This salad recipe was given to me by my sister in law Cheryl, and it not only looks stunning...it tastes wonderful and is good for you!

Number Of Ingredients 7

2 cups medium carrots, grated
1 cup cucumber, sliced thinly
1 cup tomatoes, sliced thinly
1/4 cup onion, sliced thinly
1/2 cup cheese, diced
2 tablespoons fresh fenugreek leaves, washed (methi)
1 -2 tablespoon low-fat mayonnaise

Steps:

  • Mix all the sliced veg together with the mayo in a clear bowl, sprinkle with cheese, then the green fenugreek.
  • Chill and serve.
  • Looks beautiful!
  • Tip: Cut the whole tomatoe, cucumber and onion first into quarters lengthwise, then into slices.
  • It looks neater!
  • Use your own quantites and discretion-- there are no rules!

BING CHERRY SALAD



Bing Cherry Salad image

This is a salad my great grandma use to make and is one of my favorites to eat during the holiday season. Most people make this creamy by melting the cream cheese or dissolving it in the juice. We actually add small chunks of the cheese after the mix has cooled. So you have a clear gelatin with little white chunks in it. So good!

1 (20 ounce) can crushed pineapple with juice
1 (15 ounce) can pitted Bing cherries in water
1 (3 ounce) package cream cheese, cut into pieces
1 (12 fluid ounce) can or bottle cola-flavored carbonated beverage, or as needed.
1 (3 ounce) package cherry Jell-O®

Steps:

  • Drain the pineapple juice and cherry water into a 2-cup measuring cup. Pour enough color to make 2 cups; discard the remaining soda. Pour the cola mixture into a saucepan.
  • Bring the cola mixture to a boil over medium-high heat. Remove from heat, then stir in the pineapple, cherries, cream cheese, and cherry gelatin until gelatin dissolves, about 5 minutes. Pour mixture into a mold or glass baking dish. Refrigerate until set, about 3 hours.

1 pint raspberries
1 pint blueberries
1/2 pound Bing cherries
2 medium oranges, peeled, pith removed
2 tablespoons eau de vie

Steps:

  • In a large bowl, combine the blueberries and raspberries. Working over parchment paper, pit the cherries, discard the pits, and add the fruit to the berry mixture. Section the oranges and add them to the bowl.
  • Pour the juices that have collected on the paper into the bowl, add the eau de vie, and gently toss. Divide among four bowls and serve.
