Steps:
- Reserve one cup cherry pie filling for topping. Mix remaining pie filling with grated orange rind.
- Spoon onto centers of tortillas. Sprinkle a few almonds over pie filling.
- Fold in opposite sides of each tortilla and roll up covering pie filling.
- Heat oil (one-inch) in a large skillet over medium-high heat.
- Fry chimichangas, two at a time, seam-side down, until golden brown.
- Drain on paper towels.
- Sift powdered sugar over each fritter and top with remaining cherry pie filling and almonds before serving.

- Mix sugar & cinnamon in small bowl-set aside In a small bowl, use a fork to whisk together cream cheese, lemon zest & lemon juice. Spread a small amount of this in the center of each tortillas. Put 1/4 cup filling on top of the cream cheese then roll up in the tortillas tight. Put on a plate & chill for 30 minutes. Put about 1" of oil into a deep frying pan & heat. When hot, add 2 or 3 rolls & allow to brown on 1 side before turning over to brown other side. Remove & roll in the cinnamon sugar mixture then set aside while you finish other. Allow to cool.
