Brownies are a common dessert in our household - they're just about the only form of chocolate my husband will eat! I love this version that makes a big batch and has a rich cream-cheese layer in the center.

4 ounces unsweetened chocolate, chopped
1/2 cup butter, cubed
4 large eggs, room temperature
2 cups sugar
2 teaspoons vanilla extract
1-1/2 cups all-purpose flour
1 cup chopped nuts, optional
FILLING:
2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar
1 large egg
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350°. In a microwave, melt chocolate and butter; stir until smooth. Cool slightly. In a large bowl, beat eggs and sugar. Stir in vanilla and the chocolate mixture. Gradually add flour to chocolate mixture (batter will be thick). Stir in nuts if desired. , Spread half of the batter evenly into a greased 13x9-in. baking pan; set aside. , In a small bowl, beat filling ingredients until blended. Gently spread over batter. Spoon remaining batter over filling; spread to cover., Bake 45-50 minutes or until filling is set. Cool on a wire rack 1 hour. Refrigerate at least 2 hours. Cut into bars. Refrigerate leftovers.,

3 large eggs, divided use
6 tablespoons reduced-fat butter, softened
1 cup sugar, divided
3 teaspoons vanilla extract
1/2 cup all-purpose flour
1/4 cup baking cocoa
1 package (8 ounces) reduced-fat cream cheese

Steps:

  • Preheat oven to 350°. Separate 2 eggs, putting each white in a separate bowl (discard yolks or save for another use); set aside. In a small bowl, beat butter and 3/4 cup sugar until crumbly. Beat in remaining whole egg, 1 egg white and vanilla until well combined. Combine flour and cocoa; gradually add to egg mixture until blended. Pour into a 9-in. square baking pan coated with cooking spray; set aside., In a small bowl, beat cream cheese and remaining sugar until smooth. Beat in the second egg white. ½ teaspoon salt
1 teaspoon baking powder
1 cup vegetable oil
4 eggs
2 tablespoons light corn syrup
1 teaspoon vanilla extract
1 cup chopped walnuts
¼ cup confectioners' sugar
4 teaspoons water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking pan.

1 cup Land O Lakes® Butter
4 ounces unsweetened baking chocolate
2 (1-ounce) squares semi-sweet baking chocolate
2 1/2 cups sugar
1 tablespoon vanilla
6 large Land O Lakes® Eggs
2 1/2 cups all-purpose flour
1/2 teaspoon salt
Filling
1/4 cup sugar
3 ounces cream cheese, softened
1 large Land O Lakes® Egg
1 tablespoon all-purpose flour
2 tablespoons Land O Lakes® Butter softened
1/2 teaspoon vanilla

Steps:

  • Heat oven to 350°F. Grease bottom only of 13x9-inch baking pan. Set aside.
  • Melt butter, unsweetened chocolate and semi-sweet chocolate in 2-quart saucepan over low heat, stirring occasionally, until smooth. Remove from heat.
  • Stir in 2 1/2 cups sugar and 1 tablespoon vanilla. Add 6 eggs, one at a time, mixing well after each addition. Stir in 2 1/2 cups flour and salt; mix just until all ingredients are moistened and brownie mixture is smooth.
  • Spread half of brownie mixture into prepared pan.
  • Combine all filling ingredients in bowl. Beat at medium speed, scaping bowl often, until creamy. Dollop cream cheese mixture over brownie mixture. Spoon remaining brownie mixture over cream cheese mixture. Swirl brownie mixture and cream cheese mixture with knife.
  • Bake 35-40 minutes or until a toothpick inserted in center of pan comes out with a few moist crumbs. (Do not overbake.) Cool completely; cut into bars. Store refrigerated.

This makes a big 13x9 pan of brownies, using a brownie box mix. Super easy and looks gormet when you are done! (Be sure to buy the box mix that says that it makes a 13x9 recipe or you'll have problems.) The mix I use is by Betty Crocker.

1 (20 ounce) package fudge brownie mix (13x9 size)
1/4 cup water (or what mix calls for)
1/3 cup oil (or what your mix calls for)
2 eggs (or what your mix calls for)
1 (8 ounce) package cream cheese
1/3 cup sugar
1 egg
1/2 teaspoon vanilla

Steps:

  • Preheat oven to 350 F degrees.
  • Prepare the brownie mix according to package directions (water, oil, eggs).
  • Pour into a greased 13x9-inch baking pan.
  • Beat cream cheese with electric mixer on medium speed until smooth.
  • Add sugar and mix. Add vanilla and egg; mix until well-blended.
  • Place cheese mixture in dolups over the whole pan, leaving some brownie showing inbetween.
  • Cut or swirl through batter several times with a knife or fork for a marbled effect. It can be tricky to get a good marble effect so be careful not to over work it.
  • Bake for 35 to 40 minutes. Cool; cut into squares. (These will also freeze well).
