- In a blender, combine concentrates and pineapple; cover and blend until smooth. Pour into a gallon-sized container; stir in water. Store in the refrigerator. To serve, pour the mixture into a punch bowl; add cherry soda and ginger ale. Garnish with lemon and lime slices if desired.

PRETTY BERRY CHERRY PUNCH
This is from the "Essential Christmas Cookbook". It's very pretty and tastes good too! If you want to make it a day or more in advance add everything but the ginger ale until ready to serve.

- Peel the skin from a lemon with a vegetable peeler, avoiding the bitter white pith. Cut into long thin strips.
- Drain can of cherries and place in large clear glass pitcher.
- Add strawberries, assorted berries, lemonade, ginger ale, cold black tea, mint leaves and lemon rind.
- Cover and chill for at least 3 hours.
- Add ice cubes when serving.
- Can be garnished with berries on a toothpick.

I made this punch for my sister-in-law's baby shower, and it was a big hit. The raspberry sherbet turns it a pretty pink color. The little ones enjoyed eating the half-thawed berries out of the bottom of their cups.

- In a stockpot, dissolve gelatin and sugar in boiling water. Stir in the pineapple juice, concentrates and cold water., Transfer to several freezer containers. Cover and freeze for at least 8 hours or overnight, stirring several times. Just before serving, transfer to a large punch bowl; stir in ginger ale.

CHERRY-BERRY CAKE
The pecan icing on this cake is amazing! And, the cherry-berry cake itself is super easy and moist. There are bursts of cherry in each bite. You can taste the bits of sweet coconut too. Serve this lovely cake for a sweet ending to your meal!

- 1. Combine the first three ingredients for the cake in large mixing bowl with mixer until moist and well incorporated.
- 2. Next fold in the coconut and pecans.
- 3. Pour the batter into a 9x13 baking pan that has been lightly sprayed with a vegetable oil spray.
- 4. Bake in a preheated 350-degree oven for approximately 45 minutes or until a toothpick comes out clean.
- 5. In the microwave and microwave-safe bowl, heat the strawberry preserves until hot and bubbly...1-2 minutes depending on your oven.
- 6. Stir rapidly with a fork.
- 7. Then drizzle over the cake while still hot from the oven. Set the cake aside and allow to completely cool.
- 8. Frosting: Cream together the softened cream cheese and butter until smooth with mixer.
- 9. Add powdered sugar 1 cup at a time until smooth.
- 10. Add milk 1 tablespoon at a time until the frosting is a good consistency to spread.
- 11. Next fold in the pecans.
- 12. Then frost the completely cooled cake. Cover the cake and allow it to stand at least a few hours before serving to allow for moistness to build. The longer this cake sits the better it gets!
