YUMMY CHEESE FRIES
Easy and fast, these Cheddar cheese fries are served with bacon and dipped in ranch dressing.

Steps:
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble.
- Preheat oven to 400 degrees F (205 degrees C). Place a piece of aluminum foil over a baking sheet; spread fries in a single layer on baking sheet.
- Bake in preheated oven until golden brown and crisp, 15 to 20 minutes.
- Preheat broiler.
- Sprinkle fries with cheese and crumbled bacon.
- Broil until cheese is melted, 1 to 2 minutes. Serve with Ranch dressing.

Steps:
- Cook the french fries in the oven on a sheet pan according to package directions.
- Remove the pan of fries from the oven. Turn the oven heat to 400 degrees F.
- You can finish the fries on a sheet pan, or transfer them to a skillet for a restaurant style presentation.
- Sprinkle the cheeses over the fries.
- Return the fries to the oven. Bake for 5 minutes or until cheese is melted.
- Sprinkle the bacon, green onions and parsley over the fries.
- Serve immediately with ranch dressing on the side, or alternatively you can drizzle the ranch over the fries.

- Bake the french fries according to package directions.
- Meanwhile, prepare the cheese sauce. In a small saucepan, melt the butter. Whisk in the flour. Cook and continue to whisk for a minute. Slowly add the milk. Continue to cook and stir until the mixture thickens slightly - about 5 minutes. Remove from the heat and stir in cheese until completely melted and thoroughly combined. Season with salt and pepper.
- After the fries come out of the oven, immediately drizzle with cheese sauce. Sprinkle with bacon. Drizzle with sour cream. Sprinkle with green onions.
- Serve immediately!

- 1. Cut potatoes lengthwise in 1/4-inch squares. Soak cut potatoes in water for 1 hour to remove starch. Heat oil to 325 degrees F and blanch potatoes for 5 minutes until very soft but not brown. Remove from oil. Drain on paper towels.
- 2. In a medium saute pan over medium heat, cook bacon until just crisp, taking care not to overcook. Drain on paper towels.
- 3. In a 2 quart saucepan, melt butter over medium heat. Add onion and cook about 2 minutes. Add garlic and flour, whisk until smooth. Cook 2 minutes more. Add chili sauce and mustard, and slowly whisk in heavy cream. When mixture begins to simmer, add cheeses and remove from heat. Taste sauce for seasoning. If sauce is too thick, thin with more cream. If too thin, thicken with a little more cheese.
- 4. Increase oil temperature to 375 degrees F. Fry potatoes a second time until crisp and golden brown. Remove from oil and drain again, season with salt immediately. On a large plate, arrange fries in the center, drizzle with sauce, top with crumbled bacon and chives. Serve immediately.

- 1. Heat oven to 450 degree F. Line 15x10x1-inch pan with foil. Bake cottage fries as directed on bag. About 20 minutes. Note: I made these without lining with foil..I just sprayed the pan with cooking spray..they turned out fine..
- 2. Meanwhile, in small bowl, mix chicken, mayonnaise, garlic powder and chili powder.
- 3. Sprinkle 1 cup of the cheese evenly over the hot fries.
- 4. Spoon chicken mixture evenly over cheese. Sprinkle with remaining cheese and the bacon.
- 5. Bake 3 to 5 minutes longer or until cheese is melted. Sprinkle on the scallions, serve with sour cream or your favorite dipping sauce.
