4 cups apples (peeled and sliced)
2 cups frozen cherries (may use pitted fresh, sweet or tart)
1/2 cup brown sugar
1 teaspoon quick-cooking tapioca (not whole pearl)
1 1/2 cups rolled oats (or grape-nuts cereal)
1/4 cup unbleached white flour
1/2 cup brown sugar
1/2 teaspoon ground cinnamon
1 egg white
1 tablespoon vegetable oil (canola or other)
1 teaspoon pure vanilla extract
2 tablespoons orange juice (or unsweetened apple)

Steps:

  • Preheat oven to 350 degrees.
  • In a bowl, mix together the fruit layer ingredients. Pour the fruit evenly into a non-reactive 10 inch pie pan or 9 inch square baking dish and set aside.
  • In a large bowl, combine the oats, flour, brown sugar, and cinnamon.
  • In a seperate bowl, whisk together the egg white, oil, vanilla, and fruit juice and then stir into the dry ingredients until thoroughly combined.
  • Carefully spread the topping over the fruit (be sure to cover the fruit entirely).
  • Cover and bake for 20 minutes, then uncover and continue to bake for another 20 to 30 minutes, until the fruit is soft and bubbly and the topping is crisp and golden.

4 large cooking apples (such as Braeburn, Cortland or Granny Smith), peeled, thinly sliced (about 6 cups)
1 bag (10 oz) Cascadian Farm™ organic frozen sweet cherries
1/4 cup sugar
3 tablespoons all-purpose flour
1 1/2 cups Cascadian Farm™ organic oats & honey granola
Vanilla yogurt, if desired

Steps:

  • Heat oven to 375°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In large bowl, mix apples, cherries, sugar and flour until blended. Spoon into baking dish. Cover with foil.
  • Bake 40 minutes. Uncover; stir gently. Sprinkle with granola; press slightly. Bake uncovered 10 to 15 minutes longer or until apples are tender and topping is light golden brown. Let stand 15 minutes before serving. Serve with yogurt.

Then came the day I only had 2 1/2 cups of apple slices, but I did have a can of cherry pie...

4 c peeled apple slices
2/3 c brown sugar, packed
1/2 c all-purpose flour
1/2 c oatmeal, uncooked
1/2 c chopped walnuts (optional)
3/4 tsp cinnamon
1/3 c margarine, softened to room temp.
VARIATIONS
1 can(s) cherry pie filling (instead of apples)
OR
29 oz can of sliced peaches, drained
OR 2 1/2 CUPS APPLES & CHERRY PIE FILLING

Steps:

  • 1. Preheat oven to 375 degrees F.
  • 2. Mist an 8 x 8" square pan or dish with cooking spray.
  • 3. Arrange apples (or other fruit) in the pan.
  • 4. Mix all other ingredients together until crumbly & put over the fruit.
  • 5. Bake around 30-35 minutes, until apples are tender & the topping is golden brown and feels crunchy.
  • 6. Serve warm or cold with whipped cream or ice cream.
  • 7. NOTE: Recipe can be easily doubled. Bake in a 13 x 9" pan with the same baking time.

1 (21 ounce) can cherry pie filling
1/4 cup all-purpose flour
1/4 cup sugar
1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
1 1/2 cups Raisin Bran cereal, crushed to 3/4 cup
1/4 cup butter or 1/4 cup margarine

Steps:

  • Preheat oven to 350°.
  • Butter an 8-inch square baking dish or pan.
  • Combine apples and cherry pie filling in pan.
  • Stir together flour, sugar, cinnamon and Raisin Bran in a bowl.

6 Red Delicious apples
6 granny smith apples
1 cup dried cherries (or 1 1/2 cups fresh)
1 cup orange juice
1 cinnamon stick
1/2 cup raspberry liqueur
1/4 cup brown sugar
5 cups all-purpose flour
1 1/2 cups brown sugar
1 1/2 cups sugar
1 teaspoon salt
1 1/2 lbs butter
1 1/2 cups pecans

Steps:

  • Peel and core apples. Cut into 1/8-inch pieces. Simmer all filling ingredients until apples become soft.
  • Put first 4 ingredients in mixer bowl with paddle attachment.
  • Cut butter into small cubes and chill. Add to above ingredients and mix until mealy. Add pecans to above and pulse to mix.
  • Place apple mixture in a large 2-inch deep baking dish. Top with crisp topping. Bake at 350°F for 45 minutes until top is browned.

1 (15 ounce) can sliced apples in syrup
1 teaspoon vanilla extract
1 teaspoon almond extract
1 cup quick-cooking oats
2/3 cup flour
1/2 cup packed brown sugar
6 tablespoons butter or 6 tablespoons margarine
ice cream (optional)

Steps:

  • Combine filling ingredients and set aside.
  • Mix together the oats, flour and brown sugar.
  • Cut in the butter using a pastry blender until mixture resembles coarse crumbs.
  • Spoon half the filling into a 2 qt baking dish.
  • Sprinkle half the topping mixture over the filling in the dish.
  • Repeat layers with the remaining cherry and topping.
  • Bake in a preheated 400 degree oven 25 to 30 minutes or until topping is golden brown.
  • Serve warm with ice cream if desired.

1 bottle (12 ounces) cherry pie filling
3 large Granny Smith apples (1 1/2 pounds)
Topping
3/4 cup all-purpose flour
1/2 cup quick or old-fashioned oats
1/3 cup brown sugar
1/2 teaspoon ground cinnamon
dash of salt
1/3 cup stick butter or margarine
vanilla ice cream or thawed, frozen whipped topping (optional)

Steps:

  • 1. Preheat oven to 375°F. For fruit filling, spoon pie filling into Square Baker using Bamboo Spoon and set aside. 2. Peel, core and slice apples using Apple Peeler/Corer/Slicer and place apples on Cutting Board. Cut apples in quarters using Quikut Paring Knife. 3. Mix apples into pie filling using Classic Scraper and set aside. 4. For topping, mix flour, oats, brown sugar, cinnamon and salt in Small Batter Bowl using Bamboo Spoon. 5. Place butter in Small Micro-Cooker®. Microwave on HIGH 1 minute or until melted. Stir butter into flour mixture in Batter Bowl and mix well. Sprinkle topping evenly over fruit filling in Baker. 6. my family's favorite sweet treat during the fall season is my apple crisp. I was short of apples and oatmeal so I started experimenting.I found a can of cherry pie filling so I decided to use that along with the apples. and then I came across some chewy nut granola bars that were made with oatmeal so I thought why not crumble these up and add these in. I tried it and it was a big hit with my family. now I make it this way all the time. enjoy!

3 each large Granny Smith and Cortland or McIntosh apples (3 lbs total), peeled, cored and sliced
3/4 cup each packed brown sugar and all-purpose flour
3/4 cup tart dried cherries
1/2 cup apple cider or juice
3/4 stick (6 Tbsp) butter, cut up
1/2 tsp ground cinnamon

Steps:

  • Heat oven to 350 degrees. Have ready a shallow 2-qt baking dish. Mix apples, 2 Tbsp brown sugar, 1 Tbsp flour and the cherries in a large bowl. Transfer to baking dish; pour cider over apple mixture. In same bowl combine remaining brown sugar, remaining flour, the butter and cinnamon until well blended. With pastry blender or fingers, mix until crumbly. Sprinkle evenly over the apples. Bake 50-55 minutes or until top is browned and apples are tender when pierced. Place on a wire rack to cool. Serve warm or at room temperature.
