"You couldn't ask for anything more than a nutty crust topped with a smooth cream cheese mixture and sweet cherries," assures Kathy Branch of West Palm Beach, Florida. Since this dessert is made the night before, you don't have to worry about last-minute fuss.

1 cup all-purpose flour
1 cup chopped pecans
1/2 cup packed brown sugar
1/2 cup butter, softened
FILLING:
2 packages (8 ounces each) cream cheese, softened
1/2 cup confectioners' sugar
1 teaspoon vanilla extract
1 carton (12 ounces) frozen whipped topping, thawed
2 cans (21 ounces each) cherry pie filling

Steps:

  • Preheat oven to 350°. In a small bowl, combine the flour, pecans and brown sugar. Stir in butter until crumbly. Lightly pat into an ungreased 13-in. x 9-in. baking dish. Bake until golden brown, 18-20 minutes. Cool completely., For filling, in a large bowl, beat the cream cheese, confectioners' sugar and vanilla until smooth. Fold in whipped topping. Carefully spread filling over crust. Top with pie filling. Cover and refrigerate for at least 2 hours.

This is a very pretty and easy cake with a very light, not too sweet simple cream cheese frosting...

Number Of Ingredients 5

1 box(es) white cake mix (as per directions on box)
1 - container of cool whip (8 oz.) defrosted
1 package(s) cream cheese (8 oz.) room temperature
1 teaspoon(s) vanilla extract
1 can(s) cherry pie filling (21 oz.)

Steps:

  • Prepare white cake mix as directed on box.
  • Bake in 2 greased cake pans (8 inch or 9 inch pans).
  • Let cakes cool
  • Prepare frosting by mixing softened cream cheese, defrosted cool whip and vanilla extract with hand mixer until blended and smooth.
  • Place one completely cooled cake layer on a serving platter. Frost with about 3/4 cup frosting. Top with second cake layer. Frost top and sides of cake.
  • Begin to place cherries on top of cake with a teaspoon one at a time starting in the center, (trying not to add too much of the cherry pie filling syrup or jell to avoid cherries sliding off)
  • Once the top of the cake is covered in cherries, add cherry pie filling syrup/jell to the edges of cake and allow to drip down the sides of cake.
  • Refrigerate for 1-2 hours before serving
