RISALAMANDE (DANISH ALMOND RICE PUDDING WITH CHERRY SAUCE)



Risalamande (Danish Almond Rice Pudding with Cherry Sauce) image

Wonderfully creamy and delightfully flavorful, this famous rice pudding is sure to win you over!

For the Rice Pudding:
1 cup arborio rice
1 1/4 cup water
4 cups milk
1/4 teaspoon salt
2 teaspoons finely grated lemon zest
2 tablespoons sugar
4 ounces chopped blanched almonds
For the Risalamande:
2 cups heavy whipping cream
1/4 cup sugar
2 teaspoons vanilla bean paste (*not extract*)
1/2 teaspoon quality almond extract
Cherry Sauce (warm, for serving (click the link for the cherry sauce recipe))
Sprigs of fresh mint for garnish (optional)

Steps:

  • Bring the rice, salt, lemon zest, sugar and water to a boil in a medium-sized stock pot. Boil for 3 minutes, add the milk and return to a boil. Reduce the heat to low, cover and simmer for 30-35 minutes, stirring occasionally, increasing the frequency during the last 10 minutes to prevent scorching. Stir in the chopped blanched almonds.
  • Let the rice cool and then chill for several hours or overnight.
  • Beat the cream until it starts to thicken. Add the sugar, vanilla bean paste and almond extract and beat until stiff peaks form. Be careful not to over-beat. Stir the cream mixture into the rice pudding.(Note: The rice will may be very stiff. Stir it to loosen it up and then stir it more after the cream has been added to break up any clumps.)
  • Serve the Risalamande at room temperature with the warm cherry sauce.

3 cups cooked long grain rice
3 cups 2% milk
1/3 cup sugar
2 tablespoons butter
1/4 teaspoon salt
2 egg yolks, lightly beaten
1/2 cup chopped maraschino cherries
1 teaspoon vanilla extract
TOPPING:
1/3 cup sugar
2 tablespoons maraschino cherry juice
Dash salt
1 egg white
1/4 teaspoon cream of tartar
1/4 teaspoon almond extract
Maraschino cherries, optional

Steps:

  • In a large heavy saucepan, combine the rice, milk, sugar, butter and salt. Bring to a boil over medium heat. Cook for 15 minutes or until thick and creamy, stirring occasionally. Remove from the heat. Stir a small amount of hot mixture into egg yolks; return all to the pan, stirring constantly., Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Stir in cherries and vanilla. Cool for 15 minutes, stirring occasionally. Transfer to dessert dishes. Cover and refrigerate for 1 hour., In a small heavy saucepan, combine the sugar, cherry juice and salt. Bring to a boil., Meanwhile, beat egg white and cream of tartar in a large heat-proof bowl until stiff peaks form. With mixer running on high speed, carefully add hot syrup in a slow steady stream. Continue beating until soft peaks form. Stir in extract. Dollop over pudding. Garnish with cherries if desired.

4 3/4 cups whole milk
7 tablespoons plus 3/4 cup sugar
3/4 cup short-grain or medium-grain rice
1 vanilla bean, split lengthwise
1/2 cup sliced almonds, toasted
1 cup chilled whipping cream
1 16-ounce package frozen pitted cherries, thawed
1 lemon, quartered
1 tablespoon cornstarch mixed with 1 tablespoon water

Steps:

  • Combine milk, 5 tablespoons sugar and rice in heavy medium saucepan. Scrape in seeds from vanilla bean; add bean and bring to boil. Reduce heat to medium and simmer until rice is tender and mixture is thick, stirring frequently, about 35 minutes. Discard vanilla bean. Mix in almonds. Pour rice pudding into 13x9x2-inch metal baking pan; cool completely.
  • Using electric mixer, beat cream and 2 tablespoons sugar in medium bowl until medium peaks form. Fold cream into rice pudding mixture in pan. Cover and refrigerate until cold, about 4 hours. (Can be made 1 day ahead. Keep refrigerated.)
  • Cook cherries, lemon and remaining 3/4 cup sugar in heavy medium saucepan over medium heat until cherries are tender, stirring occasionally, about 5 minutes. Add cornstarch mixture and bring to boil, stirring constantly. Discard lemon. Spoon pudding into bowls. Spoon hot cherry sauce over.

4 cups basmati rice
1 teaspoon coarse salt
3 tablespoons unsalted butter
1 tablespoon plain yogurt
2 teaspoons saffron water
32 ounces whole sour cherry preserves, drained, liquid reserved
2 tablespoons extra-virgin olive oil

Steps:

  • Place rice in a medium bowl, and add enough water to cover. Pour off water, and repeat process 2 to 3 more times. Add enough cold water to cover. Add salt, and let stand for 10 to 15 minutes. Drain.
  • Bring a large pot of water to a boil. Add rice, and cook until almost tender, 5 minutes. Drain.
  • Meanwhile, in a medium nonstick stockpot, combine 2 tablespoons water, butter, yogurt, and 1 teaspoon saffron water. Add rice, layering with the cherries, and cherry liquid. Sprinkle with remaining saffron water and the oil. Cover top of stockpot with a thick kitchen towel, and place lid on top. Cook over medium heat for 5 minutes. Reduce heat to low, and cook for 30 minutes more. Invert rice onto a large platter. Serve immediately.

¼ cup white sugar
2 (15 ounce) cans crushed pineapple
1 cup miniature marshmallows
1 cup heavy cream, whipped

Steps:

  • In a saucepan bring 2 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.

3 cups cooked long-grain rice (must be 3 cups measured after cooking, and completely cooled)
1/2 cup chopped pecans
1 (8 ounce) package cream cheese, softened, divided
1 (21 ounce) can cherry pie filling or 1 (21 ounce) can strawberry pie filling
1 cup icing sugar (confectioners)
1 (12 ounce) container frozen Cool Whip Topping, thawed and divided
1 (170 g) box jell-o instant coconut cream pudding mix or 1 (170 g) box vanilla instant pudding mix
3 cups very cold milk
1 cup flaked coconut, toasted

Steps:

  • In a bowl, combine the cooked rice, pecans and a third of the cream cheese; mix well.
  • Spread into the bottom of a greased 13 x 9-inch baking pan.
  • Refrigerate for 30 minutes.
  • Remove from the fridge; spread with pie filling.
  • Refrigerate for another 15 minutes.
  • In a bowl, combine the icing sugar and the remaining cream cheese, fold in half of the thawed whipped topping.
