CHERRY COLA JELLO SALAD

Steps:
- Drain pineapple (saving the juice) and set the fruit aside. In a saucepan, bring the pineapple juice and water to a boil.
- Add jello and stir until it's completely dissolved. Stir in the cola, pineapple, and the pie filling and mix until completely incorporated.
- Pour jello into a large serving bowl or 9 x 11 inch pan. Refrigerate until firm (about 4 hours).

This tempting gelatin salad has a big cherry flavor and a fun zing from the cola. My two small children are always happy to see this salad on the table. We think it tastes great with or without the whipped topping.

I have been making this since I was in highschool! It is a wonderful jello salad that family and friends request often! A lovely addition to any holiday table!

- 1. Dissolve jello in hot water. Cool. Add cola and refrigerate til gelatin is slightly thickened. Stir in cherries, nuts and cream cheese. Pour into jello mold and chill til completely set.

- 1. Boil cherry juice and add gelatin. Stir until dissolved, about 2 minutes, and add cola. Add pecans, cream cheese and cherries. Chill in a flat 9X13 dish until set. Cut into squares and serve on leaf lettuce.

- Drain cherries, reserve juice. Heat ¾ cup of the reserved cherry juice over medium heat to boiling point; add to gelatin. Stir until all gelatin is dissolved. Add lemon juice and cola. Chill until gelatin begins to thicken. Add pecans and cherries. Mix cream cheese, sour cream and sugar. Swirl into gelatin. Chill until firm. Whip cream until soft peaks form. Add powdered sugar. Spread on salad. Serves 6-8
