CHICKEN PARMESAN WITH ZUCCHINI PASTA

Using a spiralizer, zucchini is turned into a tasty stand-in for pasta in this non-breaded take on chicken Parmesan.

4 zucchini, cut into spirals using a spiral slicer
1 teaspoon salt
1 tablespoon Italian seasoning
4 skinless, boneless chicken breast halves
salt and ground black pepper to taste
1 cup marinara sauce
cooking spray
4 slices mozzarella cheese
¼ cup freshly grated Parmesan cheese, or to taste

Steps:

  • Line a baking sheet with parchment paper.
  • Place zucchini spirals in a colander and sprinkle 1 teaspoon salt and Italian seasoning over zucchini; toss to coat. Set colander over a bowl to allow water from zucchini to drain.
  • Wrap chicken in plastic wrap and place on a work surface; pound into 1/4- to 1/2-inch thickness. Remove plastic wrap and season chicken with salt and pepper.
  • Heat marinara sauce in a saucepan over low heat.
  • Coat a nonstick skillet with cooking spray and place over medium-high heat. Cook chicken in the hot skillet until browned and no longer pink in the center, 4 to 5 minutes per side. Transfer chicken to the prepared baking sheet.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Place zucchini in the same nonstick skillet over medium-high heat; cook and stir until tender yet firm to the bite, 3 to 4 minutes.
  • Spoon marinara sauce over each chicken breast and top with mozzarella cheese.
  • Broil chicken in the preheated oven until cheese is melted, 1 to 2 minutes.
  • Transfer zucchini to each serving plate and add chicken. Spoon warm marinara over each piece of chicken and top with Parmesan cheese.

This has been a family favorite for years. My sons loved it as they were growing up, asking for it often. Now, as adults, they are making it for their wives! It is not only easy, but lower fat than most versions! Many times I simply cook this in a skillet with a little Pam. The results are just as good!

4 boneless skinless chicken breasts
1 (26 ounce) jar spaghetti sauce
2 cups mozzarella cheese
1 lb cooked angel hair pasta or 1 lb other pastas, of your choice
1/4 cup parmesan cheese, plus some to serve with dinner

Steps:

  • Pour a small amount of spaghetti sauce on the bottom of a baking dish. You only need enough to cover the bottom of the dish.
  • Place the chicken breasts (flattened to ¼") on top of the sauce. Cover with the remaining sauce.
  • Bake chicken and sauce for 20 minutes.
  • Sprinkle the mozzarella cheese over chicken and return to over. Bake for 10 minutes.
  • Remove from oven and sprinkle with parmesan cheese.
  • Serve with cooked pasta.

1 jar (24 oz.) CLASSICO Tomato and Basil Pasta Sauce
6 Tbsp. KRAFT Grated Parmesan Cheese, divided
6 small boneless skinless chicken breasts (1-1/2 lb.)
3/4 lb. spaghetti, uncooked
1-1/2 cups KRAFT Shredded Mozzarella Cheese

Steps:

  • Heat oven to 375°F.
  • Pour sauce into 13x9-inch baking dish sprayed with cooking spray. Stir in 1/4 cup (4 Tbsp.) Parmesan. Add chicken; turn to evenly coat both sides of each breast with pasta sauce mixture. Cover.
  • Bake 30 min. or until chicken is done (165ºF). Meanwhile, cook spaghetti as directed on package, omitting salt.
  • Top chicken with remaining cheeses; bake, uncovered, 5 min. or until mozzarella is melted.

4 chicken breasts, pounded to 1/2-inch thickness
1 egg
1/4 cup milk
1/2 cup breadcrumbs, dried, seasoned
1 (24 ounce) jar spaghetti sauce
1 1/2 cups mozzarella cheese, grated
2/3 cup parmesan cheese, grated
1 lb spaghetti, cooked (per package instructions)

Steps:

  • Preheat oven to 350°F.
  • Place bread crumbs in a wide, shallow bowl. Whisk together egg and milk In another wide, shallow bowl. Dredge chicken breasts one at a time in the egg mixture first and then in the bread crumbs. Place coated breasts side-by-side in a baking dish.
  • Dividing evenly, top each breast with 3/4 cup mozzarella and then follow with 1/3 cup parmesan.
  • Divide spaghetti sauce evenly and spoon over each breast.
  • Top each breast with remaining mozzarella and parmesan in the same order as above.
  • Bake for 30 minutes or until juices from chicken breasts run clear and cheese topping is lightly browned.
  • During last 15 minutes of chicken's cooking time, prepare spaghetti per package instructions.
  • Serve over hot, cooked spaghetti.
