combined. Lightly press this mixture into the prepared 9×9 pan. Bake for 15-18 minutes or until the bars are lightly browned on top. Remove from heat and allow to cool. Cut into bars, serve and enjoy!
