CHRISTMAS FRUIT DROP COOKIES

Steps:
- In large bowl, beat brown sugar, shortening, buttermilk and eggs with electric mixer on medium speed until blended, or mix with spoon. Gradually stir in flour, baking soda and salt. Stir in cherries, dates and chopped pecans. Cover and refrigerate 1 hour.
- Heat oven to 375°F. Grease cookie sheet. Drop dough by rounded teaspoonfuls about 2 inches apart onto cookie sheet. Place a pecan half on each cookie.
- Bake 8 to 10 minutes or until almost no indentation remains when touched lightly. Immediately remove from cookie sheet to wire rack.

COCONUT CHERRY DROPS
My momma has been making these since I was little at Christmas time. They were MY favorite, therefore, Santa got them every year also! I now make them every year for me and my husband. I hope you enjoy them.

Steps:
- 1. Preheat oven to 350 degrees.
- 2. With mixer, cream together butter, sugar, almond extract,and egg .
- 3. Add, mixing on low, flour, baking powder, salt, until just combined.
- 4. With a spoon or spatula, fold in coconut nuts and cherries.
- 5. Drop by teaspoon-ful onto cookie sheets. These will not spread out and flatten. Bake 10 - 15 minutes. Until bottom barely starts to brown.
CHERRY PECAN CRISP
I whipped this together when I needed to use up some cherries before they went bad.

- 1. Preheat oven to 375.
- 2. Mix together, cherries, sugar, corn starch and vanilla and place in 8x8 inch glass baking dish.
- 3. Mix together remaining ingredients and sprinkle over top of cherries.
- 4. Bake for 35 minutes. Serve warm with vanilla ice cream.

- 1. In a large bowl, add pecans, flour and 1c. sugar; set aside. In a small bowl, beat egg whites until foamy. Gradually add remaining sugar, beating until stiff peaks form. fold in butter rum and half the flour mixture. Fold in remaining flour mixture.
- 2. Drop by rounded teaspoonfuls 2" apart onto an ungreased foil lined baking sheets. Top each cookie with a cherry piece.
- 3. Bake at 375^ for 20 minutes or until edges are lightly browned. Cool completely before removing from pans. * makes about 5 dozen

Steps:
- Peel and core apples. Cut into 1/8-inch pieces. Simmer all filling ingredients until apples become soft.
- Put first 4 ingredients in mixer bowl with paddle attachment.
- Cut butter into small cubes and chill. Add to above ingredients and mix until mealy. Add pecans to above and pulse to mix.
- Place apple mixture in a large 2-inch deep baking dish. Top with crisp topping. Bake at 350°F for 45 minutes until top is browned.
