TRIPLE BERRY SORBET

This tart, refreshing sorbet makes a great light dessert!

1 ¾ cups white sugar
1 ¾ cups water
2 cups fresh or frozen cranberries
1 (12 ounce) package frozen unsweetened raspberries
1 ½ cups cherry juice
½ cup lime juice
2 tablespoons frozen orange juice concentrate

Steps:

  • Bring the sugar and water to a boil in a saucepan over medium heat. When the sugar is dissolved, stir in the cranberries, and cook and stir for 5 minutes. Add the raspberries, and simmer for 5 more minutes, until the raspberries have softened and the cranberries have popped.
  • Strain the mixture through a sieve or strainer, discard the pulp, and refrigerate the mixture for 2 hours. Mix in the cherry juice, lime juice, and orange juice concentrate, and pour the mixture into an ice cream maker. Freeze according to directions.
  • Pack the sorbet into a freezer container and freeze for about 2 hours, until the sorbet is firm. Remove from the freezer about 10 minutes before serving.

6 cups frozen pitted cherries
1/4 cup sugar
1 lemon, juiced

Steps:

  • Combine sugar and cherries and refrigerate overnight. Place mixture into a blender and puree until smooth. Add lemon juice and pulse until combined. Pour mixture into ice cream machine and churn according to manufacturer's instructions.

When I don't have fresh fruit on hand, I like to use frozen fruit to make this versatile and easy coulis recipe. My favorite frozen fruit blend is cherry-berry, made up of sweet cherries, tart cherries, strawberries and blueberries, but feel free to use what you prefer. The coulis can be used on cheesecake, ice cream, yogurt, crepes - the possibilities are endless! Refrigerate for up to 1 week.

2 cups frozen berries and cherries
2 tablespoons white sugar
1 dash salt
1 teaspoon lemon juice

Steps:

  • Combine frozen fruit, sugar, and salt in a saucepan over medium heat. Stir to combine, and heat until fruit is thawed and just warmed through, about 5 minutes. Do not boil.
  • Transfer to the bowl of a small food processor. Blend until smooth, 15 to 20 seconds.
  • Strain mixture using a fine-mesh strainer, pressing solids with the back of a spoon. Stir lemon juice into the coulis and serve.
