Brilliant red and green candied cherries add extra sparkle to these delicious holiday delights. What I really like best is that this recipe's easy to mix up ahead of time. 1 cup butter, softened
1 cup confectioners' sugar
1 large egg, room temperature
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1 cup red candied cherries, halved
1 cup green candied cherries, halved
1 cup pecan halves

Steps:

  • Cream butter and sugar. Add egg and vanilla; beat until fluffy. Add flour; mix well. Stir in cherries and pecans. Chill 1 hour. , Shape dough into three 10-in.-long logs; wrap securely and place in a freezer bag. Freeze until ready to bake, or up to 2 months., To bake, cut frozen logs into 1/8-in. slices, and place on ungreased baking sheets. Bake at 325° until edges are golden brown, 10-12 minutes. Cool on wire racks.

3 cups graham cracker crumbs
1-1/2 cups miniature marshmallows
1 cup unsweetened finely shredded coconut
1/2 cup chopped maraschino cherries
1 can (14 ounces) sweetened condensed milk
1 teaspoon maple flavoring
FROSTING:
1 cup packed brown sugar
1/3 cup butter, cubed
1/4 cup 2% milk
1 cup confectioners' sugar

Steps:

  • In a large bowl, mix cracker crumbs, marshmallows, coconut and cherries; stir in condensed milk and flavoring. Press into a greased 8-in. square baking pan., For frosting, in a small saucepan, combine brown sugar, butter and milk. Bring to a boil, stirring constantly; cook and stir 3 minutes. Transfer to a small bowl; cool until lukewarm, about 15 minutes. Stir in confectioners' sugar until smooth. Spread over crumb mixture; refrigerate until set, about 1-1/2 hours., Cut into bars. Store in an airtight container in the refrigerator.

1 cup unsalted butter
3 cups flour
4 eggs
1/2 teaspoon salt
powdered sugar
1 3/4 cups sugar
1 teaspoon vanilla
1 1/2 teaspoons baking powder
1 can cherry pie filling
1/2 teaspoon almond extract

Steps:

  • Cream butter thoroughly.
  • Add sugar and beat well.
  • Add eggs, one at a time, and vanilla.
  • Sift flour with baking powder and salt.
  • Add sifted dry ingredients gradually, beating well.
  • Spread on a large 11x17 inch greased pan, saving a little more than a cup of batter on the side.
  • Add almond extract to cherry pie filling, then spread filling to within half an inch from edge of pan.
  • Place remaining dough by spoonfuls over filling.
  • Bake at 350 degrees for about 45 minutes.
  • When cool, sprinkle with powdered sugar.
  • Cut into slices or squares before serving.

1 cup real butter, softened
1/2 cup sugar
1/2 cup powdered sugar
1 egg
1 teaspoon vanilla
2 1/4 cups all-purpose flour
1 1/2 cups candied red cherries or 1 1/2 cups green glazed cherries, halved
1 tablespoon all-purpose flour
1 cup coarsely chopped pecans

Steps:

  • Combine butter, sugar, powdered sugar, egg and vanilla in large mixer bowl.
  • Beat at medium speed, scraping bowl often, until creamy.
  • Reduce speed to low and add 2 1/4 cups flour.
  • Mix well.
  • Combine cherries and 1 tablespoon flour in small bowl; toss to coat.
  • Stir in cherry mixture and pecans by hand.
  • Cover dough and refrigerate 1 hour.
  • Shape dough into three 10 x 1 1/2-inch rolls on lightly floured waxed paper.
  • Wrap rolls in plastic food wrap and refrigerate until firm (1 to 3 hours).
  • Heat oven to 350° F.
  • Cut rolls into 3/8-inch slices with sharp knife.
  • Place 1 inch apart onto ungreased cookie sheets.
  • Bake for 12 to 14 minutes, or until edges are very lightly browned.
  • NOTE: This dough freezes well.
  • Wrap rolls tightly and place in plastic freezer bags or foil.
  • Thaw in refrigerator before slicing.

1 cup confectioners' sugar
1 egg
1 1/2 teaspoons vanilla
2 1/4 cups flour mixed with a generous dash of salt
2 cups candied cherries, halved
1 cup pecans

Steps:

  • Cream butter until fluffy. Gradually add sugar, beating until light. Beat in egg and vanilla. Stir in flour mixture; mix well. Stir in cherries and pecans. Cover airtight and chill 1 hour. Divide dough into thirds. On lightly floured pastry cloth or other surface, with floured hands, shape each piece of dough in a 12 inch roll. Wrap each piece well and chill overnight in the freezer. Cut into 1/4 inch slices. Place cookies 1 inch apart on ungreased cookie sheets. Bake in preheated 350F oven 12 to 15 minutes or until light brown at the edges. Cool on racks before storing.

1 cup icing sugar (confectioners)
1 egg
1 teaspoon vanilla
2 1/2 cups flour
2 cups red and green glazed cherries, halved
1 cup pecans, coarsely chopped

Steps:

  • In a mixing bowl, cream the butter and sugar.
  • Add the egg and vanilla; beat until fluffy.
  • Add the flour; mix well.
  • Stir in cherries and pecans.
  • Chill the dough for 1 hour.
  • Shape the dough into three 10-in rolls; wrap in plastic wrap, and place in a zip-lock freezer bag.
  • Freeze up to 2 months.
  • TO BAKE COOKIES: Remove the rolls from the freezer.
  • Cut rolls into 1/8-inch slices.
  • Place the cookies 1-inch apart on ungreased baking sheets.
  • Bake at 325 degrees for 10-12 mins, or until the edges are golden brown (don't overbake).

1/2 cup butter, softned
1/3 cup packed brown sugar
1/2 teaspoon baking powder
1 dash salt
2 eggs
1 tablespoon orange juice or 1 tablespoon kirsch
2 1/2 cups flour
1/3 cup finely chopped almonds
1 egg yolk
1 tablespoon milk
1/2 cup cherry preserves (I use raspberry jam)
1 ounce bittersweet chocolate, chopped (optional)
1/4 teaspoon shortening (optional)

Steps:

  • Line a cookie sheet with foil;set aside In a large mixing bowl beat butter with an electric mixer on med-high for 30 sec.
  • Add brown sugar,baking powder,and salt.
  • Beat until combined.
  • Beat in eggs and orange juice until combined.
  • Beat in as much flour with the mixer as possible use a wooden spoon to add any remaning flour and 1/4 cup of nuts.
  • Divide dough in half.
  • Shape each half into prepared cookie sheet.
  • Flatten to 1 in thick.
  • Make an indention that's 1 in wide and 1/2 in deep down the middle of each log from end to end.
  • Combine egg and milk.
  • Brush on top and sides of dough.
  • Spoon in filling.
  • Sprinkle with remaining nuts.
  • Bake in a 375 oven for 25-30 min or until a wooden toothpick comes out clean.
  • Cool logs on cookie sheet on a wire rack for an hour.
  • Transfer logs to a cutting board,with a serrated knife cut each log crosswise into 1/2 in thick slices.
  • If desired, in a small pan heat chocolate and shortening over low heat until melted,stir frequently.
  • Drizzle over slices.
