CHERRIES JUBILEE FRENCH TOAST



Cherries Jubilee French Toast image

1 cup drained jarred high-quality maraschino cherries, such as Luxardo
2 tablespoons lemon juice
3 tablespoons sugar
2 strips lemon peel (using a peeler)
1 cup dark rum
1/2 cup milk
1/2 cup heavy cream
3 large eggs, beaten
1/2 teaspoon almond extract
2 tablespoons honey
Two 1 1/2-inch thick challah bread slices
2 tablespoons unsalted butter
Confectioners' sugar, for dusting
2 lemons, zested

Steps:

  • Combine the cherries, lemon juice, sugar and lemon strips in a small saucepan over low heat. Cook until the mixture has thickened, about 20 minutes. Remove the pan from the heat, add the rum and return it to the heat to burn off the alcohol, about 1 minute or until the flame is gone.
  • Whisk together the milk, cream, eggs, almond extract and honey in a shallow bowl. Soak the bread in the custard mixture.
  • Heat the butter in a large saute pan wide enough to fit both pieces of bread over medium heat until frothing. Drain off the excess custard from the bread, add the slices to the pan and cook the on both sides until golden brown, 4 to 5 minutes a side.
  • Finish in a 375 degrees F oven if the center is still wet, 5 minutes at most.
  • Serve by placing the French toast on a platter, along with the cherries jubilee sauce. Finish with the zest of the lemons and a dusting of confectioners' sugar.

2 tablespoons honey
1 tablespoon orange juice
1/4 teaspoon freshly grated orange zest
1 teaspoon vanilla extract
1 cup cream cheese, room temperature
8 slices cinnamon raisin bread
2 large bananas
3 tablespoons chopped peanuts or other nuts, optional
1/2 teaspoon ground chocolate, optional

Steps:

  • Stir the honey, orange juice and zest, and vanilla into the cream cheese until smooth.
  • Toast the bread slices. Peel and slice or dice the bananas. Spread a heaping tablespoon of the cream cheese mixture on each toast, lay the banana slices on top, and sprinkle with some nuts and chocolate, if desired. Serve. Save extra cream cheese for spreading on bagels or more toasts.
