CHERRY MALTED COOKIES (PILLSBURY BAKE-OFF WINNER)
From the 1953 Pillsbury Bake-off Cookbook (4th Grand National). You can replace some or all of the shortening with unsalted butter. If using plain malted milk powder, add 2 tablespoons unsweetened cocoa. For a variation, add 1 cup chopped black walnuts.

- Adjust oven rack to middle position, preheat to 375°F, and line two baking sheets with parchment. In a medium bowl, combine flour, brown sugar, malted milk powder, salt, cinnamon, and baking soda.
- In a large bowl, if using a hand mixer, or in the bowl of a stand mixer fitted with a paddle attachment, beat butter and sugar until soft and light, about 1-2 minutes. Add egg and continue beating until smooth, then add vanilla and cherry syrup and beat a minute more, pausing to scrape down the sides of the bowl as needed. Resume mixing on low, add flour, brown sugar, malted milk powder, salt, cinnamon, and baking soda. When fully incorporated, stir in chopped cherries.
- Drop by rounded teaspoons onto prepared baking sheets. Bake cookies one sheet at a time until puffed and just set around the edges, but still soft in the middle, about 12 minutes. Cool directly on the baking sheet until firm, then transfer to wire rack to cool.

- Place rack in center of the oven and preheat to 350degrees.
- Lightly mist a 13x9 inch baking pan with vegetable oil spray.
- Set pan aside.
- Place all ingredients into large mixing bowl and beat with electric mixer on low for 1 minute.
- Stop the machine and scrape down the sides of the bowl with a rubber spatula.
- Increase speed to medium and beat for 2 minutes more.
- The batter should look thick and well blended.
- Pour the batter into the prepared pan, smoothing the top with a spatula.
- Place the pan in the oven.
- Bake the cake for 30-35 minutes.
- Remove the pan from the oven and place it on a wire rack to cool.
- Serve with a chocolate glaze or frosting.

BURIED CHERRY COOKIES
An easy cookie that tastes like a chocolate covered cherry in an almond cookie crust!

- Preheat an oven to 350 degrees F (175 degrees C).
- Drain the cherries and reserve about 2 tablespoons of the juice. Cut the cherries in half if large, and set aside.
- Beat the softened butter, sugar, and baking powder with an electric mixer until thoroughly creamed and fluffy, about 1 minute. Beat in the egg and almond extract, then add the flour gradually, and beat just until blended. Pinch off pieces of dough, roll into 1-inch balls, place the balls on an ungreased baking sheet, and press your thumb in the center of each cookie to make a dent. Place a cherry or cherry half in the indentation of each cookie.
- In a small saucepan over low heat, melt the chocolate with the condensed milk, and stir until smooth. Add 1 to 2 tablespoons of reserved cherry juice to the mixture, or as needed, to thin the frosting; frosting will be thick. Spoon about 1/2 teaspoon of frosting over each cherry, covering the cherry completely.
- Bake the cookies in the preheated oven until firm and slightly browned, about 12 minutes. Let cool on the baking sheet for about 1 minute before removing, then move to a wire rack to finish cooling.

EASY CHEESE BATTER BREAD (A PILLSBURY BAKE-OFF WINNER)
This hearty casserole bread was a prize winner in the 23rd Bake-Off contest in the early 70's. The moist and chewy bread is even better the second day! *Cooking time(passive time) includes time for bread to rise twice.

Steps:
- Generously grease 1 1/2 or 2 quart casserole dish or 9x5" loaf pan.
- Lightly spoon flour into measuring cup; level off.
- In large bowl, combine 1 1/2 cups flour, cheese, sugar,salt and yeast; blend well.
- In small saucepan, heat milk and margarine until very warm (120 to 130 degrees F.).
- Add warm liquid and eggs to flour mixture.
- Blend at low speed until moistened; beat 3 minutes at medium speed.
- By hand, stir in remaining 1 cup flour.
- Cover loosely with plastic wrap and cloth towel.
- Let rise in warm place (80 to 85 degrees F.) until light and doubled in size, about 45-60 minutes.
- Stir down dough to remove all air bubbles. Turn into prepared casserole dish.
- Cover; let rise in warm place until ight and doubled in size, 20-25 minutes.
- Heat oven to 350 degrees.
- Uncover dough.
- Bake 40-45 minutes or until deep golden brown.
- Remove from casserole dish immediately; cool on wire rack.
