CHERRY ALMOND COOKIES

Puffy, soft, and crumbly, these cherry almond cookies are unlike any cookie you've ever had. They are reminiscent of biscotti but are softer and extremely flavorful. And they are completely gluten-free!

1/4 cup (60 ml) extra virgin light olive oil
1/4 cup (56 g) unsalted butter, melted
1 cup (200 g) granulated sugar
2 teaspoons almond extract
1 teaspoon vanilla extract
3 large eggs
3 cups (390 g) Bob's Red Mill Gluten Free 1-to-1 Baking Flour
1/2 cup (67 g) Bob's Red Mill Almond Flour
1/4 teaspoon salt
1 tablespoon baking powder
1 cup (160 g) dried cherries, finely chopped
1 cup (170 g) white chocolate chips

Steps:

  • Preheat the oven to 350°F. Line two large baking sheets with parchment paper. Set aside.
  • In a medium bowl, cream together the oil, butter, and sugar. Beat in the eggs one at a time, mixing well after each addition. Beat in the almond and vanilla extracts.
  • Set a fine-mesh sieve over the bowl containing the egg mixture. Add the gluten-free flour, almond flour, salt, and baking powder. Sift the dry ingredients into the bowl.
  • Mix everything together until a soft dough forms. Fold in the cherries.
  • Use a 1.5 tablespoon cookie scoop to drop mounds of dough 2-inches apart onto the prepared baking sheets. Flatten each mound using damp fingertips.
  • Bake for 8-10 minutes, or until lightly golden brown around the bottom edges. Cool the cookies on the pan for 5 minutes, then transfer to a wire rack to cool completely.
  • Melt the white chocolate chips according to the package directions. Carefully transfer to a zip-top bag with the corner snipped off and drizzle over the cooled cookies.

I had bought cherry chips on a whim and know what to do with them. Until I had tasted this cookie and thought the pairing would be great. They came out nicely. My kids loved them.

3 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup butter, softened
1 1/2 cups sugar
2 eggs
1 teaspoon double strength vanilla
1/4 teaspoon almond extract
1 (12 ounce) bag cherry chips
almonds (optional)

Steps:

  • Preheat oven to 350°F.
  • Mix flour, baking powder, and salt in a bowl set aside.
  • Cream your butter, then slowly add your sugar. Blend well.
  • Add your eggs,vanilla and almond extract.
  • Slowly blend in flour mixture. Add your chips, drop by teaspoonful onto cookie sheet.
  • Bake for about 10 minute.

1 ½ cups oat flour
¾ cup white sugar
3 tablespoons butter, at room temperature
½ cup vanilla-flavored soy milk
1 egg
½ tablespoon baking powder
½ tablespoon ground cinnamon
1 cup dried cherries
¾ cup slivered almonds, divided

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a cookie sheet with parchment paper.
  • Combine oat flour and sugar in a large bowl. Add butter; beat with an electric mixer until creamy. Mix in egg and soy milk. Mix in baking powder and cinnamon; dough should be the consistency of soft cookie dough. Fold in cherries and 1/2 cup almonds.
  • Drop cookie dough onto the prepared sheet in 2-tablespoon portions, leaving a few inches between each cookie. Sprinkle remaining slivered almonds on top of each cookie.
  • Bake in the preheated oven until a toothpick inserted in the center of each cookies comes out clean, about 15 minutes.

1 ⅔ cups all purpose flour
½ teaspoon baking soda
½ teaspoon cornstarch, corn flour
½ teaspoon kosher salt
10 tablespoons butter, melted and cooled
⅔ cup light brown sugar
¼ cup granulated sugar
1 large egg, @ room temperature
1 teaspoon pure vanilla extract
¼ teaspoon almond extract
½ cup whole almonds, (lightly toasted, and chopped)
½ cup almond, slivered - lightly toasted, and roughly chopped
⅔ cup white chocolate chip, white chocolate chunks, or white baking chips

Steps:

  • Place butter in a heatproof bowl and melt in the microwave on the lowest heat setting in 10-second increments until completely melted; set aside to cool completely.
  • In another bowl, add the flour, baking soda, cornstarch (corn flour), and salt, and mix until well combined; set aside.
  • Once the butter has cooled down, add the brown sugar, granulated sugar, vanilla extract, and almond extract; whisk until the mixture has thickened, about 1-2 minutes. Next add the egg and mix until smooth and homogenous.
  • Add the flour mixture to the butter mixture and mix until well combined and a dough forms; add the chopped almonds and the white chocolate chips and mix until thoroughly distributed.
  • Cover the dough with plastic wrap, or foil and place in the fridge for AT LEAST 30 minutes.
  • Preheat the oven to 350℉ (175 C), and line two cookie sheets with parchment paper, or silicone place mats.
  • Portion the dough into 2 tablespoons/1 oz. balls and place on a lined baking sheet.
  • Bake cookies for 10-12 minutes, rotating cookie sheet halfway through baking time to ensure even browning. Let the cookies sit on the tray for minutes, then transfer to a cooling rack, store in an airtight container
