Got this from a friend when I was desperate to do something different with chicken.. Huge hit with everyone who tries it and it's sooo simple! The chicken is always so moist and juicy! Enjoy!!!

1 egg
milk (just enough to make an egg wash)
tony chachere's or slap yo mama cajun seasoning (to taste)
1 lg bag great value (or other store brand) cheeto puffs (crushed fine)
chicken breasts (skinless/boneless)

Steps:

  • 1. mix egg and small amount of milk for an egg wash for the chicken
  • 2. place cheetos in ziplock bag and crush, you'll use most of the large bag of cheetos if you do 4-6 breasts, place crushed cheetos in a bowl that your chicken will fit into for coating. Keep leftover crushed cheetos in covered bowl for next time. :)
  • 3. dip thawed/cleaned chicken breast into the egg wash, place in bowl of cheetos and coat both sides well (patting the cheetos onto the chicken to help it stick better). Place on roasting pan that has been sprayed with a nonstick cooking spray. Spoon extra cheetos on the chicken if you wish (we do). Sprinkle with Cajun Seasoning (to taste). Place in 350 degree oven for approximately 30 minutes. Time will depend on the thickness of your chicken breasts.

Cheeto-Crusted Chicken With Flaming Hot Spaetzle image

I was watching Chopped, and I saw the chefs breading pork chops with crushed cheese curls... and knew I had to try it myself. I do not eat pork though, so my version uses chicken breasts. I was also reminded of a favorite childhood snack of mine - flaming hot Cheetos topped with nacho cheese - so I serve the chicken alongside sriracha-flavored spaetzle. This is a fun dish to make, and I'm sure kids would enjoy helping as well. Be sure to use the crunch variety of cheese-flavored Cheetos- food.com won't let me be more specific in the ingredient list.

3 cups flour
3 eggs
1/2 cup milk
1/4 cup sriracha sauce
1/2 cup water
1 teaspoon salt
2 chicken breasts, halved
1/4 cup flour
2 eggs, beaten
1 cup cheese-flavored corn chips, crushed

Steps:

  • Bring a large pot of water to a boil.
  • Meanwhile mix flour, eggs, milk, sriracha sauce, water and salt together with a blender or food processor to create a firm dough. Set aside and let rest.
  • While the water is coming to a boil and the dough is resting, place the chicken between two sheets of wax paper and pound with a flat mallet until the meat is about 1/2-inch thick.
  • Prepare 3 bowls- one to hold the flour, one to hold the beaten eggs, and one to hold the crushed cheese curls. Coat each chicken filet with flour, then egg, then the cheese curls.
  • Spray a skillet with cooking spray and heat over medium-high heat. Saute the chicken until cooked through, about 5 minutes per side.
  • While the chicken is cooking, prepare the spaetzle. Add the dough directly into the boiling water quickly using a colander with medium-sized holes (Push the doughs through the holes with a wooden spoon). When the spaetzle float, they are ready (about 2-3 minutes). Fish them out with a slotted spoon.
  • Serve chicken over spaetzle, and top with more sriracha sauce or some shredded cheese, if desired.

Recipe from notorious Lower East Side chef Eddie Huang- Prescription required

Number Of Ingredients 9

5 pound(s) boneless, skinless chicken thighs or breasts
1 1/2 quart(s) 1 1/2 quarts buttermilk
6 tablespoon(s) kosher salt
1/4 cup(s) chili powder
3 1/2 tablespoon(s) garlic powder
1 - egg, lightly beaten
2 tablespoon(s) cornstarch
3-6 ounce(s) bags of cheeto cheese doodles
8 cup(s) oil

Steps:

  • 1. Cut chicken into 4-ounce pieces. 2. Using a mallet, flatten the pieces into cutlets without breaking the flesh. Set aside. 3. In a large bowl, mix the buttermilk, kosher salt, chili powder, and garlic powder. Add chicken and marinate in the refrigerator for at least 5 hours.
  • 4. Remove the chicken and transfer to another large bowl. To this bowl, add the beaten egg and cornstarch. Use your hands to coat the chicken well. Set aside. 5. Now, take the Cheetos and crush them until there are no lumps. Do this by opening the bag, letting out the air, and then pounding the Cheetos with a mallet until they are finely textured crumbs. 6. Transfer the Cheetos to a pan and roll the individual chicken cutlets in them until well coated.
  • 7. Fry the coated chicken in Oil at 335?F for 5 to 6 minutes until golden brown and cooked through. Drain the chicken on paper towels and serve warm.
