Cherry Pie Bars are the best mix of cherry pie, bars and hand pies. Easy to make and easy to eat, they are the ultimate easy dessert recipe!

Number Of Ingredients 11

1 cup butter (softened)
2 cups sugar
4 eggs (room temperature)
1 1/2 teaspoons vanilla
3/4 teaspoon almond extract
3 cups flour
1 teaspoon salt
21 ounce can cherry pie filling
1 cup powdered sugar
2 tablespoons milk
Cooking Spray

Steps:

  • Preheat oven to 350 degrees.
  • Cream butter and sugar in a stand mixer fitted with a paddle attachment or a large mixing bowl with electric hand mixer.
  • Add eggs, one at a time, until combined. Add 1 teaspoon vanilla and 1/4 teaspoon almond extract, blend.
  • In a separate bowl, whisk or sift together flour and salt. Slowly add dry mixture to wet mixture until just combined, do not over mix.
  • Lightly coat a 9x13 baking dish with cooking spray. Spread 3 cups batter into the bottom of the baking dish. Top with entire can of cherries. Spoon dollops of remaining batter over top of the cherries. There should be a good bit and it will cover much of the dish.
  • Bake for 45 minutes, or until it passes the toothpick test. Allow to cool for 30 minutes.
  • In a small bowl, whisk together powdered sugar and milk plus remaining vanilla and almond extract. Drizzle over Cherry Cobbler Squares.
  • Cut into 16 equal squares and serve. Enjoy your Cherry Bars!

1 cup confectioners' sugar
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
2-3 tablespoons whole milk

Steps:

  • Preheat oven to 350 degrees. Spray a 15x10 sheet pan with baking spray.
  • In a stand mixer, cream butter, sugar, and salt on medium speed until light and fluffy.
  • Add eggs, one at a time, then add extracts.
  • Gradually fold in flour to butter mixture until combined and dough forms.
  • Press 3 cups dough into prepared pan.
  • Spread with cherry pie filling covering all the dough evenly.
  • Drop remaining dough by teaspoonfuls over filling.
  • Bake 35-40 minutes, or until golden brown.
  • Cool completely in pan before glazing.

I saw these on Facebook this evening and liked the recipe so much, I wanted to share it with all of you. From my own point of view, a teaspoon of salt as part of the bar ingredients sounds excessive. I think I would add no more than a half-teaspoon, but it's totally up to you.

INGREDIENTS FOR BARS
1 c butter, softened
2 c granulated sugar
4 eggs
1 tsp vanilla extract
1/4 tsp almond extract
3 c all-purpose flour
1 tsp salt
2 can(s) cherry pie filling
INGREDIENTS FOR GLAZE
1 c powdered sugar
1/2 tsp vanilla extract
1/2 tsp almond extract
2 Tbsp milk

Steps:

  • 1. Preheat the oven to 350 degrees F.
  • 2. With a hand-held mixer or the wire whisk of yoru stand mixer, cream the butter and sugar until smooth.
  • 3. Add the eggs and vanilla; beat well.
  • 4. Slowly add the flour and salt; mix well.
  • 5. Spread approximately three cups of the batter in a greased 9x13 pan (use a bigger pan if you wants the bars to be thinner).
  • 6. Spread the pie filling over the batter.
  • 7. Drop tablespoons of batter randomly over the pie filling.
  • 8. Bake for 35 minutes or until a toothpick inserted into the middle comes out clean.
