CHERRY COTTAGE CAKE

This cake souffle like and made in your iron skillet. It is not overly sweet, but it sure grabs your attention! Great for breakfast or that luncheon with the ladies. Mom made this for the Parish Priests... they loved it as much as we did.

2/3 c sugar
4 large egg yolks
1/2 c melted butter
1 c cottage cheese, small curd
1 c dairy sour cream
1/4 c milk
1 Tbsp vanilla
1 3/4 c all purpose flour
1 pinch salt or 1/8 teaspoon
1 1/4 tsp baking powder
1 tsp baking soda
4 large egg whites
2 Tbsp light golden brown sugar
1 Tbsp lemon juice
2 c red sour pitted cherries
garnish: powdered sugar or cinnamon /sugar

Steps:

  • 1. Heat oven to 350^. Spray iron skillet with non-stick spray;set aside.(mine is 12 inch) Beat together the egg yolks and sugar until smooth. Add the melted butter, cottage cheese, sour cream, milk,and vanilla, beating until well combined.
  • 2. Combine flour,salt,baking powder, and baking soda; set aside. In another small bowl beat the egg whites until until soft peaks form, slowly add the golden light brown sugar and lemon juice beating until stiff but not dry peaks form.
  • 3. Beat flour mixture into cottage cheese mixture , until well blended and smooth. Remove from mixer and fold in egg whites;scooping from bottom to top to mix in evenly. Pour mixture into the iron skillet top with the pitted cherries. Bake until golden, about an hour or until tested done. Let cool completely and sprinkle with powdered sugar. Cut in wedges or squares and serve as is or with whipped topping.

1 package white cake mix (regular size)
1 package (3 ounces) cherry gelatin
1-1/2 cups boiling water
1 package (8 ounces) cream cheese, softened
2 cups frozen whipped topping
1 can (21 ounces) cherry pie filling

Steps:

  • Prepare cake mix according to package directions, using a greased 13x9-in. baking pan. Bake at 350° for 30-35 minutes or until a toothpick comes out clean. , Dissolve gelatin in boiling water. Cool cake on a wire rack for 3-5 minutes. Poke holes in cake with a meat fork or wooden skewer; gradually pour gelatin over cake. Cool for 15 minutes. Cover and refrigerate for 30 minutes., In a large bowl, beat cream cheese until fluffy. Fold in whipped topping. Carefully spread over cake. Top with the pie filling. Cover and refrigerate for at least 2 hours before serving.

1 cup Gold Medal™ all-purpose flour
2/3 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/3 cup shortening
1/4 cup milk
2 tablespoons maraschino cherry juice
2 egg whites
8 maraschino cherries, cut into eighths
1 cup Betty Crocker™ Rich & Creamy cherry or vanilla frosting (from 16-oz container)
Gummy rings candy, if desired

Steps:

  • Heat oven to 350°F. Grease bottom and side of 8- or 9-inch round cake pan with shortening; lightly flour.
  • In large bowl, mix flour, sugar, baking powder and salt until combined. Add shortening, milk and cherry juice. Beat with electric mixer on medium speed 2 minutes, scraping bowl occasionally. Add egg whites. Beat 2 minutes. Fold in cherries; pour into pan.
  • Bake 30 to 35 minutes or until cake springs back when touched lightly in center. Cool 10 minutes; remove from pan to wire rack. Cool completely, about 1 hour.
  • Spread with frosting. Decorate with candies.

SOUR CHERRY PUDDING CAKE

This dessert is best served warm with whipped cream or vanilla ice cream. It is also delicious cooled to room temperature. Plan on making it when it will be eaten within 36 hours. The soft cake part can become stale afterward. I tend to make this for company or for a dish to pass event. Preparation time does not include time for pitting cherries.

1 cup white sugar
1 tablespoon baking powder
1 cup milk
2 tablespoons vegetable oil
3 cups pitted tart red cherries
1 cup white sugar
¼ teaspoon almond extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • In a bowl, stir together the flour, 1 cup of sugar, baking powder, milk, and vegetable oil to make a smooth batter; scrape batter into the prepared baking dish.
  • In a separate bowl, stir the cherries with 1 cup of sugar and the almond extract; spoon the cherry mixture over the batter.
  • Bake in the preheated oven until the cake is lightly browned and a toothpick inserted into the center of the cake comes out clean, about 30 minutes.
