2 cups cherry-flavored cola
1 cup HEINZ BBQ Sauce Texas Bold & Spicy
2 lb. bone-in skinless drumsticks and thighs

Steps:

  • Mix cola and barbecue sauce until blended. Pour 1 cup cola mixture over chicken in medium bowl; toss to evenly coat chicken with cola mixture.
  • Refrigerate 1 hour to marinate.
  • Heat grill to medium-low heat. Remove chicken from marinade; discard marinade. Reserve 1-1/4 cups of the remaining cola mixture for serving with the cooked chicken. Grill chicken 30 min. or until done (165°F), turning and brushing occasionally with remaining cola mixture.
  • Serve chicken topped with the reserved cola mixture.

3 teaspoons ancho chile powder
1 teaspoon smoked paprika
Kosher salt and freshly ground black pepper
12 chicken drumsticks (about 3 1/4 pounds)
2 tablespoons canola oil
1/2 Vidalia onion, finely chopped
2 cloves garlic, chopped
2 tablespoons tomato paste
Juice of 2 oranges
Juice of 1/2 lemon
1 cup ketchup
1 (16-ounce) bag frozen pitted cherries, thawed
1/2 cup water
Olive oil, for greasing grates
Fresh cherries, for serving

Steps:

  • In a small bowl, whisk together 2 teaspoons chile powder, smoked paprika, 1 1/2 teaspoons salt, and 1/2 teaspoon black pepper. Season the chicken drumsticks and carefully loosen the skin to season the meat. Cover with plastic wrap and let marinate for at least 1 hour or overnight.
  • Meanwhile, add oil to a medium saucepan over medium heat. Once hot, add onion, and garlic, and saute until onion is soft and translucent. Add the remaining 1 teaspoon ancho chile powder, and tomato paste and toast for 1 minute. Add orange juice, lemon juice, ketchup, cherries, water, salt, and pepper. Reduce heat to low and simmer for 30 minutes. Puree with a hand blender until smooth. Reserve 1 cup sauce for grilling and hold the rest for serving.
  • Preheat a grill to medium heat. Oil the grill grate with olive oil to keep the chicken from sticking.
  • Grill chicken, turning frequently, until cooked through and skin is crisp, about 25 minutes. Brush with reserved barbecue sauce and grill 5 minutes more.
  • Serve the chicken with fresh cherries and a side of sauce.

For the chicken
1 1/2 lbs chicken breasts (or thighs w/bone)
1 Tbsp butter
Salt & pepper
1/4 cup bottled BBQ sauce
For the sauce:
1 Tbsp EVOO
1 large shallot, thinly sliced
1 large jalapeño, seeds removed and minced
1 cup tart frozen cherries
1/4 cup dried cherries
2 Tbsp chicken or veggie broth
1 Tbsp brown sugar
1/2 Tbsp cornstarch
1/2 Tbsp water
salt & pepper

Steps:

  • For the chicken: 1. Preheat oven to 450. Heat butter in cast iron skillet over med-hi heat. 2. Season both sides of chicken with S/P. Add chicken to skillet and pan sear about 5 minutes, until golden brown. 3. Flip chicken over and spoon bottled BBQ sauce evenly over top. Transfer skillet to oven and bake 15 minutes or until cooked through. For the cherry jalapeño sauce: 1. Heat EVOO over med-hi heat in sauce pot. Add shallots and jalapeño and sautee 3 minutes, until softened. 2. Add the garlic and cook for 30 seconds, until fragrant. 3. Add both cherries, broth and brown sugar. Mix and bring to simmer. 4. Simmer sauce and cook down for 10 minutes. 5. Mix cornstarch and water in a small bowl. Add the slurry to the sauce and stir until thickened, about 1 minute. 6. Remove sauce from the heat. Use an immersion blender to blend sauce a bit, leaving some chunks. (sauce can also be left as is.) Season with S/P. 7. Spoon sauce over cooked chicken and serve.

1 1/4 c apple cider vinegar
3/4 c ketchup
3/4 c onion, chopped
3/4 c tart dried cherries
1/3 c packed dark brown sugar
1/4 c water
3 Tbsp mild-flavored (light) molasses
2 large dried ancho chilies (about 1 ounce), stemmed, seeded
2 garlic cloves
1 tsp ground coriander
pinch of ground cloves
3 lb chicken wing drummettes

Steps:

  • 1. Combine all ingredients (except chicken) in a heavy medium saucepan. Bring to a boil. Reduce heat to medium-low. Cover, simmer until chilies and cherries are tender - about 20 minutes.
  • 2. Working in batches, puree mixture in blender. Return sauce to pan. If necessary, simmer uncovered until sauce is reduced to 3 cups and thickens. Season with salt and pepper. Reserve some sauce to serve as a dipping sauce - the balance of the sauce will be used as a basting sauce.
  • 3. Prepare grill (medium heat). Sprinkle chicken with salt and pepper. Grill until just cooked through, turning occasionally, about 10 minutes. Brush sauce over; continue grilling until glazed, turning chicken and basting often with more sauce, about 5 minutes longer. Serve with remaining sauce.
