CHERRY CAIPIRISSIMA
This simple four-ingredient cocktail is made by muddling a handful of fresh, sweet cherries, lime and simple syrup and topping it with a few splashes of rum. It's a perfect midsummer's night cocktail. If you don't have cherries on hand, strawberries or blueberries work too.

- In a cocktail shaker, press and mix the simple syrup, cherries and lime quarters with a muddler or wooden spoon. Add the rum and 6 ice cubes. Shake hard and pour everything into a rocks glass.

- Cut up a lime into 8 wedges. Muddle the wedges in a rocks glass with sugar. Add gin and top with ice. Stir and serve.

Steps:
- Preheat oven to 400 degrees F (205 degrees C). Place bottom crust in pie pan. Set top crust aside, covered.
- In a large mixing bowl combine tapioca, salt, sugar, cherries, and extracts. Let stand 15 minutes. Turn out into bottom crust and dot with butter. Cover with top crust, flute edges and cut vents in top. Place pie on a foil-lined cookie sheet--in case of drips!
- Bake for 50 minutes in the preheated oven, until golden brown. Let cool for several hours before slicing.
