This is the Ultimate Nacho Recipe! Crispy chips with melted cheese, ground beef, refried beans, and all of your favorite toppings.

16 ounces tortilla chips
1 pound ground beef
2 tablespoons taco seasoning
1/4 cup water
15 ounce can refried beans
4 cups shredded cheddar cheese
1/2 cup sour cream
1/2 cup guacamole
1/3 cup sliced olives
1/2 cup fresh salsa
1/3 cup roughly chopped cilantro
1/4 cup sliced or pickled jalapenos
1/4 cup diced red onion
1/4 cup sliced green onion

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Heat a large skillet over medium-high heat. Add in ground beef. Use a spoon to break up the meat and cook 8 to 10 minutes until beef is fully cooked through. Drain excess grease. Add in taco seasoning, stir, and cook 60-90 seconds.
  • Pour in water and add in refried beans. Stir to combine and cook until heated through. Keep warm.
  • Spread chips out onto a baking sheet (or other desired oven-safe baking dish including a 9x13 pan, cast iron skillet, or even a pie plate).
  • Sprinkle 2 cups of the cheese over the chips. Dot with the beef and bean mixture. Top with remaining 2 cups of cheese.
  • Bake in the 350 degree oven for 5 to 7 minutes, until cheese is fully melted.
  • Remove from heat and add additional toppings as desired. Serve warm.

This makes a huge meal-sized tray of nachos with lots of good stuff! You can adjust ingredient quantities to suit your preference. Serve with extra chips if required. Great for game day.

1 pound ground beef
1 (1.25 ounce) package taco seasoning mix
¾ cup water
1 (18 ounce) package restaurant-style tortilla chips
1 cup shredded sharp Cheddar cheese, or more to taste
1 (15.5 ounce) can refried beans
1 cup salsa
1 cup sour cream, or more to taste
1 (10 ounce) can pitted black olives, drained and chopped
4 green onions, diced
1 (4 ounce) can sliced jalapeno peppers, drained

Steps:

  • Cook and stir ground beef in a skillet over medium heat until meat is crumbly and no longer pink, 5 to 10 minutes. Drain excess grease. Stir in taco seasoning mix and water and simmer until beef mixture has thickened, 8 to 10 minutes.
  • Set the oven rack about 6 inches from the heat source and preheat the broiler. Line a baking sheet with aluminum foil.
  • Spread tortilla chips on the prepared baking sheet; top with Cheddar cheese and dot with refried beans and ground beef mixture.
  • Broil in the preheated oven until cheese is melted, watching carefully to prevent burning, 3 to 5 minutes.
  • Top nachos with salsa, sour cream, black olives, green onions, and jalapeno peppers.

I'm on a Jetblue flight and watching the Food Network channel and on comes Paula Deen (I've never seen one of her shows) doing a ball game episode. This recipe made me crave Mexican food so we went out for Mexican that night! Have not tried this recipe yet but wanted to post since I was able to find it on foodnetwork.com. Cooking and prep times are estimated.

1 (16 ounce) can refried beans
1 (13 1/2 ounce) bag white corn tortilla chips
1 medium onion, chopped
1 cup monterey jack pepper cheese, shredded
1 jalapeno, sliced crosswise, plus extra for garnish
1 (15 ounce) can chili (or your favorite chili recipe)
1 cup cheddar cheese, shredded
1 cup sour cream
1 cup green onion, chopped
1 tomatoes, diced

Steps:

  • Have all the prepped ingredients easily accessible to assemble nachos.
  • Preheat oven to 350.
  • In a small saucepan over low heat, cook refried beans until they are loose enough to spoon onto nachos.
  • On a large ovenproof platter, spread out a layer of tortilla chips and quickly put a teaspoon of hot refried beans on each chip.
  • Working quickly, sprinkle with some onions, jack cheese, and jalapeño slices.
  • Spoon on chili and top that with Cheddar.
  • Repeat this layering process until ingredients are used up.
  • Save some of the jalapeño slices for garnish.
  • Place platter in the oven and bake until cheese has melted, about 5 to 10 minutes. Remove from oven and place on a trivet or heatproof surface.
  • Top nachos with sour cream, green onions, diced tomato and jalapeño slices and serve hot.

1 pound ground beef
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup fresh or frozen corn, thawed
3/4 cup uncooked instant rice
1/2 cup water
1 envelope taco seasoning
1/2 teaspoon salt
1 cup shredded Colby-Monterey Jack cheese
1 package (16 ounces) tortilla chips
Optional toppings: Sour cream, sliced fresh jalapenos, shredded lettuce and lime wedges

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink, 6-8 minutes, breaking into crumbles; drain. Stir in tomatoes, corn, rice, water, taco seasoning and salt. Bring to a boil. Reduce heat; simmer, covered, until rice is tender and mixture is slightly thickened, 8-10 minutes., Remove from heat; sprinkle with cheese. Let stand, covered, until cheese is melted, about 5 minutes. Divide tortilla chips among 6 plates; spoon beef mixture over chips. Serve with toppings as desired.

This recipe was given to us by Paul. He brought it to a party where it was a hit. Even though it's a dip, I cool down the heat a bit and have been making it as a casual meal for years. It's quite substantial and tasty!

Number Of Ingredients 12

1 lb ground beef
1 medium onion, diced
1 pkg taco seasoning -- i use 1/2 a pack.
1 jar(s) 16 oz. hot salsa -- i use medium
tabasco sauce, a few dashes
1 can(s) 4 oz. hot diced green chiles -- i use mild
1 can(s) 16 oz. refried beans
2 c cheddar/jack, shredded
2 tomatoes, diced -- or 1 can diced tomatoes
1 can(s) 4 oz. sliced black olives
8 oz. sour cream
tortilla chips

Steps:

  • 1. Brown the ground beef and onion in a large pan, drain grease. Add the taco seasoning, following directions on the package.
  • 2. Add the salsa and dashes of Tabasco to the beef mixture.
  • 3. Combine refried beans and green chilies and add to beef mixture.
  • 4. Heat thoroughly, stirring constantly. Pour into a 2 quart oven proof casserole dish and top with cheese.
  • 5. Melt cheese under a broiler. It only takes 2 or 3 minutes to melt the cheese, so watch closely. Remove and top with tomatoes, olives and sour cream. Enjoy!!
