1 tablespoon olive oil
2 bags (5 ounces each) baby spinach
1 pint cherry or grape tomatoes, halved
1 tablespoon balsamic vinegar
Coarse salt and ground pepper

Steps:

  • In a large skillet, heat oil over medium. Add spinach; cook, tossing often, just until wilted, 2 to 3 minutes. Stir in tomatoes and vinegar; season with salt and pepper. Serve immediately.

This is an excellent brunch salad that's very easy to throw together. This tastes great without a dressing, but some people like a bacon dressing or a nice balsamic vinegar.

1 pint fresh blackberries
6 ounces crumbled feta cheese
1 pint cherry tomatoes, halved
1 green onion, sliced
¼ cup finely chopped walnuts
½ cup edible flowers

  • In a large bowl, toss together baby spinach, blackberries, feta cheese, cherry tomatoes, green onion, and walnuts. Garnish with edible flowers.

This was taken from another fellow memeber's recipe, but altered it according to the ingredients I had on hand. I also replaced the vinegar with lemon juice. Works just as well! And so easy!

1 tablespoon olive oil
3 1/2 tablespoons spicy tomato sauce (alternatively, ketchup)
3 tablespoons lemon juice
1 teaspoon ginger
1/2 teaspoon pepper
2 tablespoons chopped onions
3 teaspoons soy sauce
1/2 teaspoon salt
1 teaspoon lemon rind
4 teaspoons water
1 cup cherry tomatoes (or grape tomatoes, roma tomatoes)
1 -2 bunch spinach

Steps:

  • Mix salad dressing together.
  • Leave in fridge overnight for flavour to infuse.
  • Wash and cut off stalks of spinach.
  • Put spinach leaves together in a bowl with cherry tomatoes.
  • Pour dressing over salad and mix well.

1/2 cup mayonnaise
1/2 cup grated Parmesan cheese
1/4 cup milk
1-1/2 teaspoons dill weed
1-1/2 teaspoons dried minced onion
1-1/2 teaspoons lemon-pepper seasoning
1 package (10 ounces) fresh spinach, torn
2 cups cherry tomatoes

Steps:

  • In a jar with tight-fitting lid, combine first six ingredients; shake well. Refrigerate for at least 1 hour. Just before serving, in a large salad bowl combine spinach and tomatoes. Shake dressing; drizzle over salad and toss.

Marinating the red onions and garlic in the vinaigrette for 15 minutes not only diffuses their flavor but also softens their bite. This salad travels well and would be an excellent choice for a potluck or picnic. It's also supremely versatile, and can be dressed up with any soft herb like basil, tarragon or mint, and chile, in almost any form.

1/4 cup olive oil
3 tablespoons red wine vinegar
1/2 teaspoon Dijon mustard
3/4 teaspoon kosher salt
1/2 teaspoon pepper
3/4 cup very thinly sliced red onion (about 1/2 a small onion)
1 1/2 teaspoons minced garlic (about 1 large clove)
2 pints cherry tomatoes, halved
1 (15-ounce can) cannellini beans, rinsed and drained
1/3 cup chopped fresh parsley
1/2 cup shaved Parmesan (about 2 ounces)

Steps:

  • In a small bowl, whisk together the olive oil, vinegar, mustard, salt and pepper. Stir in the red onion and garlic and set the dressing aside to marinate for 15 to 30 minutes at room temperature.
  • Place the tomatoes, white beans and parsley in a large bowl. Pour the dressing over the salad, toss well, then gently fold in the Parmesan. Serve at room temperature using a slotted spoon.
