Of the many species of crab inhabiting the East Coast waters, blue crab is the most plentiful, ranking behind lobster and shrimp in commercial value. The crab most often found on the menu at beach picnics, it is available from February, when the water turns warm around Florida, until cold weather returns. The stone crab, by contrast, is rare and expensive. Concentrated around Key West and Miami, it ranges up to the Carolinas and west to Texas. Only the claw meat is eaten: trappers break off one claw, and the crab regenerates a new one. The secret to making sure you get the most value for your lump crabmeat in this recipe is to make sure you don't overmix it with the other ingredients. Tossing until just combined creates a better texture and less monotonous tasting crab cake. These crab cakes are the perfect party-ready appetizer, but they can also be served as a main dish.

1 pound lump crabmeat, divided
1 large egg
1 1/2 teaspoons dried parsley flakes
1/2 teaspoon Worcestershire sauce
1/8 teaspoon freshly ground pepper
1/8 teaspoon hot sauce
1/2 cup mayonnaise, divided
1 3/4 teaspoons Old Bay seasoning, divided
4 saltine crackers, crushed
Paprika
Lemon wedges
Garnish with freshly chopped chives

Steps:

  • Preheat oven to 350°F. Pick crabmeat, removing any bits of shell.
  • Whisk egg in a medium bowl. Whisk in parsley flakes, next 3 ingredients, 3 Tbsp. mayonnaise, and 3/4 tsp. Old Bay seasoning. Gently stir in crabmeat and cracker crumbs. Shape crab mixture into 18 (1 1/2-inch) patties. Place on a lightly greased baking sheet.
  • Stir together remaining 5 Tbsp. mayonnaise and 1 tsp. Old Bay seasoning; spread on crab cakes, and sprinkle with paprika.
  • Bake at 350°F for 12 minutes or until golden. (Do not overbake.) Serve with lemon wedges. Garnish, if desired.

This was a success at a wine and cheese party..everyone brought something...this was my contribution..with a good California Wine!! **update** I did change the recipe to read 4 tbls instead of 1/4 cup Old Bay Seasoning It was easier to dig out of the can with a measuring spoon then to dump it into a measuring cup. Sorry if it caused any confusion. 4 TBLS = 1/4 CUP

1 lb crabmeat
1 (8 ounce) package cream cheese
1/2 cup butter
1 bunch of minced green onion
4 tablespoons Old Bay Seasoning
1/2 teaspoon horseradish
1/4 cup chopped parsley (to garnish)
1 tablespoon Old Bay Seasoning (to garnish)
serve with cracker

Steps:

  • Remove all excess shell from crabmeat
  • In a mixing bowl, combine softened cream cheese, butter, green onions, old bay seasoning and horseradish. while mixing gradually add crabmeat. Divide mixture into two balls.
  • Refrigerate the balls for at least one hour.
  • On a piece of waxed paper, mix the parsley and old bay seasoning.
  • Remove crab balls from the refrigerator and roll them on the wax paper until they are completely coated.

1 (8 ounce) package cream cheese
2 teaspoons chopped chives
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/2 cup chopped pecans

Steps:

  • 1. Using a collander covered with a paper towel inside, drain the crabmeat until nice and flaky and not moist.
  • 2. Blend cream cheese, chives, garlic powder and salt.
  • 3. Fold in the crabmeat and mix well.

1 lb lump crab meat, special or claw**can substutue imitation crab meat**
1 large egg, whisked
2 Tbsp mayonaisse
2 tsp mustard
1 Tbsp chives, dried or fresh (green onion, finely chopped)
2 Tbsp bell peppers (multi color) chopped
2 tsp sriracha hot sauce (fav hot sauce)
1 tsp old bay seasoning (seafood seasoning of choice)
1 lemon zest, grated
1 c panko bread crumbs, divided
2 Tbsp parsley flakes
SPICY CRAB SAUCE
2/3 c mayonnaise
2 Tbsp ketchup
2 tsp sriracha sauce (more or less)
1 tsp grated ginger or ginger powder
1 tsp granulated garlic powder
1 tsp lemon juice
1 Tbsp sugar of choice
**for a large crowd, double all the ingredients**
**substitute cooked ground chicken or turkey for the non -seafood eaters. serve with a cranberry relish dipping sauce...perfect for the holidays**

  • 2. fold ingredients together
  • 3. on a large plate combine remaining bread crumbs and parsley. form the crab mixture into 1 1/2 inch balls. roll balls in the bread crumbs and parsley mixture.
  • 4. deep fry at 320 degrees for 3 minutes or until golden brown
  • 5. remove and drain oil
  • 6. serve with spicy crab sauce

1 tablespoon white vinegar
1 eight-ounce bottle of beer
36 crabs
Crab seasoning

Steps:

  • Place about 6 cups of water, the vinegar, and the beer in an 8-gallon stockpot fitted with a raised rack. If you don't have a raised rack, use bricks wrapped in clean cloth to raise your rack about 6 inches off the bottom. It is important that the crabs not get wet while they're being steamed.
  • Make a layer of crabs on the rack, and cover them with 1/8 to 3/4 inch of crab seasoning. Bring the liquid to a boil. Once the steam starts to rise through the crabs, cover pot with lid, and steam for 30 to 40 minutes, or until the crabs are bright red. Remove the crabs with tongs or rubber gloves. (Using rubber gloves makes handling easier, preventing you from burning your hands -- and inadvertently dropping any crabs.)
