2 tablespoons vegan butter, to coat the foil pan
2 cups almond milk, at room temperature
½ cup vegan butter, melted
¼ cup organic sugar
1 packet active dry yeast
5 ½ cups flour, divided
1 teaspoon salt
¾ cup vegan butter
¾ cup brown sugar
2 tablespoons ground cinnamon
1 cup powdered sugar
2 tablespoons almond milk
½ teaspoon vanilla extract

Steps:

  • Generously rub two disposable foil pie pans with vegan butter.
  • In a large bowl, whisk together the almond milk, melted butter, and sugar. The mixture should be just warm, registering between 100-110˚F (37-43˚C). If it is hotter, allow to cool slightly.
  • Sprinkle the yeast evenly over the warm mixture and let set for 1 minute.
  • Add 5 cups flour and 1 teaspoon of salt to the milk mixture and mix with a wooden spoon until just combined.
  • Cover the bowl with a towel or plastic wrap and set in a warm place to rise for 1 hour.
  • Preheat oven to 350˚F (180˚C).
  • After 1 hour, the dough should have nearly doubled in size.
  • Remove the towel and add an additional ½ cup (95g) of flour and salt. Stir well, then turn out onto a well-floured surface.
  • Knead the dough lightly, adding additional flour as necessary, until the dough just loses its stickiness and does not stick to the surface.
  • Roll the dough out into a large rectangle, about ½-inch (1 cm) thick. Fix corners to make sure they are sharp and even.
  • Spread the softened vegan butter evenly over the dough.
  • Sprinkle evenly with brown sugar and cinnamon.
  • Roll up the dough, forming a log, and pinch the seam closed. Place seam-side down. Trim off any unevenness on either end.
  • Cut the log in half, then divide each half into 7 evenly sized pieces. About 1½ inches (8 cm) thick each.
  • Place 7 cinnamon rolls in each cake pan, one in the center, six around the sides. Cover with plastic wrap and place in a warm place to rise for 30 minutes.
  • To prepare the frosting. In a medium-size mixing bowl, whisk together powdered sugar, almond milk, and vanilla until smooth.
  • Remove plastic wrap. Bake the cinnamon rolls in a preheated oven at 350˚F (180˚C) for 25-30 minutes, until golden brown.
  • While still warm, drizzle evenly with frosting.
  • Enjoy!

3 Tbsp vegan butter* ((such as Earth Balance))
1 packet instant yeast* ((or use rapid-rise yeast // 1 packet yields ~ 2 1/4 tsp))
1 cup unsweetened plain almond milk*
1 Tbsp organic cane sugar*
1/4 tsp salt
3 cups unbleached all-purpose flour*
3 Tbsp vegan butter* ((such as Earth balance // melted))
1/4 cup organic cane sugar*
1/2 - 1 Tbsp ground cinnamon ((to taste))
2 Tbsp vegan butter* ((such as Earth balance // melted))
Simple Powdered Sugar Glaze (see step 8)
Vegan Cream Cheese Frosting

Steps:

  • DOUGH: In a large sauce pan (or in a bowl in the microwave at 30-second increments), heat the almond milk and vegan butter until warm and melted, never reaching boiling. Remove from heat and let cool to 110 degrees F (43 C) or the temperature of bath water. It should be warm but not too hot or it will kill the yeast.
  • Transfer mixture to a large mixing bowl and sprinkle on yeast. Let activate for 10 minutes. Then add 1 Tbsp sugar and the salt and stir.
  • Next add in flour 1/2 cup (68 g) at a time, stirring as you go (you may not add it all). The dough will be sticky. When it is too thick to stir, transfer to a lightly floured surface and knead for a minute or so until it forms a loose ball (be careful not to overmix). Rinse your mixing bowl out, coat it with avocado or olive oil, and add your dough ball back in. Cover with plastic wrap and set in a warm place to rise for about 1 hour, or until doubled in size (see photo).
  • FILLING: On a lightly floured surface, roll out the dough into a thin rectangle (the thickness of the dough should be about 1/4-inch). Brush with melted vegan butter and top with sugar and desired amount of cinnamon.
  • Starting at one end, tightly roll up the dough and situate seam side down. Then with a serrated knife or a string of floss, cut the dough into 1.5 - 2 inch sections and position in a well-buttered 8x8-inch square or comparable sized round pan (you should have about 10 rolls as original recipe is written). If preparing the cinnamon rolls the night before, stop here, cover the pan, and refrigerate overnight, then proceed with the next step in the morning.
  • TOPPING: Brush with vegan butter (melted) and cover with plastic wrap. Set on top of the oven to let rise again while you preheat oven to 350 degrees F (176 C).
  • Once the oven is hot, bake rolls for 25-30 minutes or until slightly golden brown. Let cool for a few minutes and then serve immediately.
  • Optional: Frost with dairy-free cream cheese frosting or a simple mixture of 1 cup (112 g) organic powdered sugar and 1-2 Tbsp (15-30 ml) almond milk.
  • Best when fresh, though they will keep covered at room temperature for ~2-3 days.
  • FREEZING: You can make the rolls up to the point of putting in a baking dish (step 5), and instead, freeze them in a freezer-safe container. Then, thaw the night before in the fridge. Once completely thawed, proof covered with a towel in a greased baking dish as your oven preheats, then bake as instructed.

1 (2 1/2 ounce) package yeast (red star)
1/2 cup vegan sugar
1 cup soymilk (warmed)
3 teaspoons egg substitute (Ener-G)
4 tablespoons filtered water (add to egg substitute)
1/3 cup vegan margarine
4 1/2 cups bread flour
1 teaspoon sea salt
1 cup brown sugar (packed)
2 1/2 tablespoons ground cinnamon
1/3 cup vegan margarine
3 ounces vegan cream cheese
1/4 cup vegan margarine (softened)
1 1/2 cups icing sugar
1/4 teaspoon vanilla extract
1/4 teaspoon lemon extract
1/8 teaspoon sea salt

Steps:

  • Mix the yeast, sugar and heated soy milk in a large bowl and let sit until the yeast foams.
  • Prepare your egg replacer. Mix it with the margarine, flour and salt. I used my Kitchen Aid mixer for this. The dough should be smooth and very stiff.
  • Set the dough aside, covered in a warm place until its double in bulk.
  • Once the dough has risen turn it out onto a floured surface cover with a T towel and let it rest for 10 minutes.
  • While the dough rests, combine the brown sugar and cinnamon and mix well. Set aside.
  • After 10 minutes roll out the dough on a floured surface. The dough should result in a 16x21 inch rectangle.
  • Spread the dough with the cinnamon sugar. Spread it evenly with your hand. Add the currants and nuts also.
  • Starting at one end, roll the dough up and cut into 12 equal pieces using a sharp knife.
  • Put a piece of parchment on a 9x13 inch baking sheet and place the cut up rolls evenly spaced on the parchment. Cover with the T towel and let rise again for about 30 minutes or until the rolls are about double in size. Preheat your oven to 375'F.
  • Bake for 15 minutes until golden brown. While the rolls are baking prepare the icing. Beat together the vegan cream cheese, margarine, icing sugar, vanilla and salt. Spread on the warm rolls.

1 1/2 cups confectioners' sugar
3 tablespoons soymilk

Steps:

  • To make Cinnamon Rolls: Preheat oven to 425°F Line baking sheet with parchment paper. Heat milk in saucepan over medium heat, sprinkle with yeast. Set aside.
  • Combine flours, sugar, baking powder, 1/2 teaspoons cinnamon and salt in bowl. Rub butter into flour mixture with fingers until mixture resembles coarse meal. Stir in milk until soft dough forms. Transfer to well-floured surface and dust with flour. Press into 12x6-inch rectangle.
  • Combine brown sugar and remaining cinnamon in small bowl. Sprinkle over dough, and press in lightly with palms of hands. Gently roll dough lengthwise into log. Cut log into 16 3/4-inch-thick slices. Place slices on prepared baking sheet, reshaping into rounds if necessary. Bake 15-18 minutes, or until rolls begin to brown.

SWEDISH CINNAMON ROLLS (VEGAN)

These aren't the gooey sickly sort of cinnamon rolls you get at the mall! They're not overly sweet, the sort of thing you would have with tea or coffee in the morning. I came across this "Swedish" version on the blog: http://dieflaschenpost.blogspot.com. I'm not an experienced cinnamon bun baker, this was actually my first attempt. I can see now why they're so popular, because they're quite fun & easy to make. These have a subtle cardamom flavour, which I suppose you could sub with another spice if you choose. The original version didn't include any whole wheat flour...you could adjust to all regular flour if you choose. I tried it with more whole wheat as well as with oil and the results weren't as good. They're very pretty out of the oven, it seems a shame to ice them! Although, took to a school event and did ice them with a simple frosting to please the masses. :) Prep time includes the approximate rising time.

2/3 cup soymilk
2 teaspoons dry active yeast
1 teaspoon sugar (or sub honey or agave nectar)
2 tablespoons soy yogurt (plain or vanilla)
1/4 cup sugar (I use organic evaporated cane juice)
1/2 teaspoon salt
1 1/2 teaspoons ground cardamom
1 1/2 cups unbleached all-purpose flour
1 cup whole wheat flour
1/4 cup Earth Balance margarine, cold (cut into small pieces)
2 tablespoons Earth Balance margarine, room temperature
2 tablespoons sugar
1 tablespoon cinnamon
soymilk (to brush on top)
sugar (to sprinkle on top)

Steps:

  • Warm the soy milk slightly - too hot will kill the yeast, too cool won't activate it -- just about lukewarm is right. In a small bowl stir together the soy milk, the yeast and the teaspoon of sugar. Set aside to let the yeast do it's thing.
  • Add the next 7 ingredients (yogurt to 1/4 cup margarine) to a larger bowl and then add in the yeast mixture. Knead for about 10 minutes until a nice soft dough has formed. Cover and let rise in a warm place for about half an hour, until doubled in size.
  • Mix the 2 tbsp margarine, 2 tbsp sugar and cinnamon together in another small bowl and set aside.
  • Place 12 muffin liners on a baking sheet. Roll the dough into about a 10" x 12" rectangle - as close to square as you can get it.
  • Spread the cinnamon sugar mixture evenly over the dough and then roll it up (roll from the longest side). Cut into 1" slices and place each slice in a muffin liner. Cover again and let rise for another hour, should be doubled in size.
  • Preheat oven to 425 degrees. Brush the tops of the rolls with soy milk and sprinkle with a touch of sugar. Bake for 10 minutes until golden brown.

This pudding is delicious and not overly sweet. I used part of a spelt baguette cut up into cubes for this. It was good and stale which your bread should be for this sort of recipe. I topped it off with my Vegan Vanilla Sauce

4 tablespoons margarine (softened..Earth Balance)
2 cups soymilk (soy or other non-dairy milk)
3 teaspoons egg substitute (Ener-G)
4 tablespoons filtered water (add to egg replacer)
1/2 cup sugar (raw cane)
1/8 teaspoon sea salt
1 teaspoon cinnamon (ground)
3 cups stale bread (cubed)
1/2 cup raisins

Steps:

  • Preheat your oven to 350'F.
  • Put the margarine in a bowl big enough to accommodate 2 cups of milk.
  • Put the sugar, cinnamon and salt into another bowl and mix well.
  • Put the milk in a saucepan and heat until just before the boiling point.
  • Pour the heated milk into the bowl with the margarine in it. Mix until the margarine is completely melted.
  • In a 9x13" oven safe dish add the bread and raisins.
  • Mix the egg replacer with water. I use 1 1/2 teaspoons of egg replacer and two tablespoons of warm water. Stir to incorporate.
  • Gradually add the egg replacer to the milk mixture.
  • Add in the cinnamon, sugar and salt mixture into the milk mixture. Mix this well.
  • Pour the milk mixture over the bread and raisins and carefully move the bread around so that ll the pieces are soaked in the milk.
  • Put the dish with the prepared bread pudding into a larger dish and put it into the preheated oven.
  • Pour the hot water into the outer dish being careful not to get any in the pudding dish.
  • Bake for 40-45 minutes.
  • The custard should be creamy. Remember you didn't use eggs here so it won't be set exactly the same. As it cools it will firm up a bit.
  • Serve either warm or cold, plain or with your favourite sauce.

I love fruit cake and of course wanted it to be vegan, so I came up with this recipe. I used my square muffin tin for these. The bottoms lift out of this tin which helps remove the squares easily. Next time I think I will double the recipe. I put the squares in the fridge and will enjoy them over the holidays. I think they will taste better if you let these sit for a while.

1/2 cup firm tofu
1 cup sifted powdered sugar
1/2 cup cake flour
1/2 cup white spelt flour
2 teaspoons orange extract
1 1/4 teaspoons baking powder
1/4 teaspoon sea salt
1 cup candied fruit
1/4 cup walnuts
1/4 cup pecans
1/3 cup currants
1 cup sifted powdered sugar
2 tablespoons coconut rum
2 drops orange extract

Steps:

  • Oil your muffin tin. I used spray.
  • Preheat your oven to 350'F.
  • In the bowl of a stand mixer beat the tofu until smooth.
  • Add the sifted powdered sugar and orange extract to the tofu mixture and beat again until well blended.
  • While its blending, sift the flours, baking powder and salt in a bowl.
  • Take 2 tablespoons of the flour mixture and stir in the candied fruit, nuts and currants. This will keep them from clumping and falling to the bottom of the squares.
  • Add the rest of the flour mixture to the tofu mixture on low speed. Then gently fold in the fruit and nuts.
  • The batter will be fairly stiff. Spoon it evenly into the muffin cups.
  • Bake for 25 minutes or until the squares are lightly browned.
  • Before the squares are out of the oven make your icing.
  • Combine the powdered sugar, rum and orange extract until a stiff icing is achieved.
  • Put on the squares about 5 minutes, then ice them. You could even put a little fine orange peel on top for decoration.
  • Cool the squares on a wire rack.

This is probably the most healthy pizza I've ever eaten. I have been making it for several years. Instead of tomato sauce you use an avocado sauce. You don't cook the vegetables or the pizza, its mostly raw. Make sure you have a lot of napkins around, this pizza is messy to eat :)

6 sheets nori (square or round sheets)
3 avocados
2 tablespoons nutritional yeast
1 teaspoon garlic powder
12 fresh basil leaves (cut thin and divided)
12 cherry tomatoes (chopped in half)
1 sweet bell pepper (chopped fine)
1 shredded carrot (large)
1/2 cup kalamata olive (chopped small)
3/4 cup vegan cheese (shredded)

Steps:

  • Prepare the 6 nori sheets by brushing water on 3 of the sheets and then stick one sheet on top of each of the 3 sheets on 3 separate plates.
  • Set aside.
  • Shred the carrot. Shred the cheese. Set them aside.
  • Chop up the bell pepper, olives and tomatoes. Set aside.
  • In a food processor combine the avocados, yeast, garlic powder, and 6 basil leaves. Puree and then set aside.
  • TO ASSEMBLE THE PIZZAS:.
  • Divide the Avocado puree between the three Nori sheets.
  • Divide each of the vegetable between each of the 3 pizzas.
  • Top each pizza with the veggies and the shredded cheese.
  • Chop the 6 remaining basil leaves thin and top each pizza with 1/3 of the leaves.
