1/3 cup sugar
1 cup chopped walnuts
1 cup old fashioned oats
1/2 cup unsalted butter, softened
3/4 cup unbleached all-purpose flour
1/2 teaspoon cinnamon
1 (21 ounce) can light cherry pie filling

Steps:

  • Preheat oven to 400°.
  • In large bowl, mix sugar, walnuts, oats, butter and flour.
  • Use fingers until crumbs form; reserve 1 1/2 cups.
  • Press remaining crumbs in bottom of 9-inch square baking dish.
  • Combine cinnamon in cherry filling; spread over crust.
  • Sprinkle remaining crumbs over; press gently.
  • Bake 20-25 minutes or until lightly browned.
  • Cool on rack; cut into squares.

This is an easy recipe that uses a cake mix and a jar of fruit preserves. The basic recipe can be easily altered according to your preference. For example, instead of cherry preserves, try chocolate chips, peanut butter chips, or raspberry jam. For lower-fat option, see note at end of instructions.

18 1/2 ounces white cake mix
2 cups quick-cooking oats
3/4 cup butter, melted
1 cup cherry preserves
1 tablespoon water
1/2 cup pecans, finely chopped

Steps:

  • Preheat oven to 375. Prepare a 9x13 pan.
  • In a large bowl, mix together the cake mix, oats and butter until butter has been evenly distributed and entire mixture is crumbly. (See Note #1 at end for directions to make a lower-fat option).
  • Press TWO-THIRDS the oat mixture evenly into the bottom of the prepared pan.
  • In a separate bowl, mix the preserves with water and spread over the crust. (See Note #2 at end, regarding jam).
  • Add pecans to the remaining ONE THIRD oat mixture and crumble this over the top, allowing some of the cherry filling to show through.
  • Bake 375 for 28-30 minutes (34-36 minutes if you are doing the lower-fat option), or until the top is lightly browned and the center doesn't collapse when you press lightly.
  • For best results, cut into bars after the bars are set and cooled (I like to cover with foil and cut into bars the next day).
  • NOTE #1: For lower-fat option, instead of 3/4 cup butter, use 1/2 cup butter and 1/4 cup applesauce.
  • NOTE #2: A 10 oz. jar of Smuckers "Simply Fruit" is about 1 cup. Use the whole jar.

12 tablespoons unsalted butter, 1 1/2 sticks
1 1/2 teaspoons pure vanilla extract
1 1/2 cups quick cooking oats
1 cup unbleached flour
1 cup packed dark brown sugar
1/4 teaspoons salt
1/4 teaspoon ground cinnamon
1 cup dried cherries, packed
1/3 cup nuts, such as cashews, coarsely chopped, optional

Steps:

  • 1. grease a 9 x 9" baking pan with butter. Dust with flour and tap out the excess. Preheat the oven to 350°. Melt the butter in a small pan over low heat, stirring frequently. Remove from heat and let cool for five minutes. Stir in the vanilla and mix well.
  • 2. In a large bowl, mix the oats, flour, sugar, salt, and cinnamon together with a wooden spoon, flattening any lumps. Pour in the melted butter mixture and mix until well incorporated. Stir in the cherries and continue mixing, adding nuts if desired.
  • 3. Spread the dough evenly in the bottom of the prepared baking pan, using your hands to Down. Bake for 30 minutes or until the top is Golden Brown and the edges are starting to pull away from the sides of the pan. Remove from the oven and cool on a rack for one hour. Cut just before serving. Makes 12 to 16 bars.
