CHERRY RHUBARB TURNOVERS

The perfect way to start the day, our breakfast turnovers are made with Pillsbury crescent rolls, tart rhubarb and sweet cherries.

1 tablespoon butter
1 cup chopped fresh rhubarb
2/3 cup sugar
1/2 teaspoon almond extract
1/2 teaspoon vanilla
1 cup frozen pitted cherries
1 can (8 oz) refrigerated Pillsbury™ Original Crescent Rolls (8 Count)
1/2 cup Betty Crocker™ Rich & Creamy vanilla frosting, melted

Steps:

  • Heat oven to 400°F. Line cookie sheet with cooking parchment paper.
  • In 10-inch skillet, melt butter over medium-high heat. Add rhubarb; cook 5 minutes. Stir in sugar, almond extract, vanilla and cherries. Cook 6 to 10 minutes, stirring frequently, until mixture thickens. Remove from heat. Cool slightly.
  • Separate dough into 8 triangles. Spoon cooled rhubarb-cherry mixture onto center of 4 dough triangles. Top each with 1 remaining dough triangle. Use fork to press edges of dough to seal. Place turnovers on cookie sheet.
  • Bake 12 to 15 minutes or until golden brown.
  • Remove turnovers from cookie sheet; place on serving plates. Drizzle each with melted frosting. Serve immediately.

1 cup rolled oats
1 cup packed brown sugar
1 cup all-purpose flour
1/4 teaspoon salt
1/2 cup cold butter, cubed
4 cups diced rhubarb
1 cup sugar
2 tablespoons cornstarch
1 cup water
1 teaspoon almond extract
1 can (21 ounces) cherry pie filling
1/2 cup finely chopped walnuts
Vanilla ice cream, optional

Steps:

  • Preheat oven to 350°. In a large bowl, combine oats, brown sugar, flour and salt; stir well. Cut in butter until crumbly. Pat 2 cups of mixture into a greased 13x9-in. baking dish; cover with rhubarb. , In a saucepan, combine sugar and cornstarch. Stir in water; cook until mixture is thickened and clear. Stir in extract and cherry filling; spoon over rhubarb. Combine nuts with reserved crumb mixture; sprinkle over cherries. Bake until filling is bubbly and topping is lightly browned, 40-45 minutes. If desired, serve with ice cream.

2 cups white sugar
1 ⅓ cups raisins
¼ cup vegetable shortening
⅔ cup white sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
⅔ cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Mix rhubarb with 2 cups sugar in a large bowl and spread into the prepared baking dish; sprinkle rhubarb with raisins.
  • Beat vegetable shortening with 2/3 cup sugar in a bowl; beat in eggs, one at a time, followed by vanilla extract. Whisk flour, baking powder, and salt together in another bowl. Gradually stir the flour mixture into the wet ingredients, alternating with milk, to form a smooth batter. Spread batter over fruit in baking dish.

1 cup white sugar
3 tablespoons cornstarch
1 cup cold water
1 (21 ounce) can cherry pie filling
½ teaspoon almond extract
4 cups chopped fresh rhubarb
1 cup all-purpose flour
1 cup rolled oats
1 cup packed brown sugar
¼ teaspoon salt
½ cup margarine or butter
¼ cup finely chopped pecans or walnuts

Steps:

  • In a saucepan over medium heat, stir together the cornstarch and sugar. Stir in the water. Cook, stirring constantly, until thick and bubbly. Stir in the cherry pie filling and almond extract. Set aside to cool.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix together the flour, oats, brown sugar and salt. Cut in margarine until the mixture is evenly crumbly. 1/2 cup(s) granulated sugar
1 tablespoon(s) cornstarch
2 1/2 cup(s) fresh or frozen rhubarb
2 cup(s) cherry pie filling (apple may be used or other fruit)
1/2 cup(s) panko bread crumbs
3/4 cup(s) graham cracker crumbs
1/4 cup(s) brown sugar, lightly packed
1 tablespoon(s) lemon juice
1/2 teaspoon(s) ground cinnamon
1/4 teaspoon(s) nutmeg
3 tablespoon(s) butter, melted
1/2 teaspoon(s) grated lemon rind
1/3 cup(s) hot water

Steps:

  • Preheat oven to 375. Combine granulated sugar and cornstarch in a large saucepan. Add rhubarb and cook over medium heat, stirring constantly, until thickened and bubbly. Remove from heat. Stir in pie filling, lemon juice and rind. Combine bread crumbs, cracker crumbs, brown sugar and spices in small bowl. Stir in butter. Spoon half of the fruit mixture into a 1 1/2 quart baking dish, or a 9x13-inch baking pan. Cover with half of the bread and cracker mixture. Repeat the layering ending with crumbs on top. Pour water evenly and slowly over top. Cover with foil. Bake 25 minutes, then uncover and bake 15 minutes more. Great served with Chocolate Sauce drizzled over top or serve with whipped cream or vanilla ice cream.
