Number Of Ingredients 11

1 cup plus 2 tablespoons all-purpose flour, divided
2 tablespoons plus 1-1/4 cups sugar, divided
1/4 cup cold butter
2/3 cup chopped pecans, divided
1 large egg
2 large egg whites
2 tablespoons fat-free milk
1 tablespoon grated orange zest
1 teaspoon vanilla extract
1 cup chopped fresh or frozen cranberries
1/3 cup sweetened shredded coconut

Steps:

  • In a large bowl, combine 1 cup flour and 2 tablespoons sugar. Cut in butter until crumbly. Stir in 1/3 cup pecans. Press into an ungreased 13x9-in. baking pan. Bake at 350° for 15 minutes or until set., Meanwhile, in a large bowl, combine the egg, egg whites, milk, orange zest, vanilla and remaining flour and sugar. Fold in the cranberries, coconut and remaining pecans. Spread over warm crust. Bake 25-30 minutes longer or until top is golden. Cool on a wire rack.

Number Of Ingredients 6

2 ½ cups raw pecans
1 ½ cups pitted date
⅓ cup dried cranberries
1 pinch salt
3 tablespoons milk, or water
1 teaspoon vanilla extract

Steps:

  • Line an 8-inch (20 cm) square baking dish with parchment paper.
  • Add the pecans, dates, cranberries, salt, milk, and vanilla to a food processor and pulse until the mixture starts to clump together.
  • Transfer the mixture to the prepared baking dish and press into an even layer.
  • Chill for 1 hour.
  • Remove the bars from the baking dish by lifting the parchment paper. Cut into 12 individual bars.
  • Serve immediately or store in an airtight container in the refrigerator for up to 1 week.
  • Enjoy!

2/3 cup ground pecans
1/2 cup graham cracker crumbs
2 tablespoons + 1/3 cup sugar
1/3 cup old fashioned rolled oats
3 tablespoons butter, melted
8 ounces cream cheese
1 tablespoon orange juice
1/2 teaspoon vanilla
1/2 cup whipped cream
Cranberry Topping:
2 cups fresh cranberries
1/4 cup sugar
1/4 cup cranberry sauce
1/4 cup water
garnish with additional whipped cream and mint leaf

Steps:

  • Preheat oven 350 degrees F.
  • Coat 8x8 baking dish with cooking spray.
  • In mixing bowl combine pecans, graham cracker crumbs, 2 tablespoons sugar, oats, butter, and butter.
  • Evenly press into bottom of prepared baking dish.
  • Bake for 9-11 minutes or until edges are lightly browned.
  • Cool completely on wire rack.
  • In large mixing bowl beat cream cheese and 1/3 cup sugar until smooth.
  • Add orange juice and vanilla; cream.
  • Gently fold in whipped cream.
  • Evenly spread over crust and refrigerate.
  • Cranberry Topping:
  • In a medium sized sauce pan over medium high heat; combine cranberries, 1/4 cup sugar, cranberry sauce, and water.
  • Bring to gently simmer; stirring continuously and cooking 2-3 minutes or until sauce thickens.
  • Remove from heat and allow to cool.
  • When ready to serve cut pecan bars, place on serving plates, add 2 tablespoons cranberry topping, a dollop of whipped cream, and mint sprig to garnish.

4 large eggs, room temperature
2 cups packed brown sugar
2 teaspoons vanilla extract
2/3 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
2 cups chopped pecans
Confectioners' sugar

Steps:

  • Spread butter evenly in an ungreased 13-in. x 9-in. baking pan. In a large bowl, beat eggs, brown sugar and vanilla until blended. Combine flour, baking soda and salt; gradually add to egg mixture until well blended. Stir in pecans., Spread into prepared pan. Bake at 350° for 30-35 minutes or until browned. Dust with confectioners' sugar. Cool on a wire rack. Cut into bars.

1/2 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 large egg
1/2 teaspoon vanilla extract

1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1-1/2 cups old-fashioned or quick-cooking oats
1 cup dried cranberries, coarsely chopped
1 cup chopped pecans

Steps:

  • Preheat oven to 350°. Cream butter and sugars until light and fluffy; beat in egg and vanilla. In another bowl, whisk together flour, cinnamon, salt, baking powder and baking soda; gradually beat into creamed mixture. Steps:

  • Preheat oven to 350°. Pour butter into a 13x9-in. baking pan. In a large bowl, combine the next 6 ingredients; mix well. Stir in pecans. Spread over butter. , Bake 30-35 minutes. Remove from oven. If desired, immediately dust with confectioners' sugar. Cool before cutting.
