CHERRY-CORNMEAL SLUMP (OR GRUNT)



Cherry-Cornmeal Slump (or Grunt) image

Juicy cherries are right at home in this little-known riff on cobbler that's cooked on the stove instead of in the oven.

Number Of Ingredients 11

2 pounds cherries, stemmed and pitted
½ cup plus 2 tablespoons sugar
1 tablespoon lemon juice
½ cup flour
¼ cup cornmeal
½ teaspoon baking powder
salt
8 tablespoons (1 stick) cold unsalted butter, cut into bits
1 egg
½ teaspoon vanilla extract
Ice cream, whipped cream or Greek yogurt for serving.

Steps:

  • Put the cherries, 1/3 cup sugar, lemon juice and 2 tablespoons water in a large skillet over medium heat; you can also put the skillet on the grill or over a campfire. Cook, stirring occasionally, until the juices have released, about 10 minutes.
  • Meanwhile, combine the flour, cornmeal, baking powder, a pinch salt and remaining sugar in a bowl, or pulse once or twice in a food processor. Add the butter, and process for 10 seconds or until mixture is well blended. Add the egg and vanilla; mix until combined.
  • When the cherry mixture is thickened slightly, dollop the batter over the top, and cover the skillet tightly with a lid or aluminum foil. Cook, undisturbed, until the dumplings are cooked through, and their tops are dry (not sticky), 20 to 25 minutes. Serve with ice cream, whipped cream or yogurt.

1 can (16 ounces) pitted tart red cherries, undrained
1-1/2 cup water
3/4 cup sugar, divided
1/4 cup butter, divided
1 cup all-purpose flour
1-1/2 teaspoons baking powder
Pinch salt
1/3 cup 2% milk
1/2 teaspoon vanilla extract

Steps:

  • Place cherries and juice in a straight-sided skillet or Dutch oven along with water, 1/2 cup sugar and 2 tablespoons butter. Simmer for 5 minutes. , Meanwhile, sift together flour, baking powder, salt and remaining sugar; place in a bowl. Cut in remaining butter with a pastry blender. Add milk and vanilla; stir to combine. , Drop by tablespoonfuls over cherry mixture; cover and simmer until dumplings are cooked through, 20 minutes.

• 2 tablespoons sugar
• 1 1/2 teaspoons baking powder
• 1/4 teaspoon salt
• 3 tablespoons (1 1/2 ounces) cold unsalted butter, cut into cubes
• 1/3 cup plus 1 teaspoon milk
• 1/4 teaspoon vanilla
• For the Cherries:
• 1/2 cup (3 1/2 ounces) granulated sugar
• 1 teaspoon cornstarch
• 1/4 teaspoon cinnamon
• pinch salt
• 6 cups (about 32 ounces) frozen sour cherries
• Whipped cream or ice cream to serve

Steps:

  • 1 For the Dumplings:Combine the flour, sugar, baking powder, and salt in a bowl. Rub the butter cubes into the flour mixture with fingertips until no visible pieces of butter remain but flour mixture is still fluffy and dry. Stir in milk and vanilla until mixture is just moistened. Do not overmix. Set aside. 2 For the Cherries: Combine sugar, cornstarch, cinnamon, and salt in bowl. Place cherries and sugar mixture in 10-inch saucepan and heat over medium heat, stirring occasionally, until sugar is dissolved. Increase heat to medium high and heat until cherries have just come to a boil. Adjust sweetness level to taste then reduce to a low boil. 3 Spoon heaping tablespoon sized pieces of dumpling dough onto cherries, spacing evenly (you should get about 6 dumplings). Immediately cover, reduce heat to low, and cook, adjusting heat to keep mixture at a steady simmer. Avoid peeking until dumplings are mostly set, about 25 minutes. 4 To serve, spoon warm dumplings and fruit into bowls and eat plain or top with whipped cream or ice cream.
